There is 2 style of nasi dagang: 1. Kelantanese style : Brownish rice, with sweeter curry 2. Terengganu style : White rice, almost like japanese rice texture with herbally taste from ginger and fenugreek accompanied with curry(commonly Tuna) The one u had is, Kelantanese style 😊

Nasi dagang is always served with fish and fresh veg cuts which may look like pickle. Unlike nasi kerabu which is swrved with more variety of side dishes e.g meat or fish. I guess by now u know tat these dishes r from east coast of penisular, namely Terengganu & Kelantan states. Glad u guys like the dishes so much.
A little bit about that nasi dagang. It’s reddish from mixing in some whole grain red glutinous rice. That gives it a nuttiness and slight sticky texture. IMO that stickiness brings it closer to medium and short grain rice commonly used in Japan. The tuna gives a lot of flavor to the sauce. In some ways not that different from use of bonito in dashi. So the foundation of umami from tuna is there.

Kelantan rice use mixture of different rice which makes the reddish colour Terengganu rice is normal white colour rice mixed with fenugreek seeds. Being close to the sea, Kelantan is known for Budu (anchovy sauce) while Terengganu is known for for Keropok Lekor (fish sausage/crackers) among others. You can also find unique dish such as Ketupat Sotong during squid season - sticky rice stuffed inside squid. Kelantan version is sweet, Terengganu version is savoury
