In this video tutorial Chef Davy Devaux shows how to carve beautiful butterflies out of a large piece of carrot, It is a very easy and fast way to make your food stand out from the rest, although these carrot butterflies are usually used to decorate sushi plates or individual sushi pieces you can place a carrot butterfly on other food dishes like in the middle out a pea soup for colour contrast.
Chef Devaux also shows how to make cucumber fans, which can also be used as a decorative garnish for sushi and sashimi platters.

Though my sister is in abroad she requested me to prepare sushi rolls for her coming birthday. I seriously have no idea how to make those but after looking through your videos it made me delighted as it was explained so wonderfully. this carrot butterfly was amazing although I will never master it :) your vegetables are so big and large. The carrots and cucumbers in my home are the quarter size of yours and they have got more color .

Where do you live? and why are your vegetables so small?
***** I grow my own vegetables in my garden :) Not so much tomatoes, cucumbers, lettuce and vice versa but I do not know why they are small. I live in eastern anatolia . you have a follower from here.
Of course organic vegetables are always smaller the GM vegetables, I used to grow my own stuff long ago and it was always very small too but packed with flavour! I remember the strawberries best because they were delicious even when not fully ripe :)
Never been to Anatolia, had to look it up on google to be honest, geographically should have a similar climate to where I am, Spain...

Dear Chef Davy. I am a chef myself and I really like your channel. I have a question about the carrot butterfly, Does it matter if the carrot is cold or warm temperature? I have tried butterfly countless time and fail because they always breaks when i try to put the head down flat.
from my knowledge,you have get tender carrot.if you tried the hard one that will broke

I have a question: do you think I can cut and prepare it long before serving sushi (for example in the morning if I have to serve sushi in the evening) or there is a risk that the vegetables will oxidize?

I've been following your videos for a while, and I love how carefull you are with everything!
When I got into sushi i found it very weird that you would cut pieces to use and the rest would be just thrown away. One day i saw a young guy making this same butterfly in like 10 seconds in a japanese restaurant, and it amazed me greatly, not just because it was very beautifull (not as much as yours, but ok) but also because i thought on doing it to everything i wouldn't use on the sushi.
Could you please make a video cuting, let's say, pieces of cucumber to use on a sushi and then make lots of garnishes from all the remaining cucumber, or maybe other ingredients?

That is a good idea, I have added it to the list of suggestions, one day I'll probably make that video. Can't promise when.
