    Pro tips here:
I drive seasonally in agriculture. Working in agriculture we don't really get any breaks for lunch or anything. There is an agricultural exemption to the sleeping/working hour requirements and so we work until we're done. We work 16+ hour days 6 days a week and so there really is no equipment that will be useful as any time not driving must be spent sleeping and not preparing food. We also rarely get a chance to stop anywhere except when we need to fuel up (often times fuel stations with no option for food or drinks). And so I tend to lean heavily into single use containers for things like beef sticks and cheese sticks, etc... because they don't dry out before I finish a bag.
However I have picked up a few things to be extremely useful.
1: air tight containers to prevent non-single use foods from drying out (like large packets of beef jerky, or sliced fruits, etc...) I found them at Home Goods and they are modular so you can mix and match with what will fit into your travel bag.
2: instant coffee. You can pour this into an empty water bottle, or gatorade bottle etc... and shake the crap out of it until it's dissolved and frothy. Also syrup containers (such as french vanilla) travel extremely well in your bag and just a little bit will add significant sweetness to the coffee. The end result is half decent, it's much better than kirkland canned coffee drinks from Costco and it's MUCH cheaper!
3: Don't rely on your cup holder for non-sealable containers. Use the side compartment in a backpack or "gym bag" intended for water bottles instead. Even when going off-road, it will not fall over and spill all over the floor. Might still splash out a bit.
If I had time in the day to prepare food when trucking I would consider some of the options listed in this video, but since I don't... these are the tips I've found to be most helpful.

Try looking at the camera instead of reading with your eyes looking up. Try talking with some refection in your voice, so mono-tone.
