Totally agree! All of these channels doing extreme budget challenges with ramen noodles and no meat or vegetables-why are we trying to normalize that? Let’s make it normal to have good nutrition and get help when it’s hard... and then we wonder why so many Americans have health issues 😢
I love food banks. Your saving good food from landfill, the more people who utilise food banks the longer they can keep running x and saving so much food waste is a bonus, I used to work on produce in a supermarket and the amount of good food that went to landfill was unbelievable! And disgraceful I contacted a local food bank who we ended up donating it too instead and knowing it wasn’t going to be wasted was great x
Dehydrating potatoes is easy.. I like making the sliced ones..a mandolin makes it easy and fast.. just watch the fingers, use the guard.. great for casseroles... Love your channel, never thought about powdering leeks..see you just taught an old canner a new trick... Great video as always..
I have a Vitamix, instapot, Excalibur dehydrator, Bosch mixer, cutco knives. It’s not because we have tons of money. All except the Vitamix were gifts from my family. My Vitamix is 13 years old. I cook three meals a day for a large family those items get used daily and hold up 1000x better than their cheaper counterparts. Sometimes it saves you money to buy once and get quality than buy cheap and get a new one every year.
Yes! I agree so much!! I had people tell me to sell my ($200) instapot if I need food instead of just begging. LOL. Don't know where they are shopping if the instapots are $200!! Haha So I felt I needed to say something about that fact that I'm using both a dehydrator AND a Vitamix. Haha. I worked my butt off doing Door Dash to earn that dehydrator and my Vitamix was a house warming gift. People just don't get it though. Those who have never truly struggled. Thanks for sharing Katie!

Well I like that you're messy. Real life is like that. I can't imagine being in my own kitchen, or home for that matter, and being self conscious about dropping things or making a mess. Just because rude people out there would judge us, doesn't mean we need to do it to ourselves. Make a mess!
In Arizona we have POWWOW (Produce On Wheels Without Waste). They deliver at different locations throughout Maricopa and Pinal counties. It's 70 pounds of produce for $12.00. It's all destined for the landfill unless we buy it. And it's great produce and a lot of variety.
I know everyone talks about beans and rice. Well my family was too poor for rice. We had beans and fried potatoes. Then all the many potato soups you can make. Loaded baked potato soup in the Crock-Pot. Zuppa Toscana. Leek and potatoes. Bubble and squeak. All the potato bars...taco, pizza I love them with any kind of leftover shredded meat from the crock pot. Homemade french fries. Shepherd's pies. Lentil and roasted potato tacos. A lovely delicious Lord Wilton pie. Potato salad. Twice baked potatoes with homemade baked beans. I love potatoes there is a potato farm near me and I get 50 lb sex of potatoes for 10 to $20. I get about 150 lb of potatoes every winter. I can then too. They make a quick fried potato or a potato soup.

Yes I have made pierogies. Once a month I get together with a girlfriend or two. We are homeschooling Mama's. We do homeschooling group activity then we let the kids play together. Well as Mama's head into the kitchen. Things like pierogies, egg rolls, tamales and potstickers. And not hard to make they're just fussy and time consuming. So we get a giant assembly line going and we sat there and we make a million pierogies. Each Mama gets a giant bag to take home and put in her freezer. A great and fun way to stock your freezer. Works well with calzones empanadas or any other kind of hand pie.
Dehydrating potatoes is easy peasy! I make mine in the style of the boxed potatoes you get like scalloped or augratin. You slice them thinly, (using a mandolin) blanch them for about 2-3 minutes, cool them down and then put them on your dehydrator. You want to make sure to blanch them so they don't turn dark. Once they are dried you can portion them up and then you cook them just like the ones you buy from the store in the boxes. They make life so much easier!! You can also shread them and dehydrate them as hashbrowns. Great video!!
I send my grandkids out in the yard with the leak and onion tops and have them plant them in the yard or garden 5hey grow back i have them volunteering all over my yard
I really like how your ‘use what you got’ philosophy! My Mom didn’t waste anything and I don’t either! I really like how you utilize your food bank hauls! A lot of families do not qualify for government assistance and the food bank is a great resource! I also like that you grow your own food and have chickens! You are resourceful and way scrappy! Don’t apologize for good kitchen equipment. It’s essential when you cook and it saves you money on food! People spend more money on take out every month than on that dehydrator! Thanks for sharing!
Oh my goodness Carolina. I'm only 10 minutes in, love the videos you are creating, and just wanted to let you know it's completely acceptable to use the food bank. Food security is so important. When you are food secure you will be able to progress in your life and I think that is the fundamental benefit of them. If the food bank helps in that journey USE it! Sure, it's there for those that suddenly find themselves in need, but it's also there to give a hand up so that you can get that piece of equipment that will make your life more sustainable. Look at you, your RUclips channel is growing and you are really providing such an education to so many. You are a blessing. Love you!
You are so awesome to encourage people to get help...and keep for from being trashed! I have been blessed to get a Mockmill...a crockpot...and a nice pressure canner...these tools allow you to save mo ey and use food wisely. I would love a bread machine and a kitchenaid mixer one day...but tools are a slow and steady...and even check the Goodwill...you never know! Enjoy your blessings and thank you for doing this channel!

