I'm a huge fan of trying different, interesting and strange foods in each country. My show is from a Western point of view, but more importantly MY point of view, but is not meant to offend any person or culture.
The girl from Onetrip in this video doesn't fully translate what the owner has to say to Sonny. She seems like a sweet lady and was excited to share her story to the camera. But Trang ignored what she said and told her to say "I Love Coffee" to the camera instead.
The coffee shop was started by her dad 67 years ago. He would always freshly roast his coffee like this. She (his daughter) now takes over the shop and continues the tradition of roasting the coffee beans in front of their home. It's just a small coffee shop that serves the residents in and around the neighborhood. They weren't making a lot of money or anything, for years. Until a couple weeks ago, a Viet journalist wrote an article about this shop being the only one in Saigon that still roasts fresh coffee beans like this. Since then her shop started to get all the attention that she would have never expected. The business is getting busier since many new customers are curious from the article & video that went viral on the internet. I guess Sonny is the first Westerner who visits and films her shop. She looks very happy, and excited and about it.

Deep roast, robusta, fine grind, boiling water, I can figure out how bitter the cup is just by watching! In the world of specialty coffee, which put so much emphasis into acidity and flavors, this is without a doubt so exotic. Fun to watch really, and it's always good to know that people from the big wide world drink coffee in tens of hundreds of ways.

That little red cherry they picked out of the raw beans is actually what coffee beans look like when on the tree, they look like cherries. For most coffee aficionados that coffee would be over roasted with an uneven roast and you usually wait at least 24 hours before grinding to let the beans degas but I'm sure it's great for his purposes. I've seen Puerto Ricans use that same cloth strainer to make coffee in New York City. This coffee looked a lot stronger than what I've had in Vietnamese restaurants here in the states. If you haven't tried it please do, it's delicious and taste more like a dessert.

For everyone saying the beans are burned, see this info below on Vietnamese coffee roaster. Lower temp long roast produces dark, but not burned, caramelized beans. If you've ever had true Vietnamese or Malaysian white coffee, you'll know how amazing it can taste.
Roasting preferences establish decades ago favored a lower-temperature, longer roasting process. The dark "French" roast that we refer to today probably originated not as a high-temperature roast, but a slow and long roast that results in beans that have consistent color through the whole bean, and a dark color but no bubbling or burning. This distinction is VERY important, since many Americans today associate French roast with the all-too-common burning of coffee that takes place at certain coffee house chains. Burning coffee results in the breakdown of sugars and oils and fast oxidation and fermenting of coffee once exposed to the air. These drawbacks do not occur in the Southeast Asian dark roast, which is more stable.
Thirdly, beans are generally roasted in what is referred to as "butter oil", which may or may not be actual clarified butter oil. Occasionally vegetable oils are used, and historically, traditional "home-grown" coffee roasting style involves creating almost a caramel-like coating effect with the use of a small amount of sugar, oil, and generally a touch of vanilla or cocoa. This coating blackens in the roast and the beans wind up with almost a thin, hard shell.
I'm from South East Asia, not from Vietnam but the country with many islands. I never heard of coffee roasting techniques like you said with the use of sugar, oil, etc. The coffee culture here is not that strong and most people in mid to low end economic class prefer instant coffee in sachets. Better coffee beverages using real grounded roasted coffee beans like in this video tend to be quite expensive, around 4 USD. And with that money, you can have 3 big meals!

Very happy to see this episode. I love fresh coffee. I always thought that meant a freshly brewed pot of coffee. You found the real deal! I would love to have a cup of that fresh coffee with the condensed milk. I used to teach with a man from Vietnam and he would tell me about using condensed milk in his coffee. I'm going to give it a try now. Thanks for the video!

Started roasting my own coffee beans cuz of this episode. No joke. It’s the best choice I could have ever made!! I absolutely love doing it and the smell is close to burnt popcorn I love it!!!!
I'm not an expert, but since my father runs a coffee farm, I know a bit about coffee process. He roasted the beans to dark level but it was not spreaded enough because there are still some brown beans. And he grinded the beans at the same day its roasted, it is not good. roasted beans need to be rested atleast 3 days before grinded to keep the flavor from over evaporation.
But overall I'm amazed by their dedication on running coffee shop for 60 years and the experience they offer
He roasts the beans with lot of defects. He needs to roast it really dark to burn all the defects out, otherwise it will taste terrible.
There is not enough air moving in the 10 kgs drum too. I guess the coffee will have charcoal and smoky flavor.

This is super dark roasted coffee and a certain style but does not show the true potential of a bean.

