You learn something new every day. In all the years my father made sweet bread I never saw him use coconut water and he always had coconut running through the middle.
GM Friend, It's called being innovative, if you are going to use water, why not use the same water when you break the coconuts to grate and there is coconut in the middle I just choose to add more fruits to mine; everything is optional, nothing is written in stone. I am a bajan first time I see the fruit center. I usually do with coconut and sugar. I made it today your way just had to add my coconut with the fruit for the center. New ways is always welcome. I am visiting Barbados right now but these days you can't get good sweet bread at all.

I have not watched your recipe yet but read some of the comments. Glad to see that many people referred to the sweetened spiced coconut mixture running down the center because that is a basic aspect of traditional bajan coconut bread.
Definitely another method for me to try... i usually put a coconut mixture in the centre , ive never tried fruit but there is a first time for everything. Great video!

Hi Paulette, nine months ago I said that I am going to try this method, well I tried it on October 23rd. the bread came out tasting really good, nice texture and golden brown in color, it is the best coconut bread recipe, the entire family loved it, kudos to you, keep up the good works!!!!!

Thanks Paulette for this sweet bread recipe. I baked it and now having a piece with some coffee as I type. It looks and tastes delicious...I will be baking this again... my only variation was that I swapped around the amount of butter and shortening..because that is how my mom and grand ma did it..and I used plant based milk substitute ( coconut flavour) instead of milk, which worked well I think. Love your videos.

i was saying the same thing,what part barbados she is from that swwetbread is done without coconut in the middle, and i never known bajans to put coconut water in sweetbread, but everybody got them own way, looks good,

Nice recipe. One thing though, was the small portion of coconut and fruit taken out of the larger amount or was it an addition. Thank you. The bread looks very moist and tender.

Hello Haynes, sorry for the late response, I don't think that the texture will be the same and I will advise if you decided to use the butter, it must be unsalted but here is a suggestion, you can try the organic coconut oil, hope that help. Please tell me what I am doing wrong? The centre of my loaves is not crumbly. It is mushy like a flour dumpling. Could it be the coconut mix in the centre?
Ohh dear, I have no idea what your doing wrong, maybe you didn't knead it enough or you put too much coconut in the center, you have to make sure it cooks on medium heat to cook through. I am in America and I've seen a few Bajan recipes that call for spice but I have no idea what that spice is. Is it the same thing as allspice? Or is it pudding spice? Hi!!! Okay it is not the pumpkin spice that we get here in the U S, I got it in Barbados; it is just regular spice. If you can get it from there or have someone get it for you that would be great; just make sure to get enough that will last you a while until you can get it again. Thanks Paulette for this sweet bread recipe. I baked it and now having a piece with some coffee as I type. It looks and tastes delicious...I will be baking this again... my only variation was that I swapped around the amount of butter and shortening..because that is how my mom and grand ma did it..and I used plant based milk substitute ( coconut flavour) instead of milk, which worked well I think. Love your videos.

i was saying the same thing,what part barbados she is from that swwetbread is done without coconut in the middle, and i never known bajans to put coconut water in sweetbread, but everybody got them own way, looks good,

Nice recipe. One thing though, was the small portion of coconut and fruit taken out of the larger amount or was it an addition. Thank you. The bread looks very moist and tender.

Hello Joanna, so sorry I am now seeing your comment and I am happy that you have tried it; so sorry to hear it came out a little soft, it all depends on the flour you are using, the flour do vary depends on where you live. Can butter be used instead of shortening ...if so what would be the difference in texture?
Hello Haynes, sorry for the late response, I don't think that the texture will be the same and I will advise if you decided to use the butter, it must be unsalted but here is a suggestion, you can try the organic coconut oil, hope that help. Please tell me what I am doing wrong? The centre of my loaves is not crumbly. It is mushy like a flour dumpling. Could it be the coconut mix in the centre?
Ohh dear, I have no idea what your doing wrong, maybe you didn't knead it enough or you put too much coconut in the center, you have to make sure it cooks on medium heat to cook through. 1/4 CUP GOLDEN RAISINS
1/4 CUP CURRANTS
1/4 CUP GREEN AND RED GLAZED CHERRIES ( CUT IN QUARTERS)
1/4 CUP MIX PEEL OR CANDIED FRUIT
1 1/2 TBSPNS VANILLA EXTRACT
1 TSPN SPICE
1 TSPN GRATED NUTMEG
PREP AHEAD
COCONUT MIX - (OPTIONAL)
IN A SMALL BOWL MIX TOGETHER ALL THE INGREDIENTS AND SET ASIDE IN REFRIGERATOR
1/2 CUP OF GRATED COCONUT
1/3 CUP BROWN SUGAR
1/8 CUP GOLDEN RAISINS (CHOP ROUGHLY)
1/8 CUP RED AND GREEN GLAZE CHERRIES (CHOPPED)
1/8 CUP CURRANTS
1/8 CUP MIX PEEL OR CANDIED FRUIT
1 TSPN VANILLA EXTRACT
PINCH SPICE
PINCH NUTMEG
FOR THE BREAD MIX
***PLACE ALL THE FRUITS IN A SMALL BOWL AND SET ASIDE***
***GREASE BAKING PANS***
WHEN MIXTURE IS DONE AND READY FOR THE OVEN DUST THE PAN WITH A LITTLE FLOUR, SHAKE TO DISTRIBUTE EVENLY AND DISCARD ANY EXCESS FLOUR.
PREHEAT OVEN AT 325º
DIRECTIONS
IN A SEPARATE BOWL SIEVE THE FLOUR AND BAKING POWDER AND SET ASIDE
IN A LARGE MIXING BOWL, ADD THE GRATED COCONUT, THE SUGAR, SPICE, NUTMEG AND MIX WITH A WOODEN SPOON. PLACE THE SHORTENING AND MARGARINE IN A SEPARATE BOWL AND MELT IN THE MICROWAVE THEN ADD TO THE MIXTURE, ADD THE MILK, COCONUT WATER, VANILLA EXTRACT AND MIX WELL. ADD THE FLOUR AND THE FRUITS AND MIX WELL.
TURN THE MIXTURE OUT ONTO A FLOURED SURFACE AND KNEAD FOR APPROXIMATELY 5 MINUTES, WHEN DONE TAKE YOUR DESIRED AMOUNT OF MIXTURE FOR THE BAKING PANS, FLATTEN OUT ON THE SURFACE AND ADD ABOUT 1-2 TABLESPOONS OF THE COCONUT MIX ACROSS IN THE MIDDLE AND FOLD OVER AND SHAPE INTO A LOAF; THEN PLACE IN BAKING PAN, PRESS DOWN TO SHAPE. TAKE A SERRATED KNIFE AND SCORE THE TOP TO MAKE PATTERN AND GARNISH WITH A COUPLE OF GLAZE CHERRIES AND CONTINUE WITH THE REMAINING DOUGH MIXTURE.
BAKE FOR APPROXIMATELY 90 MINUTES OR UNTIL GOLDEN BROWN AND TOOTHPICK COME OUT CLEAN.
IN A SMALL BOWL, MIX ABOUT 1 TABLESPOON BROWN SUGAR AND 2-3 TABLESPOONS OF WATER (SUGAR WATER) AND STIR WITH PASTRY BRUSH AND SET ASIDE.
CHECK THE BREAD APPROXIMATELY 50-55 MINUTES INTO BAKING, IF THE BREAD IS GETTING DRY QUICKLY, TAKE THE PASTRY BRUSH AND DIP INTO THE SUGAR WATER AND LIGHTLY BRUSH OVER THE BREADS AND IF YOU THINK THE OVEN IS TOO HIGH TURN IT DOWN TO 300º .
TEST AGAIN IN A FEW MINUTES; IF TOOTHPICK COMES OUT CLEAN, THE BREAD IS DONE.