I dehydrate potatoes all the time. I do cubed, sliced and shredded. Use the sliced the same as one of those Betty Crocker au gratin mixes. Cook the cubes and top with chili. Use the shreds for hash browns. Blanch them well and remember they are still raw potatoes when you go to use them. They still have to be cooked to the desired tenderness depending on how you blanched them. They can be done either peeled or unpeeled.
Carolina yes you can eat the core of pineapple. It has bromalain in it which is good for pain. You can also boil the outer part of the pineapple to make a tea.
LOVE watching your show. No need to justify your food prep purchases!!! You work hard to provide for your family-there is no doubt about that!! Just ignore anyone who says anything about that!! As for the Kamut-throw it in some of your sourdough bread! Also-cut the top off your pineapple & keep it in some water (change water frequently) until it roots and then plant it for a houseplant!! That is a great project for your kids!! One more suggestion-chop up leftover halloween candy bars and sub for chocolate chips in your favorite chocolate chip cookie recipe!!! Again, love your show and am always amazed at your hard work!!!!!

I used to go once a week and my husband was off and he went in with me and they asked him as we entered if he was there to work...He was so embarrassed that we do not go anymore and well times are hard and we have worked through our stockpile...I am going to go back after you reminded us the food will get thrown out if people do not go! I preserve a lot of my food truck pick up. There is only 2 of us and many times we cannot use up the produce before it goes bad. So I small batch can it, freeze it, or dehydrate it to use later. We don't always get onions or carrots, for example, so I preserv them so next time I have those items to go with the potatoes or cabbage to make a better meal.
True. I never been to a food bank, but my neighborhood is abundant with pantries, the food bank supplies all of the pantries, and it’s for anybody who want it. Not letting good food go to waste. Nothing wrong with that.

We were low on finances recently...but our resource only offered sugary discards...so we realized our food bank really is not an option for us. We were hoping for milk, eggs, normal bread, or vegetables...but only old pies and donuts...but it was a good lesson to learn in case we ever had absolutely no money at all, that it was not going to work for us. We have a very large family and usually use our tax refund to do a massive food storage stockup...we will do double this year! I love your thankfulness and openess about making due...which a whole lot more of us have to do than we openly speak of it.
Man that's a shame. I have heard a lot of people mention their food banks don't offer a whole lot but sweets and breads. I probably wouldn't be going either! I'm so thankful mine has wonderful resources so they are always stocked! Thanks for sharing your experience with us!
My favorite thing about the food pickups/pantry/CoOp is getting to try new things I never would buy to try and it gets me to try new recipes! I’ve gotten cases of leeks a couple times-dehydrated let’s me enjoy for yrs! I usually grow kale/ spinach but I’ve also received LOTS in food pickups-dehydrating is the best way to preserve it and sneak it into dishes so my picky eaters get some greens! 🤫 shhhh don’t tell on me😜 I occasionally get tons of potatoes-they store a long time but often we get them towards the end of their freshness so preserving them in lots of ways so they don’t end up in trash is important! If they are red or Yukon I will pressure can them but russets don’t hold up as well. I shred/blanch then dehydrate for hash browns or dice blanch to throw in soups/stews- I haven’t made flakes yet but maybe next time! I will also make a huge pot of mash potatoes then freeze in baggies-they are a bit watery so you just have to cook off the liquid! As messy as I am in the kitchen-imagine us working together 😜 It would be a mess but we’d have a blast and be eating good! Fantastic idea to stretch those ribs! Looks delicious!
@@mamabairds no I leave in dry shreds/store in jar-when ready to use I pour hot water over them for a few minutes to rehydrate then squeeze out water fry in bacon grease in shreds or add egg onion powder S& P then fry Pattie’s/ I’ve also made potato waffles or use just like frozen shredded hash browns for casserole

I peel my potatoes, but you don't have to. If you don't scrub, them really well with a vegetable brush. Either slice them or chunk them uniformly. Keep them in cold water until you're ready to put them in your dehydrator, be sure to add either lemon juice or citric acid to the water. Parboil the potatoes for 3 to 5 minutes them drain them and put them in cold water to stop the cooking process. Place them in your dehydrator in a even layer at the fruit and veg setting for about 12 hours or until totally dry. I store mine in a canning jar with a moisture absorber. I usually vacuum seal them. LOL one time, when I first was learning to dehydrate things, I peeled 15 pounds of potatoes and washed them and put them on my dehydrator, I was so excited to see how they would be. I was so sick to my stomach when I opened the dehydrator to find them with big black spots all over them. I had totally forgotten to parboil or blanch them. Needless to say, I will never forget that again!!!!!Good luck I love your channel.
Great haul and Great message! I have seen others like Jennifer from a country life mash up large quantities of potatoes and freeze them flat in gallon baggies then just thaw and heat. I don't have lots of extra food to have to figure out what to do with but I am always interested in food prep etc.

