Great to see you again. This is the standard recipe for buttercream in the UK. It's a really good, reliable recipe. The milk and vanilla can be replaced by a similar volume of espresso. 10g of cocoa can be dissolved in hot water, allowed to cool, and then used in place of the milk.

As a beginner my first cupcake was amazing but the frosting was a mess. No matter how much efforts i added it never came thick and when trying to apply it was dribbling down 😢😢😢😢

Hi Olivia! This buttercream only crusts a little as it has a high butter content. If you want a well crusting buttercream then I would recommend using a traditional American buttercream that has more icing sugar in it :). If you're looking for something that's stable and sets firmly in the fridge without crusting, then this buttercream will be fine :)
I'm going to make this to top your vanilla cupcakes for my grandchildren. Since this takes milk, can it set out at room temperature or does it have to be refrigerated?

Be warned. This recipe makes VERY soft frosting. It's not at all like what you see on the thumbnail. You'd need either more powdered sugar or less butter.
Hi Soha! you can simply add cocoa powder directly to it, maybe around 1/4 cup, and then if you want it to be sweeter add a bit more icing sugar :) sorry I don't have the exact quantities atm as I haven't tried it using measurements, but don't be afraid to eye ball it and taste along the way and adjust :)

Whisk because it incorporates air into the butter to make it fluffy. When you're done if you find that your buttercream has a lot of air pockets you can then change to the paddle and mix on low speed. This will get rid of the big air bubbles.
I’ve always been taught to only use the paddle with frosting/icing, the whisk will add too much air into and cause it to break or crack then you’re just wasting time and ingredients trying to fix it to make it smooth… no need to do something twice when you do it correctly the first time!
I'd love to add a little cooled melted choc to make a scrummy choc buttercream. How much choc should I use please, and will it mix in well without seizing? Thanks xx
Hi Sue! That sounds like a delicious idea! Yes you should be able to fold some melted choc in without any problems, you'll just need to refrigerate the buttercream for about 15-30mins after you add in the chocolate to allow it to firm up slightly so it isn't too soft. With this recipe I'd say start with 100g melted chocolate and then if you want it more chocolatey you can add a bit more or even add some cocoa powder. Hope that helps! :)
Hi there! Hmmm it really depends on what you like - the 1 minute frosting I used on this cupcake is really fast and tastes great, and the SMBC is a little harder to make but is a lot smoother and less sweet :)

Hi there! Yes it can be used to cover a cake but I wouldn't leave it out in hot weather for too long especially for a large layer cake :). This frosting isn't too sweet, but if you would like it less sweeter simply add a little less icing sugar. Hope that helps! :)

Stick your frosting in the freezer for 20 minutes. Helps set the butter, but not freeze it. Giving perfect peaks and decorations ❤

i used caster sugar it works but is crunchy
