  • Traditional Pecan Pie
    1 pie crust
    2 1/2 cups pecans, quartered
    3 eggs, beaten
    4 Tablespoons melted butter
    3/4 cup light brown sugar
    1/4 cup white sugar
3/4 cup + 2 Tablespoons corn syrup (light or dark)
    1 teaspoon vanilla
    1/4 teaspoon salt
    1/4 teaspoon cinnamon
    Redi-Whip or vanilla ice cream
    Preheat oven to 350°.
    Fit crust into pie plate.
Place pecan pieces in bottom of crust. In a large bowl, whisk together the next eight ingredients. Pour over the pecans. Pecans will float to the top. Cover the edges of the crust.
Bake 50 minutes until firm around the edges and barely jiggly in the center.
Allow the pie to come to room temperature sitting on your counter, then refrigerate for two hours or more to allow the pie filling to firm up.

I'm 73yo in Murray, KY. I bake a lot. Going to my younger brother's in Glasgow for Thanksgiving. I asked what to bring and he requested pecan pie. I have pecan trees and it's been a bountiful mast year. So I will be taking "your" pecan pie using pecans I harvested from my trees. Thanks for sharing.

Thanks so much for letting us be a part of your holiday this year. We hope you enjoy the pie - you sure won't get pecans any fresher than ones you harvested from your own tree! That's wonderful! Happy Thanksgiving!

@JudithBrummett : Story about the trees. My maternal uncle was an agent for Life of Georgia Insurance. He went to Atlanta every year for the Corporate Meeting. He always brought a sack of pecans back. Daddy started seedlings. He had two huge trees. He started more seedlings from his trees. He gifted me 2 of the seedlings ~20yag. They are now producing and the nuts are awesome when the gray squirrels don't get them. Daddy has been gone since 2018 but he is still with us in the trees. Thanks for the comment.

@@gerardjohnson2106 What a lovely story! we stay in AZ every winter in our RV but on the way we stop at Junction TX and pick up pecans (free!) in the city park. It
is so fun gathering them! I know there are ppl who will shell them in machines for a small price or percentage of nuts but I enjoy using my nutcracker and shelling them by hand. I have planted a fig tree that should start producing in the next cpl years so I am looking forward to that too. Have a blessed thanks giving.

    What memories that pie brings.
At Christmas time all of us kids would go to my moms for what we called Christmas Eve. My mom would always make my twin sister (RIP Sis. I miss you) a blueberry cheesecake and she would make me a pecan pie to take home as part of our Christmas presents. She would use chopped pecans because she didn't want the pie messed up just like you said. One of my brothers would always try to steal our pies but my mom would catch him every time and smack his butt with her "Mama knows best" yardstick. To get the best goodies Mama made you had to get in the front of the line or you would miss out on the pigs in a blanket (those were the hot ticket item at Christmas). When my sister got cancer mama made a family decision that Donna got to be at the front of the line. The look on her face and that big smile she had was worth all the gold in the world. She slow walked by everyone going to the front and she would smile this Cheshire Cat smile and her over exaggerated sway. Those were the days. We would tell everyone on their first Christmas at moms that we get a little crazy at Christmas lol... Great memories. Thank you.
I don't know what you taught as a teacher but, it should have been home economics. At least thats what we called it in my day (I'm telling my age lol). My grandchildren call it culinary arts.

I’ve made pecan pie with the dark corn syrup before and it does taste quite a bit different from the white syrup but I find it very difficult to acquire dark corn syrup here in Texas. You just about have to go and buy your dark corn syrup during the summer months and stash it back in your cabinet until the holidays because by the time October rolls around they don’t have enough of it on the shelf for people to buy. The dark corn syrup does give it a much richer flavor and I like both, the pecan pies made from the white corn syrup and the dark corn syrup, and I have also eaten pecan pie made from just white sugar, no syrup. And that’s good too. But I will tell you if you’re ever stuck with having to use the white corn syrup or just plain sugar, if you will add a fourth of a cup or even a half of a cup of molasses to the pie you will get a very similar flavor that the dark corn syrup gives. It’s very good. And actually when people use the brown sugar rather than all white sugar they are also getting more molasses because that’s what brown sugar is made of and of course the dark brown sugar has more molasses than the light brown sugar. Since it is so extremely difficult to find dark corn syrup in some areas of the United States, I really believe it would be beneficial if you could pass this information on to your audience. Hopefully together we will be able to help people in a predicament. I’m sure many many people would love to make the pecan pie that you’re making because it is much richer and much more flavorful than what they could make or pick up already made at the grocery store. That’s for sure. Thank you for sharing your recipe 😋!