The pineapple core is edible, but you need to put it in the blender with other fruit. It can bulk up a smoothie, provide lots of fiber and tastes just as good as the nice part of the pineapple! OR it can be dehydrated and powdered and used in smoothies too! I have seen that you are a no waste kind of gal like me, so just a couple ideas for those pineapple cores. Of course I don't have chickens so mine would go in the trash, but I guess your chicks need something good to eat too!
My favorite way to dehydrate potatoes is to slice them, blanch them and then dehydrate. They are amazing that way perfect for scallop potatoes or casseroles
Oh man that dinner looked so yummy! Now don't make fun but I worked with the elderly ( dementia) for many years and we had one beautiful lady who LOVED to put butter and sugar on her mashed potatoes..I thought she was crazy..that is until I tried it!!! With corn and gravy it is so delicious. One more thing, if you have extra sour cream or plain yogurt throw a dollop in the gravy and you have a delicious stroganoff type dish. Love you girl!

Darcy at the Purposeful Pantry is a total expert at dehydrating. I've dehydrated for many years ( I'm a grandma now ☺️). I made fruit rolls for our kids that the neighbor and the kids friends loved. I often froze the fruit and then when I had time I made the fruit rolls. This rescued mark down fruit and fruit that was getting over ripe 😊 I just discovered your site and am enjoying your enthusiasm, positive attitude. My mom would cook us a potato soup when I was a kiddo. she got it from her mom who had 6 kids and had to stretch every thing. It has potatoes, dry elbow pasta, you can use either cooked bacon or ham or leave it out, milk, butter, salt and pepper. you boil your potatoes and pasta then add all together in a pot. I add soup base or dry broth to help add some flavor. I like to use chicken soup base dry mix. It sounds strange but it is super good and helps feed a crowd. not good for the figure but good for the tummy.

If u ever wanna minimize the clean up when u make your home made seasoning place a large baking sheet under to help catch all the fallen bits then then u can just pour it back into the blender for easy cleaning.

Mama Baird, this is my first ever RUclips comment (on any video) but I just wanted to say how much I enjoy your content! I also wanted to say that anyone giving you grief or trying to shame you for going to a food bank is clearly someone out of touch with the reality working class American families are facing at the moment. Not to mention the disgusting amount of edible food that is just thrown away in this country that could be donated. Perhaps they grew up in an America where a family could thrive on 1 income and grow their wealth by purchasing land/homes that are not even comparable to the current housing market. My fiance and I are currently saving for a wedding & eventually a home, so your tips for saving and limiting food waste have been so very helpful. Thank you!

You can try grinding the Kamut up and using it to make bread. Add it with any other flour you own. You can also add it to soups and stews that require a long time to cook.
Love your channel, so glad you and your family can benefit from your local food bank. Years ago I had to go to my local food bank, but thank goodness my situation has improved greatly. I myself now donate fresh eggs and Venison during hunting season at a soup kitchen many go to for a hot meal, it's at church in my area. It was always the same food items when I went. Mostly canned goods. Tomato sauce, canned green beans, peanut butter, brown rice, box of spaghetti noodles and canned pasta and canned soups. All the boxes were the same.

