    Mr Kirkwood is the person who taught me to bake. Haven’t bought shop bread for over a year. No need to because making it at home is so easy. If I can do it, anyone can. Believe me on that.

    Love this. Mom made breads, rolls, etc. when she could as we were growing up. That scent always means "home" to me. I'm no master baker, but even I can make delicious bread, usually from memory of what Mom did. Thanks, Mom; and thank you, sir!

    This recipe couldn’t have come at a more precise time for me because just 3 days ago I picked up this exact Pullman pan .     Hello from Italy. Am busy baking my second attempt at this loaf with a few tweaks. It is so good! I added some brown flour and increased the water slightly.       I like to use many brands of proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is not strong enough for making bread.

      Here's a scaled down version of that recipe to suit your tin S. just follow the same procedure.👍😉❤
      500g / 18oz Bread flour.
      275g / 275mls Water 40°C / 104°F try to measure in grams, avoid mls if poss.
      15g / 1tbls Sunflower oil
      7g / 2tsp Yeast
      8g / 1tsp Salt
      6g / 1tsp Sugar

    I love bread-making, though it's been a while since I've had the time to make a loaf. I prefer to hand-knead the dough. It's a great stress-reliever. My motto has always been "Knead your troubles away"😂. Great recipe Mr Kirkwood!

    I needed to thank a friend for sorting an issue I had with my computer so I decided to make this loaf, yesterday I made one for myself to make sure I wasn't making any mistakes, and I DID ! It overproved and then sunk, it was fine after baking but definately not the right shape, I put the dough for my friend's loaf in the fridge to prove overnight and am now waiting for it to prove in the tin, keeping a VERY close eye on it , here's hoping for a great result to gift to my friend ! 😅

    Thank you for this recipe.... I shall try again, even though my bread always seems to fail. I've never known what I did wrong, but though it tastes lovely, my bread always spreads out and goes flat!

      Too much water, follow the recipes exactly, and you simply cannot go wrong read the following carefully.
      Go through my 4 main bread making rules below, especially 2 and 3.
      1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
      2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast.
      3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
      4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here ruclips.net/video/HWpSbYV96_c/видео.html

    When making the loaf I added 250 grams of cheese to the dough mixture in the mixer, after the 1st. rise rolled out the dough and add more grated cheese 200grams then shaped it and placed it in the Pullman pan. Mmmm the result was delicious. Cheers 🍻 EH 🍁 😊

      Just different ways of making bread Joseph, nothing stopping you adding an egg wash, but the best time to egg wash for this recipe is when you take it out of the oven after the 30, now add the egg wash, then bake commando style for 5 to 8 minutes, depending on what colour you want.

      ? I just add it in and dont mix it with the water like you. Could that make a difference.? I did make a liaf the other day with mixer like you but looked a bit dense in middle but tasted ok when used for a sandwich.     john did every thing as you said only i didn't have sunflower oil used veg oil, the bread rose as yours did put it in oven but after 30 mins bread had collapsed, i used new active yeast which was good am at a loss

    One of the loaves will not last a hot minute in my house, I will explain My husband won't let my Apache Fry bread Cool and drain from The hot grease 😂😂😂

    Wonderful recipe John. Mine didn't rise as much as i expected, about 1.5cm below your recommended height after 2 hours. Would that be an inferior yeast?
    Does taste lovely though.

      We slice first and freeze it then, take the slices out of the freezer we need - they go directly into the toaster ;)
