    I usually don't take pork butts out until they hit 202 internal if I'm making pulled pork sandwiches. That peach bbq sauce is amazing. GRILL ON!

    How do you like the taste of the BBQ off the IVS vs your offset? Is it enough to make a difference if you could only have 1 of the smokers? Thanks man, smoke on!

      The flavor of the offset is better due to using all wood. But I do like the ability to set it and forget it about the IVS. If I had to do with just one. It would be the offset. Thanks again for watching

    So why did you put your T-plates that way vrs the normal way JP?

      For short cooks i like starting from the middle. Longer cooks i would of started from the side. thanks again for watching and commenting.

    So you never close the top damper?

      I never do. The instruction manual says to close it 2/3, But i rather control the air flow from the bottom ball valve. Thanks for watching and appreciate your comment.

    I’ve haven’t used a picnic shoulder for pulled pork, that shoulder was so juicy. I’m gonna get one of those. Did you get the skin to crisp up? Thanks for sharing. Be well and stay safe.

    How is the smoke flavor on that unit considering doesn’t have much smoke ring

      Not as pronounce compared to the offset stick burner. there was a small smoke ring. I think if I use more wood mixed in the charcoal that is would show more. I may try that on my next brisket cook. thanks for watching and commenting.

      Smoke ring add nothing to meat if you judge bbq by the depth of the smoke ring, then you're judging it wrong. I won't. Go until the science of it, but you should educate yourself on why a smoke ring isn't as important as people think it is.

      Ya I know what a smoke ring is. But considering it didn’t have one I wonder of smoke actually penetrated meat

      @@smalltownbbq600 it's possible. I have a Pitmaker Safe, and after getting the coals nice and hot, I start using hickory or pecan wood logs to get my smoke flavor. I only use wood for about 4 hours, then I use charcoal to finish off the pork shoulder or brisket. I find that it doesn't overpower the meat with smoke, but gives it just enough to make it enjoyable. I've had brisket that's been smoked completely with wood, and I just don't like burping and tasting smoke flavor. Even Aaron Franklin says his bbq doesn't have a smoke ring, and people believe that he's the messiah to bbq.

      @@markcarr5142 I've seen aaron Franklin's bbq and it definitely has a smoke ring. You get that over powered smokey flavor be cause you're not burning a clean fire.

      Not exactly sure, but it did take a while. I remember getting the first email and was all exciting but it said due to the covid situation and having to shuffle employees around that it was gonna take a little while longer. After a while I just told myself to quit thinking about it cause the anticipation was killing me. I finally got a phone call telling me that it was getting close and it was being shipped soon. But the wait was worth it. thanks appreciate you watching and commenting.

      I order mine on June 28 and I'm still waiting (was suppose to be delivered yesterday). Not Lone Stars fault on that though. Been about 24 weeks now.
