There was no crust on that steak at all. And you don't cook steak without some oil first. And whatever that breading on it was - MAJOR no/no. The doneness isn't the issue here. Well done steak is really a black people thing - it shouldn't be well done.
The steak is a medium rare which is a very popular temperature for steak lovers . But it just didn’t get a proper sear to get that beautiful golden crust .

I have done something similar to this before one I use real butter two you do not need that much butter, it's called a butter bath method which I did on grill. The way I did it is you have it in the butter until 125* take it out, session let it rest for 5 min. Then grill Sear for 1 min each side for a temp of 135*or medium.
