I wouldn't have found you without Greg's Kitchen directing me here and so glad he did. This is one of my favorite casseroles so far and let me comment on something that has absolutely nothing to do with the recipe, but I appreciated how you scraped the tomatoes from the cutting board with the back of your blade instead of the sharp side. I see so many people do that and it dulls your knives. Thanks for sharing.

Hi LeAnn and hubby! I have a pound of grass fed organic hamburger meat defrosted in the fridge and was wondering what I was going to make with it. At first since it’s just me, I thought about a hamburger since I haven’t had one in a longtime. I’m going to see if I have all the ingredients to make this instead, I’m pretty sure I do. I think I’m going to cut this recipe in half and make some sloppy joes to put in the freezer for another day. I don’t mind leftovers, just don’t want to eat the same thing for a week, lol. I’ve been wanting a pot of pinto beans and cornbread with coleslaw or fried okra and chow-chow. I was raised on that and I love it. I’m just an ole southern girl at heart I guess, lol. You husband seems to be such a gentle soul, just what I feel. I hope y’all have a blessed day and thank you for all you do, your such an inspiration ❤️

yes I always cut my casserole recipes in 1/2 too because we are only 2 in our household now. Were well into our seventies. lol I still love cooking though.