@@ffhfful IMO, one day rest is fine. After one week, the taste will go down. Light Roasted Coffee still good after a month. People add time to 1 week because of the shipping time I think.
@Thunglunghoa Dalat yeah you're right.. I've seen many coffee shop sold cheap coffee by using dark roasted beans. for latte and other mixing stuff coffee are alright I think. but for clear brewed coffee.. I guess it is not a good idea

Another great eye-opening culinary/refreshment vlog from Vietnam Sonny. The VN Cultural Ministry and Tourism Ministry need to thank you for your work. I giggle everytime I see Vietnamese uses European products and foods (the French Bretel butter), what great innate sense of taste. The decades-old roaster remind me of seeing all those old Honda Cub scooter, the old Singer sewing machines, old TV sets when I was there. Another BEST vlog.

I love this coffee store so much , this shop name Ba Lù & Bà Huề coffee start open at 1:30 am, and only 1 day off in a year, so traditional, original taste, flavor so good , this store is a family business, her father sold coffee when he was 17yrs old they are Chinese family, they moved from China to Vietnam about 80 yrs ago,he passed away and her daughter she continue running her father business, if you guy come to Vietnam, you have to try this coffee, this is the oldest coffee shop ,an history coffee.when i was living in Saigon 6yrs i often drink coffee at this shop, my favorite. Some people 70-80yrs old still drink coffee at this shop
Robusta beans are considered lower quality everywhere else in the world and it is the Arabica coffee bean that is cultivated for sale. I suppose that is why they are using the extra ingredients - to make it palatable. That sock the proprietor uses as a drip filter is also used throughout the Caribbean and South America. Used it myself for awhile when I was brewing strong drip espresso. More than half those beans are finished way, way, way too dark, becoming essentially charcoal and losing all the innate character of the bean itself.
Robusta beans can be purchased from some coffee bean suppliers to add to your custom Arabica blend, but little is sold and it is considered primarily a money saving technique.
The darker you roast coffee beans the LESS caffeine they contain, so if I were running this coffee shop, I'd roast them to a very dark brown and stop there. Then add the sugar and milk to counteract the Robusta bitterness.

Its their way of doing it. Their culture of drinking coffee. If youre used to drink extremely strong roasted Robusta Coffee for 60 years, then this is going to be the way you like it. I also thought their way of roasting cant be right but then I realized Im only trying to force my personal ideals onto them.

I didn't know that Vietnam still roasts the coffee beans on this way bc the smoke pollutes into the streets but it smelled good. When I was kid, on the way walking home from school, I love to watch the guy roasting the coffee, it smelled good. He patiently rotated the drum, sometimes he stopped to add the pork fat or butter into the drum window or check the beans. Then the store ground to make fresh coffees to customers.

I love how you can have experiences like this or the complete opposite in Saigon. On the flip side you have places like Shin Cafe where they also roast beans fresh but it's a 5 star experience.

Crazy. They roast, no real cooling time or degassing, grind then brew. No wonder it’s very bitter!
I think best time to drink coffee after roasting is about 10-14 days. Yeah that is based on taste requirments of our regular customers 🤣
@@anthonycarrino7169 Yes... and roasted way dark and a number of other things that we've been refining in the past 10 - 20 years. The quality of the green beans didn't seem too high, either. But still... who's to say? It's like Cuban coffee... you don't make the coffee less bitter... you add tons of sugar. (Starbucks has, in fact, co-opted that tradition). Also, it's worth mentioning that "bold," or "bitter," is not the same as strong. But again... if that's the way they do it... that's the way the do it. I'm sure the end result, with the condensed milk, tastes delicious. I just do it differently. :-)
Hi Sonny! I love your videos. This was really interesting when they added salt, roasting fat, and then vinegar. Its my understanding that most fresh roasted coffee beans need to off-gas for a week or two or they will be bitter. Do the three additives change this at all? Was the coffee you drank from the hat batch or an older batch that had already off-gassed. Anyone else know? Really love all your videos, definitely a subscriber, and have liked and rewatched a lot of your videos because they are that entertaining. I really appreciate the humor while remaining respectful to the culture. Its because of your videos that i have ordered some durian and am going to try to make a western style cheesecake with it. Thanks for all the entertainment!

@@johannestornquist i am not a coffee roaster nor a specialist, but just smelling a ground coffee i can tell witch is too roasted (burned) on what is perfect. i like my coffee at the extreme dark roast, but without any burnt aroma. this look burned to hell and back.

Of course its bitter - its burnt. Also it would taste better if they waited at least 24 hours before brewing it. You’re not supposed to brew coffee right after roasting. Interesting to watch though.

VN coffee is unique but it's pretty far off best practices for producing quality
I believe resting the coffee is done since it's releasing co2 gas. Commercial manufacturer and roasters who ship in large quantities rest so the packages don't burst, unless they use the ones with vents. For small batches resting it afterwards won't make a difference.
