Amo carciofi! Just the best! I think I inherited the gene that prevents black hands. Maybe it is a feminine affliction? I do not know all the recipes for cooking artichokes, but from the ones I know my favorite is a torta di Pasqua from Genova. I die and resurrect every time I eat it - and it is getting close to time for the annual event! I wonder if it was on the menu for the last supper…. Thanks for repeating this show. Always a pleasure to see le due sorelle! You have given me an idea! Americans are famous for using leftovers to create what is called a Resurrection Pie. I am thinking of creating one made from Easter leftovers: lamb, carciofi, and whatever else there is suspended in a custard…

Two other things that this video brings to mind that everyone needs to experience…. Sunflower fields are magical but not nearly as beautiful as a field of blooming artichokes - one of the most beautiful blue flowers ever! Wish I knew how to send you pictures. The other thing we all need to experience is the aroma of a field of wild mint on a humid summer evening. Italy is just full of natural wonders that take your breath away - the simple things in life that cost nothing!

This was such a WOW moment for me.... she was soo out of her comfort zone and I just took advantage of it! Grazie! Yes, older artichokes tend to have the hairy part inside. However it also depends on some varies. Some lack them totally while other don't.!

I made these yesterday! Because I live in the USA our artichokes are not the tender ones in Italy. Do you have any tips on how to get them tender? The flavor was amazing and they looked perfect!
Bravisssssima!!!!!! No, unfortunately we do not. Try to remove as much of the outer leaves possible when you clean them. Here is video mom made on this : ruclips.net/video/sA_W3tE-aZ8/видео.html . But great that you tried them and soo happy the flavor was amazing. They are super!!

Hello!!! These kinds or artichokes, in season and super fresh did not have the fluffy choke in the center. They have that characteristic and are perfect for Roman-style artichokes!

Ahahahahaaaa!!! Since the cookbooks we use are in Italian only, we like to write down the procedures and ingredients in English so we have them at hand when filming. :)