At these food banks are most of the things ready to expire?Where does the food come from is it grocery stores? I went once and they gave me a bag of very freezer burnt chicken and random stuff my kids wouldn’t eat like juice boxes and fruit cups. There 15 yr old growing boys.I’m sure there all different and maybe I should try again because I can barely keep up with feeding them it’s constant.I’m surprised you don’t have a lettuce spinner for drying. You said you don’t have a grill, not even a George Forman indoor grill? I have a large one I don’t use, wish you weren’t a million miles away I would ship it to you and a spinner I have 3 of them lol.I love tag sales😅
Our pantry’s food comes from NTF ( I’m in Dallas Tx) and they don’t give out any kind of meat or milk, even though I know for a fact they have it at warehouse, they only give out mostly produce that’s already rotten, they suck!! I really think they keep all the good stuff for themselves 😢
I love watching your videos. I've gotten lots of good ideas. I dehydrate potatoes for scalloped potatoes or au gratin. Slice potatoes, blanch then dehydrate. It drives me nuts when people try to judge others. You never know what has taken place in someone's life that leads to them utilizing food banks. The "nice" items they have could have been gifts or acquired during a better time for the person. One lady I dealt with was critical of anyone who had a car they were making payments for. I guess she felt you should let the car go back and use that money for food. Of course for lots of people not having a car would make it difficult to work, etc. We live 12 miles outside of town. No public transportation where we are living.
Yes I agree with you on that. People have told me to sell my mixer to pay for food. That just leads to me buying more processed, ready to eat foods (which are more expensive and not as healthy) because now I can't make food at home because I sold my mixer for half it's worth. I love my dehydrator; right now I’m doing canned beans that were dated 2021. I’ll make an instant dry meal in a jar, probably taco soup. I don’t usually do potatoes because they’re kinda finicky and can turn dark. The main tips I’d give are experiment with a small batch first and don’t rush through prep - soak a few times, preferably before and after a short blanch
Sorry I'm so chatty.. But don't throw the leek roots away. You can plant them in the garden and grow more leeks. You can also do that with green onions.

Yumma mumma, great dinner, shame about the pineapple, they are my favourite. If the chickens have not eaten the top yet plant it. Google how, super easy but about a 2/3 year yield just for one, I have one growing now lol, still worth the wait. I saw a great way to slice pineapple in 8ths with out taking the skin off first and when you do edge and core it you get more fruit and perfect cubes ❤❤❤❤❤ great video! 🤤

Once I harvest my pineapple I will have to send you a pic, it’s like about 3 inches long at the moment haha 😂

Hello Ma’am! I’m Jen. New to your channel today. Very fun content! I read many comments and your responses. “All I do is cook” is what you said in one. Hahahaha. NOT! You are fun, thrifty, and full of information. I loved the video and subscribed. Somewhere in the comments someone may have said this about leaks but I didn’t read the over 200. But yea! All the comments help a channel grow! Anyway, after you chop the leaks toss them in a big bowl of water and swish them all around. Mostly the leaks float and the grit sinks! Then just spider or pick em out! I eat leaks a couple times a week and that seems to be easiest! I have never ground up my dried leaks but I am now! Thanks for doing this. 💛💛

I invested in a food dehydrator, All American pressure canner, sturdy pots and pans, etc. They were not the cheapest, but they will LAST. Next, I'm going to save up for stainless steel cookie sheets.
@@mamabairds Stainless steel is fantastic. I don't have luck with aluminum because I ultimately forget and put it in the dishwasher, which it reacts BADLY to.
I like to make french toast. But instead of putting something sweet on it I put tuna fish salad on top. With an all fruit smoothie on the side. It tastes so good!
I use my pineapple cores! You can use your high powered blender and add to smoothies or fruit leathers. I also flavor/infuse homemade kombucha with them or you can add it to water to infuse
Potato soup 10lbs potatoes Peel and dice...put them on to boil 2 large onions and a celery...diced 2 sticks of butter...sautee until lightly browned Add a cup of flour...add salt and pepper Once mixed well...add however much milk you desire to make a gravy .....mix mix mix until it thickens. Add cheese or velveeta to the pot. This is so good😁
I have cubed potatoes on the dehydrator as I speak..did there 5 gallon buckets of slices already now I'm on the second 5 gallon bucket of cubes also did hasbrowns. All you have to do is blanch your potato slices or cubes I do them fo 1 to r 2 minutes just depends you dont want them to turn to much you have to blanch them first though or they will turn dark my dehydrator I do them at 135 for between 18 and 24 hours until they are crisp. Them I store them in a bucket with a mylar bag and oxygen obsorber. I also keep some in mason jars I have 100s of jars on the homestead use them for canning and storing food. Glad you get the word out to pet who do need to go to the food bank people shouldn't judge one another there's to much of that.take good care tell you kids Happy Halloween and stay safe.

