Really a good video..! I've got to make some honey syrup and get wifey into the cocktail fold! I'm with you, the Pegu sounded hinky and 8 dashes of bitters in the TJ Smash..?! The silly Moscow Mule has taught me the beauty of ginger beer. A great video, one to definitely save..!
Turned out excellent, and of course super easy to make. Delicious, and has a lovely pale/medium peach color from the Angostura bitters. Used Citadelle Gin, which comes from the same estate that does all the Pierre Ferrand line.
Could you do a video (maybe series) based around a particular random liqueur because we all have some random liqueur we bought for one cocktail and knowing how to use it better would be sweet. An example would be this lovely bottle of Galliano which mixes amazingly well with root beer/cream soda and spiced rum... but beyond that I would love some other ideas.
Pegu club is about my favorite cocktail. I even have replica Pegu Club glasses to serve it in. Was going to say 2 dashes angostura, but you hit the color spot on. And that's a splendid glass too. Incidentally for Pegu Club : curaçao > Gran Marinier > Cointreau > tripel sec. It's the peel you want.
Love watching you make drinks Steve! Your videos are educational, entertaining, easy to watch and perfectly simple - Very balanced just like a great cocktail! Idea - How about a focus on an ingredient instead of the spirit. Example - ginger syrup. how many different cocktails can we make using that? This way, when we make a bottle of syrup, we have a variety of options that will allow us to use it up before it goes bad.

Thanks for that episode, I believe it would be useful for a lot of people around the world. Personally, I'm packed on alcohol myself since I'm a cocktail enthusiast (I prefer that term to alcoholic), but even then, never heard of outrigger before. Gotta try that one, sound easy and delicious!
Big fan! You do good work, sir. With all due respect, might I suggest double straining (Hawthorne + fine mesh) your egg white cocktails? I've had many a sour with stray shell or that little membrane thing. I also find it does something cool to the texture of foam. Keep up the good work!
The honey bee is amazing. Much better than a mai tai and so much more simple. I tried it with lime too and I think I like the lime variant better. Anyway, thanks for sharing. This one is in my simple cocktail arsenal for sure.

Made the Honey Bee with Cruzan Single Barrel, and I think it’s a new favorite. I made a gold rush, yesterday, and feel like the bourbon overtook the honey. Honey comes out great in the Honey Bee, though.

God, that thing about the rosemary is so true. Every house I lived in in AU had rosemary bushes. Easy to grow, fragrant and useful I suppose.
