Great to see an old recipe bought to a new audience. These also do well made in cake tins frozen into slices. I've never pre-heated an oven for 20 mins though. Fine as soon as it hits 200 degrees.

We rotate in/out dehydrated hash browns occasionally and I’m going to try this method with them. Might have to do some adjusting and testing, but looks worth it to me!

I know this is an old post, but so glad I found it. I do Sub to your page and do enjoy your videos.. So glad you suggested the Pressure Cooker for cooking the Potatoes!!! No water to deal with, I did exactly as you said and put them in the freezer over night. I didn't have and Corn Starch on hand so good old Google told me I could use Mashed Potato Flakes, turned out Beautiful!!!! Thanks Again!!

If you haven’t got a pressure cooker and an air fryer but you do have a waffle iron they work great as well. Brush lightly with bacon grease, add grated seasoned potatoes and cook for about 10 minutes. They are crispy on the outside and tender on the inside. We all have an old waffle iron we hardly use in the back of the cupboard some where.

We are working on that. It's quite a process though. Short videos are usually a different aspect ratio and to turn one long form video like these into short videos that make sense takes a lot of work and planning. Jeff (husband/editor/videographer) and I have been working on it though. Louise, I have been watching your Videos for almost a year. You and I have different Pressure Cookers and Air Fryers, but your recipes have worked from the beginning.
I was able to get the 8qt. Ninja Foodie from Bargain Junkies refurbished and only paid $105.11 including Tax. My former P.C. and still will be using Pressure Cooker/Air Fryer is the CSS 6.5 qt. Modifications from the 6 qt. rendered the Air Fryer lid since the basket height and pot depth allow air fryer foods to burn.
We have been only using the pressure cooker lid.
We decided to get the Ninja Foodie 8qt. P. Cooker and air fryer since I know it will be accessible and easier to use the air fryer lid. Thank you so much for sharing your love of cooking and being fantastic at it. So happy I found you when I was looking for a Peppermint Patty Recipe.
I am a fan for life and even though my Mom used a regular stove-top pressure cooker, she didn't ever teach any of us to use it.

Currently harvesting potaoes and I am so grateful to you for sharing this recipe. This is a great idea to help increase my food pantry and use what we have grown. Wonder how long they will keep.....determining how many to make 🤔 at one time. Thank you again for sharing.
If stored correctly in the freezer (definitely spritz with oil to help prevent ice crystals), they should last several months. If you vacuum seal them after they are frozen solid, they will last longer.
i used to make them in the Tupperware hamburger thingies. now i use shape and store hamburger thingies. or i use a silicone mat and put a little space around the sizes i want them freeze.

Oh my goodness; this is going to be a game changer for me. I'll be puttin' on 10, maybe 15 pounds, haha. But seriously, I've watched so many videos on homemade hash browns. The technique was always so labor-intensive that I gave up and bought frozen hash browns at Aldi. I can't wait to try this!

@@TheSaltedPepper My hash browns came out great. I used a box grater, as your recipe suggests. But I think next time I'll try my food processor and just rinse the blade with cold water a couple of times so the heat doesn't affect the potatoes. My AF, a Cosori Dual Blaze, has 2 heating elements, so the cook time was only 8 min. total.

You fully cut them before freezing solid. When they are lightly frozen, they are easy to cut.

Yes! I've done that. Just throw them in the oven or air fryer to heat for a few minutes.

Have you ever scored your potatoes around the middle prior to cooking so that the skin just peeled off like being degloved? Years ago I saw someone prepping a bunch of potatoes for hash browns and they were able to slide the skins off. I have no idea how they achieved that tho.

I haven't tried that, but it's worth a shot!
It's been my experience that if you don't squeeze out the moisture in the potatoes, they will never brown properly. I usually use the Yukon Gold.
You don't have to with this recipe, but I know what you are saying. It's the way they are par cooked with the skins on. The flesh doesn't absorb moisture and they aren't fully cooked. I've tried a ton of different ways and this is super easy with wonderful results. I hope you give them a try!

I recommend getting the Ninja Foodi Pressure Cooker & Air Crisper because it's one appliance that does both. It's great and it's what I use the most in my recipe videos.

I also use 1 instant pot, but have 2 ss bowls. Also an air fryer lid. 1 appliance-2lids. I have NO room in my tiny kitchen.
For what it’s worth - be aware of the exhaust on the Ninja - it’ll melt the control panel buttons on a coffee maker. Words of experience (or inexperience…!).

So as long as I don't use more than a half of a cup of grated onion, the corn starch should stay the same.

Does anyone know if you can substitute tapioca flour or arrowroot flour for the corn startch?
I haven't tried it that way, but as long as the flours are absorbent and don't have a taste, it should be fine.

Thanks for not giving up. Was that 4 days? I thought I counted 3 days and then there was, an ideally other day, which makes this the longest potato recipe I've encountered short of vodka.
Actually, I made them and froze them all in one day. You certainly can spread it out over several days, but not necessary.
What temperature would you recommend for an air fryer that is part of an oven?

does the parboiling help keep them from turning brown when they're out so long?
I'm not sure what you mean out so long, but yes it does help with browning. The main reason though is the texture of the potatoes when you make the patties.

Would cold water bath work in a hurry to cool potatoes? I also saw to rinse multiple times to remove starch.. your way is sooo much easier 🥰
You can, but my only concern is they might absorb the water some and then the potatoes won't be dry when you shred them.

What oven setting would work here as an alrternative to an air fryer

I'm going to try this, but if you're going to peel them it seems to me it's easier to pell when raw.
It isn't for me, but another reason to leave the skin on while you cook is so the flesh of the potatoes does not absorb the liquid from pressure cooking or par boiling.
I have a question, would it be safer to put the potatoes in a ice bath after coming out of the pressure cooker to prevent botulism.
They will cool down fast enough in the refrigerator, but you can always dunk them in an ice bath if you want to. I didn't because the least amount of moisture the better. I don't think they will really absorb much water with the skins still on, but the way I did it worked just fine for me and they definitely were never in the danger zone of food safety. Another thing you can do is put them on a tray instead of in a bowl.
@@TheSaltedPepper Thank you for your reasoning! I was a manager at Mc Donald’s for almost ten years in my 20’s and I’m so aware of food safety and I wish more people were educated in schools. I love my hash browns and struggled to get them right myself, the cornstarch makes sense.

You shouldn't put hot things in the fridge. It raises the fridge temperature and the other items in your fridge will start to spoil.

When you are hungry, look up a recipe and think you're going to eat soon but so far im going to have to wait minimum 6 hrs😢
Unfortunately, the freezing time is necessary for the correct texture.
You have to peal skin of potatoes not cut whit knife, also how you can put hot potatoes to refrigerator its not good for your fridge, leave them in room temperature for few hours then put them in the fridge, hope it make sense
It makes sense, but once you try to use a peeler on par cooked potatoes you will understand why I use a knife. LOL The temp in the fridge can drop some when you put in hot food, but it didn't happen with the potatoes. I paid attention to the temp. You can absolutely leave them at room temp, but not more than 2 hours for food safety reasons.