You can dehydratemadhe potatoes and make.potato.flakes for soup mashed potatoes thickener also slices for casseroles and sugar graten potatoes. Chunks for soups ect
Yes you can dehydrate potatoes. We do it with skin on. Just slice it as thin as you want. Then judt pop them in and dehydrate!! They turn out like the box augratin taters.
I do my potatoes in slices for scallop potatoes or small chunks for hashbrowns. The important part is to blanch till heated through. I don't cool in cold water, just spread on the trays.
One of the things I do when I crockpot cook is use a crockpot liner if I know the meat is going to produce a lot of nice broth. I then lift it all out of the crockpot, take it to the sink, get a quart jar, cut the corner off, and let the juice drain into the quart jar with all the onions and bell peppers in it. I then let it cool in the fridge over night, remove the grease off the top and use it in preparing rice, soup from the left over meat, mashed potatoes, and anything else I can put it in. It saves on clean up, easy to transfer to a jar, and makes good flavor for another day.
One of our neighbors left 35 pounds of green tomatos at the mailboxes and i had 20 pound of green tomatos in my garden, nobody was taking the tomatos so i brought them all home. We just finished processing them. We made pickled tomatos, verde salsa and freeze dried green tomato chips with Tajin on them
@@mamabairds i have the large Harvest Right, i highly reccommend the large, as the machine gets smaller so do the trays, i currently have 5 trays running in the machine and 5 in the freezer, it was all veggies that were going to go bad, broccoli, carrots, onions, celery, cilantro and a half gallon jar of homemade baked beans 😀
Potatoes can be dehydrated. I have found that you need to blanch them first to remove some of the starch or they will turn gray when dehydrated. They are still edible but not very nice to look at. When blanched, they dehydrate a white like fresh potatoes.

I have a Vitamix, instapot, Excalibur dehydrator, Bosch mixer, cutco knives. It’s not because we have tons of money. All except the Vitamix were gifts from my family. My Vitamix is 13 years old. I cook three meals a day for a large family those items get used daily and hold up 1000x better than their cheaper counterparts. Sometimes it saves you money to buy once and get quality than buy cheap and get a new one every year.
Yes! I agree so much!! I had people tell me to sell my ($200) instapot if I need food instead of just begging. LOL. Don't know where they are shopping if the instapots are $200!! Haha So I felt I needed to say something about that fact that I'm using both a dehydrator AND a Vitamix. Haha. I worked my butt off doing Door Dash to earn that dehydrator and my Vitamix was a house warming gift. People just don't get it though. Those who have never truly struggled. Thanks for sharing Katie!

Well I like that you're messy. Real life is like that. I can't imagine being in my own kitchen, or home for that matter, and being self conscious about dropping things or making a mess. Just because rude people out there would judge us, doesn't mean we need to do it to ourselves. Make a mess!

In Arizona we have POWWOW (Produce On Wheels Without Waste). They deliver at different locations throughout Maricopa and Pinal counties. It's 70 pounds of produce for $12.00. It's all destined for the landfill unless we buy it. And it's great produce and a lot of variety.

I know everyone talks about beans and rice. Well my family was too poor for rice. We had beans and fried potatoes. Then all the many potato soups you can make. Loaded baked potato soup in the Crock-Pot. Zuppa Toscana. Leek and potatoes. Bubble and squeak. All the potato bars...taco, pizza I love them with any kind of leftover shredded meat from the crock pot. Homemade french fries. Shepherd's pies. Lentil and roasted potato tacos. A lovely delicious Lord Wilton pie. Potato salad. Twice baked potatoes with homemade baked beans. I love potatoes there is a potato farm near me and I get 50 lb sex of potatoes for 10 to $20. I get about 150 lb of potatoes every winter. I can then too. They make a quick fried potato or a potato soup.

Yes I have made pierogies. Once a month I get together with a girlfriend or two. We are homeschooling Mama's. We do homeschooling group activity then we let the kids play together. Well as Mama's head into the kitchen. Things like pierogies, egg rolls, tamales and potstickers. And not hard to make they're just fussy and time consuming. So we get a giant assembly line going and we sat there and we make a million pierogies. Each Mama gets a giant bag to take home and put in her freezer. A great and fun way to stock your freezer. Works well with calzones empanadas or any other kind of hand pie.
Dehydrating potatoes is easy peasy! I make mine in the style of the boxed potatoes you get like scalloped or augratin. You slice them thinly, (using a mandolin) blanch them for about 2-3 minutes, cool them down and then put them on your dehydrator. You want to make sure to blanch them so they don't turn dark. Once they are dried you can portion them up and then you cook them just like the ones you buy from the store in the boxes. They make life so much easier!! You can also shread them and dehydrate them as hashbrowns. Great video!!
She can also shred them, dry them and then blend them up to make mashed potatoes later!
Look on Pinterest for a homemade sauce mix, I made it and stored it in my pantry.
I send my grandkids out in the yard with the leak and onion tops and have them plant them in the yard or garden 5hey grow back i have them volunteering all over my yard

I really like how your ‘use what you got’ philosophy! My Mom didn’t waste anything and I don’t either! I really like how you utilize your food bank hauls! A lot of families do not qualify for government assistance and the food bank is a great resource! I also like that you grow your own food and have chickens! You are resourceful and way scrappy! Oh my goodness Carolina. I'm only 10 minutes in, love the videos you are creating, and just wanted to let you know it's completely acceptable to use the food bank. Food security is so important. When you are food secure you will be able to progress in your life and I think that is the fundamental benefit of them. If the food bank helps in that journey USE it! Sure, it's there for those that suddenly find themselves in need, but it's also there to give a hand up so that you can get that piece of equipment that will make your life more sustainable. I have been blessed to get a Mockmill...a crockpot...and a nice pressure canner...these tools allow you to save mo ey and use food wisely. I would love a bread machine and a kitchenaid mixer one day...but tools are a slow and steady...and even check the Goodwill...you never know!

