    When you put that pinch of salt in your pot I just put my salt back in my cabinet bc I was convinced that you put enough salt for my pot as well. I panicked immediately lol. I reevaluated my whole life just now. Hilarious! Blessings

    how I cook my coconut rice:
    first I wash the rice and allow the coconut milk to com to boil,in the pot I have a mixture of seasonings,escellion,thyme,green pepper, salt,a small amount of sugar(optional) and butter,then I poor the rice into the boiling mixture,leave to cook until water is completely dried out

    thank you for this!! i am from central america and on the carbibean coast of my country we cook the same. I dont measure. my family always says..... throw this in and a pinch of that, etc. I just eyeball stuff and taste all the time. lol. sometimes i dont wash rice, sometimes i do. depends on my mood and with the help of the ancestors in the kitchen. I am smiling because you make this so enjoyable to watch! gracias!!!

    always put the liquid over the rice and not the other way around. The liquid is supposed to just cover the rice that way you know that you are not using too much liquid

    In Malaysia, we call this the lite version of nasi lemak. Normal nasi lemak is cooked with thick coconut milk.

    Thank you for the recipe. I had to change the measurements. For 2 cups of rice, 21/2 of water, and 1 cup of coconut milk. Initially, I followed your measurements, but the rice was not cooked.

    Chef Ricardo kills me with his "pinch" and his "medium size heat" and "pinch of butter." Also, I like how he said it is 2 cups of water then he said maybe it is 1-1/2 cups. It would really be helpful if he had someone helping him with his videos. Maybe he could just throw out what he needs and that person could measure? Anyway, I keep coming back to his recipes so there is something here to learn. Last thing, I make coconut rice too, but I cannot make it without sauteed ginger and garlic and fresh squeezed coconut milk....that there is the trick to flavourful rice.

    CHEF, Africans make this same rice such as NIGERIANS. I was shocked and it was the bomb. I never had plain coconut white rice and my whole family is Jamaican. Mi needfi goh ah country😂. The many foods im finding we eat is so surprsing such as Bamboo. Nice recipe👍🏽

    most important part of cooking rice is the beginning level of liquid when it first starts to boil. Too much water and even if it evaportates and you cover it for cooking the rest of the of the way it will be too mushy by the time it's done. To little liquid means you have to keep lifting lid to check rice and it cooks unevenly. Also it much easier to cook less rice in a larger wider saucepan, (not flat saute' pan) so the bottom rice isnt pudding, than a smaller, taller pot.

    Looks great, but remember that it's about 400 calories in a cup of coconut milk.
    Eat some of that rice an hour before a Triathlon!
