I live in Holland. We've got fritessaus, which is the best according to many people. It's a thinner sweet mayonnaise. The Belgium mayonaise has too much mustard in it.

Actually, bintje potatoes are Dutch. First produced by a teacher in Fryslân (a province in the north of the Netherlands). It is named after one of his students.
OMG when I lived in Belgium, I was an au pair in Leuven and my favorite street food was FRITES!!! It was amazing to me that they didn’t just use ketchup, mustards, even tartar sauce!
Great video, enjoyed watching it. I agree with the sauce, they put so much it just becomes soggy potato which is gross. The tartare had the closest ratio to what I find reasonable.
If there isn't a line you should get suspicious. You can't peel and cut the potatoes too long before frying, and there has to be a certain time between the first and the second fry, so basically it's just too good to be fast food. I don't think the double frying makes them crispier, it's more to get the potato inside fluffy and allow for the thicker fries. The animal fat (ossenwit) brings out the taste of the bintje better. But potatoes are a seasonal product, they change in taste and sugars (crispyness) in the months after the harvest. So they get darker and crispier towards august. Bintje is a Dutch potatoe, but a bit wasted on the Dutch. Dutch fries are usually ok but they're just not that ambitious with their fries (or food in general). There it's mostly prepeeled and frozen and fried once in vegetable oil and they mostly switched to the easier agria potato. It's not they don't taste well, I just refuse to get fat on a compromise.

Thank you for this video! Going to Brussels soon and it helped me a lot! You could do more like these fries ones and waffle ones, perhaps best "mussels in brussels"? And if you run out of things to try in brussels, you can take train to paris for "best croissant, best crepe" etc, and same for other neighboring countries. I don't think there are too many content creators doing that so you might be able to really carve our a niche for yourself.

hello, love your videos. You should try Brobbeleir on Rue Edith Cavell 199 in Uccle. Thibeau is the owner. When he is there the fries are the best. Truly I tried a lot of places before I found him. He is a young guy passionate about it. He even make burger with fresh meat from a local butchershop close by. I also love the one on Place St Job too.

For the sake of your test it would probably be best to go for the plain fries with mayo at Frites Atelier, but my personal favorite at the moment is called Old Mimolette & Truffle. Mimolette is a PHENOMENAL aged hard cheese we grate over the fries. And then there’s also truffle mayo, hazelnuts and some shredded cabbage on the fries. May sound questionable, but trust me. SO. GOOD. And normally I hate truffle mayo. So me liking this topping really says something haha.

You should try Maison Antoine. They cook them in duck fat as I remember. They are very famous. You can also eat the fries with a cold bear at one of the nearby cafés as most allow you to bring the fries with you.
As someone who frequently has to over order and taste lots of dishes (husband is a local food reviewer), I must advise you to eat less of each dish. It's tempting in the beginning, especially when something is good, to keep eating. You must resist and pace yourself.

As someone who loves potatoes, I am envious of this journey. Only exception is, well, I hate mayo. I'd have to ask them to hold it, which could be a cultural faux pas! Sadly, I only go to the US or Japan and the latter has no exotic, delicious fries. I love my potatoes left on their own potato-ey goodness, no toppings needed.
The average Belgian frietkot offers about a dozen different sauces, though most are mayo based. Ketchup isn't mayo based but asking for it could be a faux pas as usually it is only served with certain dishes and/or in combination with other sauces.

I’m Living next to Fretland. Not fond of the smell of burned oil and rancid mayo around there and the stench of frittes around Brussels it’s pretty gross. In general I don’t understand all the fuss around trash food I can eat frites once per year, waffle are even less appealing for me.
I can understand how nasty that must smell over time. Definitely understand that. I’m originally from Canada so the novelty of fry and waffle stands has not worn off just yet.

Janno_O fries are notoriously considered junk food (I.e. unhealthful food that is high in calories, with little dietary properties), I’ve never heard of them being considered a delicacy. The ventilation system of Frietland blows the fumes from the kitchen directly on the pedestrian area in rue du midi, where I live, that’s why I am annoyed by the smell. I think that there are better reasons than friets and gaufres to live in Brussels.
Chips!!! They're called chips dammit. Because they're chipped off a potato. Unlike 'fries' which are scraps of potatoes formed industrially into stick-like shapes. It's nothing else than the equivalent of MDF (Medium Density Fibre - interestingly banned in the US, unlike sadly their substandard 'fries').
Why should we? Just because the Americans did? People in the UK, France, Belgium, Netherlands, Germany and probably a lot more don't use the term French frie in their native language.

It isn't just any animal fat, it is beef tallow. France uses it for their fries, also, btw. Try them with mustard powder for a healthier condiment.

I’m Living next to Fretland. Not fond of the smell of burned oil and rancid mayo around there and the stench of frittes around Brussels it’s pretty gross. In general I don’t understand all the fuss around trash food I can eat frites once per year, waffle are even less appealing for me.
I can understand how nasty that must smell over time. Definitely understand that. I’m originally from Canada so the novelty of fry and waffle stands has not worn off just yet.

Then what is the reason to even be in Belgium? Everyone has his own taste, but calling it rancid or trash makes you sound to egocentric, don't you think?
Janno_O fries are notoriously considered junk food (I.e. unhealthful food that is high in calories, with little dietary properties), I’ve never heard of them being considered a delicacy. The ventilation system of Frietland blows the fumes from the kitchen directly on the pedestrian area in rue du midi, where I live, that’s why I am annoyed by the smell. I think that there are better reasons than friets and gaufres to live in Brussels.

Chips!!! They're called chips dammit. Because they're chipped off a potato. Unlike 'fries' which are scraps of potatoes formed industrially into stick-like shapes. It's nothing else than the equivalent of MDF (Medium Density Fibre - interestingly banned in the US, unlike sadly their substandard 'fries').
Ironic that Dutch fries are so much better

Why should we? Just because the Americans did? People in the UK, France, Belgium, Netherlands, Germany and probably a lot more don't use the term French frie in their native language.
Because the rest of the world DOESN'T call them French fries.
