That looks delicious. I've found that pounding out a flank steak is easier than fileting it open.

@@SmokestackJoes Why not both? It'll give you more meat to work with so everything gets wrapped a little more.
Book cutting a flank steak is definitely the hardest thing to do.
Yes this was probably the hardest thing I have had to cut. I was 95% sure I was going to screw it up.
Ha ha. I also have the pit barrel Jr. And I also have made some horrible BBQ on it. 😂
