Pro tip: dont whisk your egg whites in, FOLD GENTLY WITH A SPATULA, your cake wont sag in the middle and will be fluffier. When you whisk the egg whites in they lose the air thats in them which when making a sponge cake (like they are doing) is crucial in ensuring that the cake comes out perfect.
The presenters want a flat cake. Your method will force them to level the cake. They are using a different method to achieve their desired results. Typically you would be correct about folding, it's just not correct for this recipe. Have a great day.
Folding in with a whisk often works better than a spatula. If you do it right you incorporate the ingredients with less movement and loss of air (though of course you have to use the whisk to fold the ingredients, not to whisk them).

체리 티라미수에 이은 롤 케이크네요 티라미수 때는 체리가 고급진 붉은 색이라 잘 어울린다고 생각했었는데 이번엔 체리가 연한 색이라 핑크빛 케이크에도 잘 어울리네요
