  • It's time to make an Islay Scotch with a SAFETY NET!
    This is the third recipe in the Safety Net series. This time il be showing you how to make an Islay style scotch with 1 part all-grain mash and 2 parts sugar. The grain brings the flavour and the sugar gives you a safety net.
    If you are new to all-grain brewing for distilled spirits this recipe is the perfect way to jump in. Even if you COMPLETELY screw up the mash you will still get a solid result . . . . and honestly you won't. It's pretty easy so get stuck in.
    If you are comfortable with the brewing side of things feel free to triple the mash and ditch the sugar altogether.

    Mash Recipe:
    Total Grain Weight - 8.5 kg / 18.7 lb
    4kg / 8.8 lb BairdsHeavily Peated
    3kg / 6.6 lb Golden Promise
    1kg / 2.2 lb Golden Naked Oats
    400g / 0.88 lb Medium Crystal malt
    100g / 0.22 lb Light Chocolate malt
    Mash at 64c for one hour
    Drain mash and add to the fermenter
    Fill mash ton again stir and drain into fermenter (this is a batch sparge)
    Invert Sugar:
    Add 6kg (13.2 lb) of sugar to 8 l (2.1 gal) of hot water stir untill disolved.
    Add acid (5 tbl spoons of lemon juice or 1 teaspoons of citric acid)
    Simmer for 20-30 min
    Tip into fermenter
    Top up fermenter with hot or cold water to reach:
    50 - 65L / 13.2 - 17.1 gal
    25 c / 77 f
    1.060 - 1.065
    Ensure temp is under 28 c (82.5) and ideally at 25c (77f)
    Pitch 70g (2.5 oz) of yeast ( I used 50/50 English ale and whiskey)
    Ideally temp control to 25c
    Ferment until a hydrometer reading is stable for a few days
    Strip most of the wash (3 strip runs if using the t500 or similar)
    Add low wines and any remaining wash into the still and perform a spirit run
    Proof to 55-63% and age on second use American white oak.
