What would be your recommendation, what could be better to use for fondant cakes,? Chocolate ganache or buttercream?
I live in Ca. USA. So the weather is hot in between june and october and I don't not wich one will be a best for fondant!!😱😱🤔🤔
I don't have any experience with ganache under fondant - but I know that ganache is more stable in hot weather. I prefer buttercream, because of the taste & my clients don't always want chocolate ;) Whenever it's hot here in The Netherlands, I change my fondant to Massa Ticino Tropic. This works fantastic with buttercream - but you'll still have to work fast, while the cake is out of the fridge if you don't have airconditioning ;)
