  • Here's an easy tutorial for how to make cured egg yolks. It's super simple and really only requires two ingredients; salt and egg yolks. You can of course add extra spices and seasonings to the salt cure depending on what you want flavour wise but I just wanted to give you a basic how to for these to get you started.

    How long can you store the cured egg yolks?
    2 weeks in an air tight container in the fridge. I find it is best to make only a few at a time and make them more frequently.
    Can I reuse the salt from curing the yolks?
    Yes, but only for curing more egg yolks and it must be completely dry before using a second time. Dehydrate the salt by laying out in a thin layer on a baking sheet and baking at a low temperature (150 F / 65C) for 1-2 hours until completely dry. Do not use the same salt more than two times.
    How do I serve/ eat cured egg yolks?
    You can: dissolve them into soup or sauce, grate them over steamed asparagus and other vegetables, add them to caesar salad dressing, grate them on top of poached eggs or salads. Think of places you would use a salty cheese like pamesan and go from there. Other than that, it's your party.

    Okay I really don't get how people haven't flocked to this channel yet. Personally you've been a massive help for me when i was a pastry chef apprentice. the inspiration you have given me to create my own unique creations is admirable.

    I forgot mine and they sat for about 2 weeks. they where awesome. firm and i didn't have to dehydrate them at all. I used them as Parmesan on my pasta was awesome :D

    I feel like using a muffin pan might decrease the wasted salt? And would fit the yolks individually

    The incredible edible egg! Perhaps I’m just too frugal but I would’ve used less salt and tried to put too many yolks in the pan.

    If you wanne have TASTY and GOOD yokes you should add sugar (i recommend adding dried and blend seasonings to taste to get maximum taste/umami) so you don’t have overly salty yokes. Other than that you shouldn’t let the yokes touch the bottom of the pan/plate/container your using because this will obstruct the process. Last but not least it’s better to seal the cure with baking paper (no tinfoil) for the best and secure process.

    Such a wonderful idea. I have a ton of eggs that I got on sale for $1 / carton ( and organic! With dark orange yolk❤). …and was wondering what to do with them before they go bad. I love that you show the way to rinse them using the water in the dish…other videos were using tap water and I almost thought I wouldn’t be able to make this,because there’s no way I want everything in the tap water- in my eggs.

    My oven can only do down to 170 C
    Can I reduce the time to 1hr to compensate for a higher temp?

    La teglia è molto sporca,di grasso vecchio e bruciato. un po' di igiene serve.ok per le uova.

      She’s not cooking anything inside and the yolks are not touching the sides of the pan or the bottom, also any bacteria present will already be dead by all the salt ☠️
