- On this episode of MeatEater Cooks, Mark Kenyon and Kevin Gillespie team up to prepare Moussaka with some hard earned ground venison. There is nothing fast about this technical layered dish, but the end result is worth the time in the kitchen.

KG is always a pleasure to watch! He educates and learns.. Great stuff
So many cultures make dumplings stuffed with ground or minced meat and everybody loves them. I have made potstickers, ravioli, pirogies with venison and served them to a wide range of guests. Serve them steamed or pan fried with dipping sauce, boiled floating in venison broth or covered with mushroom cream sauce, tossed with caramelized onions, bacon and sour cream and on and on.
Same! Made some with store bought wrapper dough and elk. Seasoned the elk with garlic, cabbage, carrot, soy sauce, chili. They were gone so fast.
A big fan of Shepherds Pie for ground venison.
I've harvest some big deer in Sugarhill, GA👍🏽👍🏽
Kevin does it right and talks about it right. Te only reason I got into deer hunting was to eat deer. Growing up I didnt hunt deer a friend introduced me to venison and it was on ever since then. KG needs to make a cook book for all these recipes.
Top-notch video - Kevin's a gem! Can't wait to try this recipe.
Great idea..... venison moussaka...
As a chef I really enjoy how you make it seem so simple for no cooks to even want to attempt..❤
Cheers champion catch you on the next..🦌🦌
Lifetime hunter, can confirm at least 30% of every deer I've ever hunted have been turned into meatballs, chili and or ground steak with gravy.
First time waching you cook Kevin nice work.
I saw Kevin Gillepsie and Steve Rinella on one of the cooking episodes do a complete wild boar meal which looked and I'm sure tasted absolutely delicious!
That looked GREAT! I'll have to make that.
Reminds me of shepherds pie. I’m jobs try adding egg plant to mine! Looks ultra fancy
I love how Kevin is so passionate about what he does. His enthusiasm for cooking is how I feel when I cook something new. Awesome focus to detail and explaining not just how to cook the food but how the individual ingredients come together as one.
Always love watching you guys hunting but Kevin cooking definitely forces for a “stop what you’re doing and watch a half hour of cooking”
I'd love to make this for my father. Is the full on recipe going to drop?
This looks absolutely delicious 😋
I'm drooling
I had no idea Yukon Cornelius lived in Atlanta, and is a deer hunter!
I never hunted in or around a city or town...until my house burned down a few years ago and we decided to just rent an apartment and it has an Acre of woods and surrounded by corn, soy beans etc farms. My landlord told me I didnt need to drive to camp...just bow hunt in the back yard. Well it was a great Idea....we happen to also live near a creek and a choke point....I can sit and be picky and just wait most days. And since they are basically wild but also farm fed...they are big, fat, healthy. Taste great. Nothing wrong with Urban deer.
My dad made some Swedish meatballs with some of his venison and it was awesome had two plates
music was 10/10 on this one
As a Greek and a carnivore, we like meat, kreas, one word of significant meaning! If I can't get lamb beef pork is all good! Poli kala!
Kalimera!
Nice I think I will make this Christmas this upcoming year
Moussaka now your thinking out of the box
Thank you
I can confirm....chili, stew, taco, meatballs, and maybe burger. lol
Just had venison fajitas, with the meat cooked to tenderness all day in a slow cooker (UK, so it was Fallow)
You can honestly sub deer for anything that you would use ground lamb or ground beef for. I've even made kibbe with it. The only consideration I've ever experienced is whether to add fat or not. I add fat to all my ground deer, but sometimes it's not enough for every application. If I'm grilling deer, I make sure that I have adjunct fat to baste or add to it (in the case of burgers). If I'm using it in sauce or as part of a larger dish, then it's less necessary.
KG is 1000% correct that you can use it for more than red sauce or chili. And to be honest, part of what made me start hunting again was watching Meateater on Netflix. Also, I promise no one asked me to say that :)
Thhe Muskoka c ae out beautiful 👍😊 !
JO JO IN VT 💞
Yeah I'm just gonna keep on making Manwich and Hamburger Helper with my ground venison.
Oh man. 🤤
Being red/green colorblind, I love to hear a podcast episode where Mark talks about blood trailing with that common visual trait.
Thank you for these videos.
From health perspective, olive oil is bad for frying. The fats inside it oxidise easily.
Animal fats are much better.
That reminds me of lasagna, I could make that. It looks delicious!
Bring back black wick shirts.... love the vid
Side note…love the NATO watch band.
Where can I find the full recipe?
It must be said, the moustache is an endearing look on Mark. Thank you, for moving on from the goatee.
When is the actual recipe coming? My wife might actually eat that!
I made it and if you eyeball it he pretty much said the important measurements
Would zucchini be a good substitute for the eggplant?
City limits and so under rated and are nothing but a gold mine! I was vary skeptical the first time I was invited to hunt a small parcel in town. Was blown away by the amount of deer in such a small area and how healthy they were. And how they always say that they are destroy their environment to over population it was vary clear ots true
Anyone know what brand hat Mark is wearing?
I love venison Swedish meatballs all day.
Random, but I loved the soundtrack
When did Yukon Cornelius start cooking wild game?
"Nobody likes eggplant!!" -K.B.
Atlanta is the only place where your an hr from Atlanta
Seek One reference???
Where can I get Mark’s hat?