I dehydrate potatoes all the time. I do cubed, sliced and shredded. Use the sliced the same as one of those Betty Crocker au gratin mixes. Cook the cubes and top with chili. Use the shreds for hash browns. Blanch them well and remember they are still raw potatoes when you go to use them. They still have to be cooked to the desired tenderness depending on how you blanched them. They can be done either peeled or unpeeled.

Carolina yes you can eat the core of pineapple. It has bromalain in it which is good for pain. You can also boil the outer part of the pineapple to make a tea.

LOVE watching your show. No need to justify your food prep purchases!!! You work hard to provide for your family-there is no doubt about that!! Just ignore anyone who says anything about that!! As for the Kamut-throw it in some of your sourdough bread! Also-cut the top off your pineapple & keep it in some water (change water frequently) until it roots and then plant it for a houseplant!! That is a great project for your kids!! One more suggestion-chop up leftover halloween candy bars and sub for chocolate chips in your favorite chocolate chip cookie recipe!!! Again, love your show and am always amazed at your hard work!!!!!
The little ones had wayyyy too much candy. I had a great cc muffin recipe I used and kept them in the freezer for hubby’s lunches.

I preserve a lot of my food truck pick up. There is only 2 of us and many times we cannot use up the produce before it goes bad. So I small batch can it, freeze it, or dehydrate it to use later. We don't always get onions or carrots, for example, so I preserv them so next time I have those items to go with the potatoes or cabbage to make a better meal.
True. I never been to a food bank, but my neighborhood is abundant with pantries, the food bank supplies all of the pantries, and it’s for anybody who want it. Not letting good food go to waste. Nothing wrong with that.

We were low on finances recently...but our resource only offered sugary discards...so we realized our food bank really is not an option for us. We were hoping for milk, eggs, normal bread, or vegetables...but only old pies and donuts...but it was a good lesson to learn in case we ever had absolutely no money at all, that it was not going to work for us. We have a very large family and usually use our tax refund to do a massive food storage stockup...we will do double this year!

My favorite thing about the food pickups/pantry/CoOp is getting to try new things I never would buy to try and it gets me to try new recipes! I’ve gotten cases of leeks a couple times-dehydrated let’s me enjoy for yrs!
I usually grow kale/ spinach but I’ve also received LOTS in food pickups-dehydrating is the best way to preserve it and sneak it into dishes so my picky eaters get some greens! 🤫 shhhh don’t tell on me😜
I occasionally get tons of potatoes-they store a long time but often we get them towards the end of their freshness so preserving them in lots of ways so they don’t end up in trash is important! If they are red or Yukon I will pressure can them but russets don’t hold up as well. I shred/blanch then dehydrate for hash browns or dice blanch to throw in soups/stews- I haven’t made flakes yet but maybe next time! I will also make a huge pot of mash potatoes then freeze in baggies-they are a bit watery so you just have to cook off the liquid!
As messy as I am in the kitchen-imagine us working together 😜 It would be a mess but we’d have a blast and be eating good!

Always blanch your potatoes before dehydrating. The Purposeful Pantry is my favorite You Tube channel for learning to dehydrate.

I peel my potatoes, but you don't have to. If you don't scrub, them really well with a vegetable brush. Either slice them or chunk them uniformly. Keep them in cold water until you're ready to put them in your dehydrator, be sure to add either lemon juice or citric acid to the water. Parboil the potatoes for 3 to 5 minutes them drain them and put them in cold water to stop the cooking process. Place them in your dehydrator in a even layer at the fruit and veg setting for about 12 hours or until totally dry. I store mine in a canning jar with a moisture absorber. I usually vacuum seal them. LOL one time, when I first was learning to dehydrate things, I peeled 15 pounds of potatoes and washed them and put them on my dehydrator, I was so excited to see how they would be. I was so sick to my stomach when I opened the dehydrator to find them with big black spots all over them. I had totally forgotten to parboil or blanch them. Needless to say, I will never forget that again!!!!!Good luck I love your channel.
Great haul and Great message! I have seen others like Jennifer from a country life mash up large quantities of potatoes and freeze them flat in gallon baggies then just thaw and heat. I don't have lots of extra food to have to figure out what to do with but I am always interested in food prep etc.

