Great! But I loved the one that you made with the aioli more 💕 I appreciate your aesthetic sense which is reflected in every corner of the kitchen..the neat spice rack, the bright yellow mortar and even the kitchen cloth with the floral embroidery is so pretty!
Have made your PBS both ways….this one is more typical of Madrid….but your other recipe with fresh pepper and aioli is my fav….reminds me of a place I had similar in Malaga. Thanks for both versions.

I never realised patatas bravas do not contain garlic! I always assumed that was part of the sauce. You learn something new every day. They look delicious 😻

I was in San Sebastian last year.... the food was brilliant - but one item of the Tapas bar that was (sometimes) a treat was Potatas Bravas. Fact is, all are not created equal. This recipe is great but one thing missing is a squirt of garlic aoli. This softens the hot side of things and adds a bit of color. Other than that.... this is as near to my favorite tapas bar in San Sebastian that we ate at (twice!)
Very nice video - thumbs up on my end! @2:30, you heated the olive oil, and then you transferred this to a bowl where you added all the other ingredients. Then you you transferred back to the sauce pan. Why couldn't you have just added everything to the sauce pan? That way, you would have had fewer dishes to wash. Also, to make the sauce, can you use potato flour or All-Purpose flour instead of corn flour? Thanks in advance!
You wanna remove the olive oil after 3 minutes so it does not heat anymore and lose its flavor, this just the way I have been making it all my life, but surely you can just keep it in the pan :) yes you can substitute the 1 tbsp cornstarch for 2 tbsp all-purpose flour, much love

In the Eastern part of Spain, Valencia....Barcelona, they do add garlic and aioli, but not in Madrid, Thanks for the comment :) much love

Yeah outside of Madrid most all bravas are served with a garlic aioli, this is the way they are served in Madrid :) much love
