He stopped hiding that in the movie ST5. So, nice fan theory, but it doesn't hold up, visually. And what's wrong with Scotty missing a finger? There's lots of ways an engineer could suffer such a loss.

TAS is a classic, despite the animation limit at the time it told great stories.
You can also just leave it on in the background and use your imagination like it's an audio play lol

Cartoon Scotty suddenly has all of his fingers!
The character 'Scotty' does have all of his fingers. James Doohan doesn't.
Just like the character 'Spock' has pointed ears. Leonard Nimoy doesn't.

Or as an engineer who'd been in plenty of battles he could have lost that finger as a war injury just as JD did in real life.

i remember when Nickelodeon aired this show back when You can't do that on Television was on. Damn I feel old.
I was 12 years old when the series debuted in 1973 on NBC Saturday mornings. It's still better than TGN or any of those ersatz Trek series.