5 CUPS AP FLOUR + 1 CUP FOR KNEADING (SET ASIDE)
3 CUPS OF GRATED COCONUT
3/4 CUP BROWN SUGAR
1 1/8 CUP EVAPORATED MILK (WARM) - (IF YOU HAVE COCONUT WATER YOU CAN USE LIKE A 1/2 CUP AND REMAINING MILK) OPTIONAL
3 TBSPNS BP
1/2 TSPN SPICE
1/2 TSPN FRESHLY GRATED NUTMEG
1 CUP ORGANIC COCONUT OIL (MELTED)
1 1/2 TBSPNS VANILLA EXTRACT
1/2 CUP GOLDEN RAISINS
1/2 CUP GLAZE CHERRIES (QUARTERED)
1/4 CUP MIXED PEEL
COCONUT FOR THE CENTER (OPTIONAL)
MIX TO WELL COMBINE AND SET TO THE SIDE FOR LATER
1 CUP GRATED COCONUT
2 TBSPNS BROWN SUGAR (OR TO TASTE )
1 TSPN VANILLA EXTRACT
1/4 TSPN SPICE
1/4 TSPN FRESHLY GRATED NUTMEG
DIRECTIONS
IN A MEDIUM BOWL, SIFT FLOUR AND BAKING POWDER THEN ADD THE SPICES AND MIX WITH WIRE WHISK TO WELL COMBINED AND SET ASIDE.
IN A SEPARATE LARGE MIXING BOWL, ADD THE SUGAR, MELTED COCONUT OIL, WARM MILK, VANILLA EXTRACT AND GRATED COCONUT AND MIX TO WELL COMBINED.
ADD THE DRY INGREDIENTS IN HALF OR THIRDS AND MIX WELL TO COMBINED.
AFTER ADDING THE LAST OFTHE DRY INGREDIENTS, ADD THE FRUITS AND MIX TO WELL COMBINED.
TURNED OUT ONTO A CLEAN FLOURED WORK SURFACE AND KNEAD FOR APPROXIMATELY 5 MINUTES WITH ADDITIONAL FLOUR THAT WAS SET ASIDE.
DIVIDE THE DOUGH AND SHAPE INTO LOAFS AND PLACE IN PREPARED LOAF PANS.
BAKE BETWEEN 325º AND 350º FOR APPROXIMATELY 45-60 MINUTES OR WOODEN SKEWER COMES OUT CLEAN AND WELL COOKED THROUGH.

Hello there. This looks good and I would like to try it. Please tell me what is the "spice" that you listed in the ingredients? I am in America and I've seen a few Bajan recipes that call for spice but I have no idea what that spice is. Is it the same thing as allspice? Or is it pudding spice? Or is it something else completely?
Hi!!! Okay it is not the pumpkin spice that we get here in the U S, I got it in Barbados; it is just regular spice. If you can get it from there or have someone get it for you that would be great; just make sure to get enough that will last you a while until you can get it again. Use cinnamon it’s just darker in colour and has more flavour in my opinion
I'm not sure how you got that texture with 6 cups of plain or regular flour. After adding all ingredients, my texture was very loose and wet.

Hi Katy, I would love to help you but unfortunately I am currently babysitting my 3 Gran babies indefinitely plus I have other commitments but I would start with 2 cups of flour with about 1 tspn baking powder and everything else to taste or break down the recipe in thirds. Maybe when I have more time on my hands I will make a small batch for beginners. Unfortunately I don't know how to cook in small portions. Lol
