I had a bet with my wife that the last one will be Enishi! I work at Tanjong Pagar until December and my go-to was Brothers and Enishi.
They're both so good, how to pick between the 2?

The dan dan mian definitely saved the scoring of this restaurant. What I find that is so incredible is that what really brings ramen flavor forward is usually its broth, but noodles like these can still make a massive bang in your palate. Really neat!
Could the spice for the cube meat be cumin?

Interestingly, although they have the signature on their menu, when I was there I saw many people (Japanese) ordering the Dan Dan mian. Which is a like the best kept secret of this shop. So it seems people who go there know the Dan Dan is better than the signature.

The familiar taste on the meat that you couldn't identify... Could be 5spice? Or maggi seasoning liquid

I agree its weird to call ramen dashi ramen simply because my impression of ramen is that it is composed of noodles, toppings, dashi and tare.
But what do I know, I am no chef so. *shrug*

May be I don't know ramen. I would have thought that Ramen Keisuke Tonkotsu King would get a review in a ramen series. I enjoy it anyway, for years.
a lot of people have suggested as well, I just didn't manage to fit it within the 13 eps. maybe next time!
