Okay now I'm being rlly honest but I really LOVE UR RECIPES AND VIDEOS. Everything that I've tried frm bigger bolder baking has NEVER gone wrong ... This is my no. One spot for baking recipes
Honestly, what can’t you make with the help of Gemma? Now I’m making everything homemade from frostings to homemade butters and sour creams to organic extracts and colourings! My dad isn’t a big fan of prepackaged products from the store so we make a lot of stuff homemade in my household. We are currently making everything we can homemade. One of my favourites is homemade pasta with homeground flour. Thanks to this series I can make anything homemade. Thanks Gemma!
Delighted you're enjoying my videos, Wendy. It's always great to know where your ingredients, and really all of your food, is coming from. And why not make it at home? Thank you for being part of the community! :)
I just made some of this frosting for a surprise for Mother's Day tomorrow, and IT'S REALLY YUMMY!!!!!!!!!!!!! Amazing as always Gemma, keep up the good work!
Hi Jemma i love baking and u r my inspiration really your recipes are very wonderfull and easy to make this is one of my best frosting and i follow all of your recipes thank you Jemma love from my side and keep smiling
I will give your recipe a try on my upcoming red velvet cake request. I am not a fan of the taste or the texture of cream cheese frosting in general, but that's what goes on both red velvet and carrot cake for most people. I have one friend, who thankfully, prefers 7 minute frosting on red velvet.
Thanks for the reminders to make things work better. I need to work on the waiting. I never seem to have the time to wait for the frosting to stiffen up. But I agree that is what works and tastes the best especially if you use good butter like Kerrygold. BTW - I use salted butter because salt adds the (ying) flavor to the (yang) sweetness of the sugar. Using the butter to add the salt, instead of adding a pinch, prevents me from accidentally over salting and ensures even distribution.
Looks divine Gemma! Thank you for showing us in detail. I know you had a recipe. I think my mistake before was not having room temp Cream Cheese ( I was rushing 🙄) . Also, I think I fear mixing the butter & Cream Cheese too long. I am ready to give it another go! ❤☘
Wow... Gemma in this video you are so beauty with make up natural.. Thanks gemma please upload again video all about basic recipe... Like making mozarella chesse, atc. Because I like it a lot
Thank you, that is very kind. All of the recipes are here (www.biggerbolderbaking.com/bold-baking-basics/) and I will get to the mozarella eventually! Thank you for that suggestion, and for being here with us :)
Hello Gemma ❤️ may i ask if I'd like to flavour this frosting like adding the lotus biscoff spread,, will it works? Will it be runny or not spreadable??
You can try it this way: take a small portion of cream cheese frosting from this recipe, mix it well with lotus biscoff spread ( 1-2 Tbsp ) then add the mixture back into the main cream cheese frosting. It should work well! Hope this is of help!
Hey.. i love ur videos n ur basic recipes, but i was wondering do u know anything about how to make a homemade heavy cream or anything that can b used to substitute it ?
I’m guessing the grainy is coming form the cream cheese and not actually the sugar. Make sure that the cream cheese is smooth. Also the sugar you use matters. Powdered sugar is important to this recipe, and to any frosting recipe. It generally will dissolve in the butter/milk/cheese mix when it is beaten. So, either you did not beat it long enough, or the sugar was not the correct type. Icing sugar/powdered sugar is what you use for this recipe.
If you mean a homemade one, then yes, you can use it in this recipe. Powdered sugar is also known as icing or confectioner’s sugar, which is a fine powder sugar that contains cornstarch. Hope this helps.
Hi Bharat. I'm sorry but you can't make cream cheese frosting using a blender. If you do not have an electric mixer, you can use a whisk to whip the frosting. That will take a lot of arm strength, but it is possible to make this manually.
Hi, Anagha! I presume you mean the spreadable one from a tub. It has more water content so the frosting will be very soft. You can make cream cheese at home and use it here : www.biggerbolderbaking.com/how-to-make-cream-cheese/ .
Yes, I always adore slated butter because slat brings out other flavors. Here's my article you may like: www.biggerbolderbaking.com/salted-unsalted-butter-baking/
I’ve gotten different answers from different sources. What’s your opinion… can a cake/cupcakes frosted with this cream cheese frosting be left out on the counter for a couple of days or do they need to be refrigerated? We don’t eat a whole cake or 24 cupcakes in one sitting. Will cream cheese frosting go bad on the counter?
Can we use the cream cheese that you have made in bold basics??? and what is the difference between cottage cheese and cream cheese??? If anyone knows so Plz reply me!!
Hello Gemma! Hope you are doing well!! Thank you so much for this wonderful recipe. Could it be possible to make one with whipping cream too? Like the cream cheese frosting with cream rather than butter. Would love it if you make a video n recipe for it.
Hi Diane! You could find my recipe with the measurements on my website ;) I pulled it up just for you www.biggerbolderbaking.com/best-ever-cream-cheese-frosting/
This is my father's account . Actually whenever I add icing sugar to the frostings ,the sugar is never fully dissolved there are sugar granules in it left . So what should I do ? According to you, what mistake I'm making ?
Hi Sanjay. We usually launch a video for a new recipe on Thursdays. But from time to time, we release one for an old recipe that didn’t use to include a video mainly due to popular demand.
Do you mean best ever way to get diabetes? Over 500g sugar is way too much. This would be ok as a treat in a restaurant, not for a home cooking, where you eat the whole batch. I know that the sugar gives it the needed constancy, but could we have a substitute? You know for those who actually care about health.

