Learning to cook dried legumes and rice is one of the most useful skills any human can learn. It's very affordable, quick, versatile, and healthy. It saddens me how many people these days cannot cook basic meals for themselves because they associate cooking with a complicated recipe. I think this keeps people from cooking at all. We need more content like this out there! Thanks again for another great video.

Awesome cooking video, Lama Choga!! I love curries & also love red lentils. I have about 1.5 cups of organic red lentils in the cupboard & almost all of the other ingredients on hand (out of garam masala at the moment, will substitute canned tomatoes for fresh).
I can't do brown rice (too much fiber/g.i. issues); white rice for me. Some avocado on top would be nice, too!
I love kombucha. If you feel so inclined, it would be nice if sometime in future, you would like to share your process & recipe.
(I had some original starter given to me by my son, but a then-housemate accidentally dropped the glass jar before I had a chance to try it).

looks delicious. Yet using actual ingredients; that's cheating
As a self-taught cook, I would fry the garlic with the unions and the mushrooms (not sure why; I think cooking garlic, removes its bitterness/impurities but also, looses its power).
There is this Japanese dish that is called Mononabe (Mono = things, Nabe = clay pot) you get the gist. Its a broth of any leftovers in whatever bouillon you can concoct(for a vegan I would suggest Shitake mushrooms).
By "simple" I think I understand you are referring to: without killing-and-death of animal life.
I tried cooking a fish dish once according to Escoffier (a French cooking zealot =). It took a lot of time and effort, also it is nearly impossible to do and get it to the table not luke-warm. But it was really splendid and worthwhile. I guess If you want to kill a fish for your nourishment, you should give it your all.
That got me thinking: perhaps it is all about optimal effectiveness + efficiency. A.k.a perfection.
This should/would encompass the not killing part perhaps.
I heard this Indian woman saying: "If you are not prepared to take your time making his curry, please do not do it"; then again, she was using chicken.
Dunno. But I like me a good curry any day.
Trying to mix cooking/eating with existence/fairness/sustainability is a bit of a downer at first glance; but when you eat and taste it is really isn't, isn't it.

A point of clarification on a comment I made on your previous cooking video:
I said that cooking is very time-consuming. It may or may not be, depending upon one's circumstances.
Because I do not have working plumbing (no running water & no working kitchen drain), I have to haul hot water & cold water in 1-gallon jugs from the other end of the house.
Doing this dozens of times per day for all cooking needs, plus, for drinking, pets' needs, fruit & veggie washing, *and* for dishwashing & housecleaning needs is very labor-intensive & time-consuming.
The necessity of hauling water makes ordinary meal preparation a lot of work for me. Because of this, I try to limit cooking to one meal a day. Like you, I also try to make one dish that can last for at least 3 days.