Looks delicious! Have you ever tried the pecan pie with cook & serve vanilla pudding in it? Not as sweet as the traditional. 1- 3.5 oz vanilla pudding, not instant! 1 cup light corn syrup, 1 egg, 3/4 cup evaporated milk, 1 cup broken pecans or more, mix all together pour into pie crust deep dish 9 inch. Bake 375 - 35 to 40 min.

You two are so cute! This is the first of your videos I’ve seen - you had me at “pecan pie”! I’m a native Californian but my husband is originally from Mississippi - one of 5 boys. They all have such wonderful memories of the big pecan tree in their yard back home, and Daddy shelling the nuts for hours so Mama would bake some pies. Pecan pie is still his absolute favorite, even at 70 years old. I made one for him many years ago, using his mom’s handwritten recipe, but something was “off”. I can’t wait to try your recipe and loved the step by step demonstration. I’ll make a couple of these for our family Christmas gathering here at our home…one for him and one for the four brothers! 😆. Thank you!

I have never used the box pie shell, however, I do use the frozen that is already in a pie tin. This Thanksgiving I'm going to try the box pie shell. I'll give it a try. Mr. Tom, I also purchased the pie crust cover I think they will work better instead of aluminum foil that I've been using for years. Melissa, you do a great job with the camera. 😊

I remember my first attempt at a pecan pie and this was before the internet. It didn't set very well, still good Like you said very little or no jiggle. As my taste refined, I use light syrup and add molasses for a medium dark color. Most store bought ones use light syrup and IMHO they are lacking but the dark syrup is a little much, I've found a middle ground. Great video will help many young cooks this Thanksgiving.

Thank you for the great tip on the pie crust! I will add it to my recipe so l don’t forget it. I am creating a favorite recipes cookbook so l have them all in one place and l will donate my cookbooks. It’s part of my downsizing since l am 75 and don’t want to leave a lot of unnecessary things for family to go through and decide what to keep, donate, or toss.
One thing l always do when using pecans in a recipe is to toast them.
I spread them evenly on a rimmed baking sheet and bake at 350 until they begin to turn darker and become aromatic, making sure to toss halfway through, 7 to 10 minutes, remove from the oven and let cool. You just have to keep an eye on them because you can overcook them!

I love a good pecan pie. I first had it back in the 80’s when the Fuddruckers we had here had an in store bakery. It was my favourite there. The ones that come from the grocery stores are just OK. I think you’ve made me think I can do my own!

I always make my own dough. I have taught several people. I have never put flour on both sides before rolling it out. Maybe a sprinkle on the rolling pin. Too much flour makes it tough, I would imagine. I have never had that problem. I put ice in my water when bringing the ingredients to a ball. I believe it helps make the finished product flaky and light. I have never used bought pie crusts. I am glad to know they are good though.

I just wanted to thank you for sharing your delicious recipes. I made the one with the cream cheese and pastry roll however I tweeted it just a bit. I added a can of apple pie mix , spreading the apples evenly over the cream cheese then the rest of the mix . It was simply DELICIOUS !!!

Can't help but wonder what genius came up with pecan pie 🥧 I can imagine them in the kitchen at winter ❄️ cold outside and a fire roaring and came up with it.

Pecan pie. Mmmmm. It’s sort of like a Canadian butter tart with pecans instead of raisins or walnuts. 🇨🇦🇨🇦🇨🇦🇨🇦. You still sound stuffed up. Hopefully you are well. 🤧😵‍💫🤧. Best way to keep the pie shell from shrinking is put it in the freezer before baking. It stays in shape. You also need to,Fock it to keep it from bubbling up. I also spray my measuring cups with cooking spray if I’m baking with corn syrup or molasses so it comes out without a lot of scraping.