The pineapple core is edible, but you need to put it in the blender with other fruit. It can bulk up a smoothie, provide lots of fiber and tastes just as good as the nice part of the pineapple! OR it can be dehydrated and powdered and used in smoothies too! I have seen that you are a no waste kind of gal like me, so just a couple ideas for those pineapple cores. Of course I don't have chickens so mine would go in the trash, but I guess your chicks need something good to eat too!

My favorite way to dehydrate potatoes is to slice them, blanch them and then dehydrate. They are amazing that way perfect for scallop potatoes or casseroles

Now don't make fun but I worked with the elderly ( dementia) for many years and we had one beautiful lady who LOVED to put butter and sugar on her mashed potatoes..I thought she was crazy..that is until I tried it!!! With corn and gravy it is so delicious. One more thing, if you have extra sour cream or plain yogurt throw a dollop in the gravy and you have a delicious stroganoff type dish. Love you girl!

Darcy at the Purposeful Pantry is a total expert at dehydrating. I've dehydrated for many years ( I'm a grandma now ☺️). I made fruit rolls for our kids that the neighbor and the kids friends loved. I often froze the fruit and then when I had time I made the fruit rolls. This rescued mark down fruit and fruit that was getting over ripe 😊 I just discovered your site and am enjoying your enthusiasm, positive attitude. My mom would cook us a potato soup when I was a kiddo. she got it from her mom who had 6 kids and had to stretch every thing. It has potatoes, dry elbow pasta, you can use either cooked bacon or ham or leave it out, milk, butter, salt and pepper. you boil your potatoes and pasta then add all together in a pot. I add soup base or dry broth to help add some flavor. I like to use chicken soup base dry mix. It sounds strange but it is super good and helps feed a crowd. not good for the figure but good for the tummy.

I also wanted to say that anyone giving you grief or trying to shame you for going to a food bank is clearly someone out of touch with the reality working class American families are facing at the moment. Not to mention the disgusting amount of edible food that is just thrown away in this country that could be donated. Perhaps they grew up in an America where a family could thrive on 1 income and grow their wealth by purchasing land/homes that are not even comparable to the current housing market. My fiance and I are currently saving for a wedding & eventually a home, so your tips for saving and limiting food waste have been so very helpful. Thank you!

You can try grinding the Kamut up and using it to make bread. Add it with any other flour you own. You can also add it to soups and stews that require a long time to cook.
Love your channel, so glad you and your family can benefit from your local food bank. Years ago I had to go to my local food bank, but thank goodness my situation has improved greatly. I myself now donate fresh eggs and Venison during hunting season at a soup kitchen many go to for a hot meal, it's at church in my area. It was always the same food items when I went. Mostly canned goods. Tomato sauce, canned green beans, peanut butter, brown rice, box of spaghetti noodles and canned pasta and canned soups. All the boxes were the same.
I like to empty my dehydrator onto wax paper in a cookie try. Much easier to then pour into the jars and blender.

At these food banks are most of the things ready to expire?Where does the food come from is it grocery stores? I went once and they gave me a bag of very freezer burnt chicken and random stuff my kids wouldn’t eat like juice boxes and fruit cups. There 15 yr old growing boys.I’m sure there all different and maybe I should try again because I can barely keep up with feeding them it’s constant.I’m surprised you don’t have a lettuce spinner for drying. You said you don’t have a grill, not even a George Forman indoor grill? I have a large one I don’t use, wish you weren’t a million miles away I would ship it to you and a spinner I have 3 of them lol.I love tag sales😅

Our pantry’s food comes from NTF ( I’m in Dallas Tx) and they don’t give out any kind of meat or milk, even though I know for a fact they have it at warehouse, they only give out mostly produce that’s already rotten, they suck!! I really think they keep all the good stuff for themselves 😢

One lady I dealt with was critical of anyone who had a car they were making payments for. I guess she felt you should let the car go back and use that money for food. Of course for lots of people not having a car would make it difficult to work, etc. We live 12 miles outside of town. No public transportation where we are living.
Yes I agree with you on that. People have told me to sell my mixer to pay for food. That just leads to me buying more processed, ready to eat foods (which are more expensive and not as healthy) because now I can't make food at home because I sold my mixer for half it's worth. No thanks.

I love my dehydrator; right now I’m doing canned beans that were dated 2021. I’ll make an instant dry meal in a jar, probably taco soup. I don’t usually do potatoes because they’re kinda finicky and can turn dark. The main tips I’d give are experiment with a small batch first and don’t rush through prep - soak a few times, preferably before and after a short blanch
Sorry I'm so chatty.. But don't throw the leek roots away. You can plant them in the garden and grow more leeks. You can also do that with green onions.