Hello Gemma, I tried the recipe but it turns out grainy, anyway around it? Thanks
I’m guessing the grainy is coming form the cream cheese and not actually the sugar. Make sure that the cream cheese is smooth. Also the sugar you use matters. Can I use homemade cream cheese for this recipe?
You sure can!
Hey Gemma can we use the home made cream cheese (the recipe u gave) for this frosting??
You sure can!
Can we use a powder sugar substitute? A non- sugar sweetener.
If you mean a homemade one, then yes, you can use it in this recipe. Powdered sugar is also known as icing or confectioner’s sugar, which is a fine powder sugar that contains cornstarch. Hope this helps.
I love this icing. I just made a carrott cake on my youtube channel the combination is amazing 👏 Love and hugs from Pennsylvania Sincerly Melody
Delighted to hear that! Thanks for watching!
Can I use this a doughnut filling
Yes, absolutely. Go ahead and give it a go.
Can I use condensed milk instead of sugar ?
You might get a runny frosting with that. Icing sugar is best for this, I'm afraid.
@@biggerbolderbaking okay thankyou 😊
Can I mix it in mixer jar like electric one I Dont have hand mixer
Hi Bharat. I'm sorry but you can't make cream cheese frosting using a blender. If you do not have an electric mixer, you can use a whisk to whip the frosting. That will take a lot of arm strength, but it is possible to make this manually.
Hi big fan of you. Can I use Philadelphia cream cheese for making this frosting?
Hi, Anagha! I presume you mean the spreadable one from a tub. It has more water content so the frosting will be very soft.

It’s dairy, hence it needs to be refrigerated otherwise, it will spoil. Hope this helps.

What kind of cream cheese
The one in blocks would work best here. Not the whipped kind in tubs
@@biggerbolderbaking So not like Philadelphia, what about ricotta or marscaponi?

I’ll look into it, Jameela. Thanks for watching.
@@biggerbolderbaking thank you so much!😊
You should do a ermine frosting (or cooked flour frosting) because that was the original red velvet frosting.
Great idea! I will add it to my list.
I never add butter. I just use cream cheese, powder sugar and vanilla. Cream cheese frosting is best for cinnamon rolls 😋
I hope you’ll try my recipe for it. Thanks for watching.
Gemma, is there a substitute to the harmful commercial cream cheese (guar gum destroys intestinal health)? Can you make creamcheese from farm cream?
Yes, you can make homemade cream cheese. Check my recipe for it here, www.biggerbolderbaking.com/how-to-make-cream-cheese/