In my humble opinion, if you have to put that much effort into making ground venison palatable, it's not worth it (btw, you lost me at cinnamon in a meat dish). I put my effort into the butchering process, so the meat itself does the job. To each their own, I guess. I'm a huge fan of MeatEater!!
It's not about making it palatable, it's about making a certain dish, that COULD be made fine with beef, but making it with venison. Also, a large portion of the world uses cinnamon in meat dishes. I guess you're just used to very American-centric food. 🤣
@@D_Boone Guilty as charged. Everything about me is American-centric. Thanks!
@@jerrys2346 That's a shame. Most of the good cuisine was developed elsewhere.
Where do we get this hat?
Is mark or someone else vaping on set? Right at 3:40
🇧🇷👍
Being red green colorblind makes blood trailing such a pain… I always have to get a friend to help me track.
recipe please
Where can I get Mark's hat? That bish is 👌
I saw an episode of "Jaque and Julia" several years ago whence they made burgers. They agreed that most people ruin the texture of a burger by over woking it.
You only need 3-4 tbs of oil....proceeds to pour in a solid half cup lol
The slo-mo ingredient add tells you it’s a high brow dish..
I really like their cooking videos, but they talk about how normal deer hunters make easy quick to make meals with their ground venison. Then they turn around and make a very exquisite meal that i will never make in my lifetime.
Well, if they already know recipes for quick and easy meals, why not give some variety?
That was the point! They weren’t trying to go quick and easy. He’s a gourmet chef!
Be less lazy
Moussaka is a meal best ordered.
Lol this isn't even that hard to make if you have any decent cooking skills at all
You made greek moussaka
That the off grid alex jones
lost me on the cinnamon and cloves...ughughaaarrrpphhhh
Have you not cooked any dish from anywhere but America?
@@D_Boone I have some culture, I personally just cannot stand cinnamon and cloves with deer
Anybody else not able to go wide screen on their phone on this vid?
Mississippi pot roast
What hat is mark wearing??
Looks like a new MeatEater hat
99/100 I love Meateater content. This is no different. However, I think this recipe has way too many steps for me, or even the average deer hunter, to attempt. I love the idea of something other than chili tacos and pasta sauce, so perhaps do this again with a more achievable recipe.
Fun fact: you can get equal quality meat from the store and no animals would be harmed. I just dont understand why hunters think they have to kill animals.
Do you think the animals in the store committed suicide?
@everythingchannel2910 no, that's ridiculous.
Its gone over your head .
Not a bad episode, but not my taste. Another wild game recipe covered in cheese.
Soak in buttermilk overnight and Vinson turns into delicious beef steak
So many awkward slow motion shots in these cooking videos
First one here
nobody cares justin
I care Justin. Well done. I'm proud of you.
Fine, maybe one or two weirdos care but most people think the first comment thing is dumb because this is not a race and if it was you still would have lost, You are the guy who crosses the finish line and starts celebrating only to realize it was a pace lap.
@@plotholedetective4166 Nobody cares, broh
😂 most of these recipes hide ALL the wild animal taste.
So? Why does that always have to be the main flavor? I swear nobody in these comments has any depth to their cooking skills.
@@D_Boone 😂
I'm so sorry that american deer hunters waste so much deer meat. I'm poor but there are so many opportunities to make exquisitely delicious meals with what you Harvest.
Where do you get the idea that they waste meat?
"Urban hunting" in Atlanta sounds more applicable to the diversity shootings that happen almost every day in that place.
I went to college in Atlanta. It's basically like a third world country with the amount of violent crime you witness on the streets on a weekly basis.
I know a guy who hunts the hoods and industrial sites on the south side of Atlanta. He carries a big sidearm for pitbulls. Lol
If Rinella or Cal ain't in the episode I don't watch.
That's too bad. You're missing out on a lot of quality content.
@@D_Boone just not the same show.
@@byrd5163 It's not supposed to be. 🤣
Yet here you are watching the episode...
@@briansteele1378 na just commented
These vids are daily quality not weekly. No field to table anymore, it's all broken up and sold out. Sad what Meateater has become over the years.
The main show is literally the exact same as it has always been. hunt, butcher, and eat at the end of the episode. This is just their additional web content throughout the offseason when the show isn't airing.
I've watched a few of Kevin's videos and there's one theme that always plays through.... Add way too many flavors, textures, and other components to completely hide the wild game. It's beautiful meat, it was hard earned, please try to make it the focus, the front and foremost part of the dish with its own flavor. Stop covering it up. You're doing the meat a huge disservice
But does it NEED to be treated differently than other meat? Why does it always have to be the star? can't it just be a substitute for beef or mutton?
@@D_Boone sure, use it as a substitute, but I would say I treat my beef, lamb, and pork similarly. My meat is all hard earned and my preference is to make it the "star" as you say. Being able to tell what you're eating in a dish seems to be more respectful of whatever it is you're eating. I'd say that for some veggies too. Don't turn everything into a conglomerate
@@daviddeyoung6835 Seems like you're just putting weird arbitrary limitations on your cooking. It's a bit odd, but you do you.
That chubby guy comes across , A little too much .
The two most annoying people on meat eater combined into one episode…for sure skip
I've officially unsubscribed to Meateater due to the absence of Rinella. You've become inauthentic.
Venison makes excellent "beef tips" and noodles
You can see killer predator in mustache guy eyes.
