  • Hey guys and welcome to my new video, today we are making Dampfnudeln, its like a steamed yeast bun! Of course we are making a homemade vanilla sauce to our Dampfnudeln! But don't forget to prepare enough vanilla sauce!

    [ For 4 Servings]
    250g Flour
    125ml Milk
    25g Sugar
    20g Yeast
    30g Butter
    1 Egg
    Salt and Butter to bake
    ► Vanilla Sauce Recipe:
    150ml Milk
    150ml Heavy Cream
    80g Sugar
    5 Egg Yolk
    Vanilla Pod

    Great video... my grandma of Czech descent grew up in Germany. She made the same type of individual "yeast buns or as she made them - Bohemian yeast dumplings." She boiled them, when they were done she removed from the water and immediately cut them in half with a thread.... they're soooo good with gravy over them. I don't have her recipe but I remember making them very similar to how you make them..... although she would boil them in a pot, covered and them after 10 min. would turn them, cover and boil 10 min. longer. When I tried it (from memory) they kind of fell apart in all that water (no matter or hot/warm the water was). Your version seems more doable. Have you ever tried "steaming" them..... heard of this?

      First of all, sorry for replying so late! I wasn't really on YT all this time.. I'm not so sure about the boiling part but I would try to give some butter on a aluminium foil and then roll your dough into it, you do this process with german "Serviettenknödel" aswell. Also you could add one more egg to your dough mixture, when it's falling apart. My version is steamed but with a "classic" crust, when you don't want a crust, you can get a pot insert, give some baking paper on the pot insert, and then you should be able to steam it

      niche alle machen füllung rein. Meine mutter macht die genauso ungefüllt. Die beste füllung is aber, und wird auc h imemr so bleiben, Latwerg, oder gewürzter pflaumenmuß.