Yumma mumma, great dinner, shame about the pineapple, they are my favourite. If the chickens have not eaten the top yet plant it. Google how, super easy but about a 2/3 year yield just for one, I have one growing now lol, still worth the wait. I saw a great way to slice pineapple in 8ths with out taking the skin off first and when you do edge and core it you get more fruit and perfect cubes ❤❤❤❤❤ great video! 🤤

Hello Ma’am! I’m Jen. New to your channel today. Very fun content! I read many comments and your responses. “All I do is cook” is what you said in one. Hahahaha. NOT! You are fun, thrifty, and full of information. I loved the video and subscribed. Somewhere in the comments someone may have said this about leaks but I didn’t read the over 200. But yea! All the comments help a channel grow! Anyway, after you chop the leaks toss them in a big bowl of water and swish them all around. Mostly the leaks float and the grit sinks! Then just spider or pick em out! I eat leaks a couple times a week and that seems to be easiest! I have never ground up my dried leaks but I am now! Thanks for doing this. 💛💛

I invested in a food dehydrator, All American pressure canner, sturdy pots and pans, etc. They were not the cheapest, but they will LAST. Next, I'm going to save up for stainless steel cookie sheets.

I use my pineapple cores! You can use your high powered blender and add to smoothies or fruit leathers. I also flavor/infuse homemade kombucha with them or you can add it to water to infuse

Potato soup
10lbs potatoes
Peel and dice...put them on to boil
2 large onions and a celery...diced
2 sticks of butter...sautee until lightly browned
Add a cup of flour...add salt and pepper
Once mixed well...add however much milk you desire to make a gravy
.....mix mix mix until it thickens.
Add cheese or velveeta to the pot.
This is so good😁
The above is for a large group...one could easily halve it.

I have cubed potatoes on the dehydrator as I speak..did there 5 gallon buckets of slices already now I'm on the second 5 gallon bucket of cubes also did hasbrowns. All you have to do is blanch your potato slices or cubes I do them fo 1 to r 2 minutes just depends you dont want them to turn to much you have to blanch them first though or they will turn dark my dehydrator I do them at 135 for between 18 and 24 hours until they are crisp. Them I store them in a bucket with a mylar bag and oxygen obsorber. I also keep some in mason jars
I have 100s of jars on the homestead use them for canning and storing food. Glad you get the word out to pet who do need to go to the food bank people shouldn't judge one another there's to much of that.take good care tell you kids Happy Halloween and stay safe.

I have not dehydrated potatoes yet but I want to. U have to blanch them before ot I heard thy will turn black
You do need to blanch potatoes before dehydrating or you can use the frozen diced potatoes as they are already been blanched

I made a big pot of cubed potatoes and diced onions, dumped the beef in and 4 in my family destroyed it! So Good! Pork is good that way too

You can dehydratemadhe potatoes and make.potato.flakes for soup mashed potatoes thickener also slices for casseroles and sugar graten potatoes. Chunks for soups ect
Yes you can dehydrate potatoes. We do it with skin on. Just slice it as thin as you want. Then judt pop them in and dehydrate!! They turn out like the box augratin taters.
I do my potatoes in slices for scallop potatoes or small chunks for hashbrowns.
The important part is to blanch till heated through.
I don't cool in cold water, just spread on the trays.

One of the things I do when I crockpot cook is use a crockpot liner if I know the meat is going to produce a lot of nice broth. I then lift it all out of the crockpot, take it to the sink, get a quart jar, cut the corner off, and let the juice drain into the quart jar with all the onions and bell peppers in it. I then let it cool in the fridge over night, remove the grease off the top and use it in preparing rice, soup from the left over meat, mashed potatoes, and anything else I can put it in. It saves on clean up, easy to transfer to a jar, and makes good flavor for another day.

One of our neighbors left 35 pounds of green tomatos at the mailboxes and i had 20 pound of green tomatos in my garden, nobody was taking the tomatos so i brought them all home. We just finished processing them. We made pickled tomatos, verde salsa and freeze dried green tomato chips with Tajin on them
Fantastic!! Good snag on the tomatoes!! I'll have to try the freeze dried chips when I get my freeze dryer! Hopefully soon!
@@mamabairds i have the large Harvest Right, i highly reccommend the large, as the machine gets smaller so do the trays, i currently have 5 trays running in the machine and 5 in the freezer, it was all veggies that were going to go bad, broccoli, carrots, onions, celery, cilantro and a half gallon jar of homemade baked beans 😀

You can make lefsa , pergois , potato bread , and dehydrate the potatoes, can them. Make twice baked potatoes.
Potatoes can be dehydrated. I have found that you need to blanch them first to remove some of the starch or they will turn gray when dehydrated. They are still edible but not very nice to look at. When blanched, they dehydrate a white like fresh potatoes.
