Me and My wife come from Oklahoma, and your funeral potatoes are really close to a dish my wife makes called heart attack potatoes, she just uses more cheese and butter but everything else is the same. She said there called heart attack potatoes because of all the high fat cheese and butter. Maybe it is the same with the funeral potatoes. Throw some chopped up or shredded ham in with sweet corn and cornbread. Then you have a great meal. Use to do that way back with no money and used leftovers.
I am an American, and I'm not a big cheddar cheese fan either. Like a bit of mozzarella only. Looking forward to trying about 50-60% of these recipes. Just purchased a 4 qt crockpot and looking forward to some of those recipes that will work in my home.
