INGREDIENTS - GREEK CHICKEN PIE
12 sheets fillo pastry
525g roasted chicken
65g butter & 1 tbsp olive oil, for frying
4 bacon rashers, chopped
1 onion, chopped
4 cloves of garlic, grated
1 red bell pepper, chopped
1 leek, chopped
2 celery sticks with leaves, chopped
1 carrot or 2 small ones, chopped
200g baby button mushrooms, chopped
1 tsp dried oregano
3 tbsp plain flour
2 cups of milk
1 cup parsley, chopped
2 eggs, lightly beaten
125g (1 cup) Halloumi cheese, coarsely grated
Salt and pepper for seasoning
Butter for brushing

Well! I had to do something after a long time! Most of my fans were wondering what became of me.... It was a request, and I had to make it really special and delicious. All my guests enjoyed themselves tasting all the different dishes and congratulating me! Also Carl, the pleasure and satisfaction that I get from viewers with great comments is immeasurable! On the day my back was killing me, but the show must go on! hahahaaaa! Well I only do the cooking. As soon as I finish all the women including the guests, do all the hard work. I've had a very bad "FLU" the worse going around. Just getting over it and hope to catch up with comments and watching videos! At the moment I feel very drained, but I will survive! Thank you dear friend Eddy. I need plenty of sunshine right now. I haven't been feeling very well since September. I was suffering with infections and very bad flu.
