I dont know the steps, but my guess is the most commonly missed step would be marking depth, or if that isn't a step then maybe it's just missing the press altogether, like skipping one or forgetting to do a part.

Well I use Pex for everything because it’s easier to store the fittings but you had me inspecting a job that had pro-press fittings out the slab and they adapted it to upinor
It’s always a challenge doing trade work in existing residential. You might be there for a half day or less and the owners think you should be done in an hour. I was a repairman for the phone company. Many times the door opened and the occupant would tell us to be done in 10 minutes because how hard can it be.
I would say normally is the other way around. You are there for 1 hour and they think they overpay because they do not see you have to travel, you have to have materials to complete the task and then it is your liability. Not mentioning experience needed to finish the job.
I cant argue with you about extra time. When I started out, everyone was using cords and hoses. But I went cordless, and everyone was crying that those Milwaukee tools were too expensive. Then they cried about the nail guns being too heavy. I just laugh all the way to the bank. I'm able to perform way more jobs/repairs etc. by comparison to them. I'm able to pick up more jobs or spend less time on the jobsites and spend that time with my family.
For me I’ve had to re do a few jobs cause I missed some old clumps of solder left on the pipe. And pressed it. Wasn’t my proudest moment but ate the cost and fixed it the right way. Also second would be marking my depth with a marker. I’ve never had an issue when pressing but better to be safe than sorry. Always room for learning

I wish we could clone you; I run some restaurants at our airport and with so much renovation and expansion I continuously witness shoddy workmanship. The most common pro-press mistakes would be not having the fitting on past the o-ring. The only other mistake I've seen is not having the jaws straight and it presses it crooked. Hope it helps!
I’m located in Santa Rosa I think most common misstep is not reaming the copper or cleaning it enough and tearing a gasket I have seen it a couple of times at work but have personally ever had a leak with viega although most of my work is solder unless pro press makes more sense for the job since we share 3 presses for the company

If u dont count the not prest joint the most common miatake is not to bur the pipe ends and the rubber seal is damaged and possible leak.

Also you always put he glue first in the pipe then on the fittings so you do not put excessive amount of glue in the fittings.
