    Mr Kirkwood is the person who taught me to bake. Haven’t bought shop bread for over a year. No need to because making it at home is so easy. If I can do it, anyone can. Believe me on that.

    Love this. Mom made breads, rolls, etc. when she could as we were growing up. That scent always means "home" to me. I'm no master baker, but even I can make delicious bread, usually from memory of what Mom did. Thanks, Mom; and thank you, sir!

      Here's a scaled down version of that recipe to suit your tin S. just follow the same procedure.👍😉❤
      500g / 18oz Bread flour.
      275g / 275mls Water 40°C / 104°F try to measure in grams, avoid mls if poss.
      15g / 1tbls Sunflower oil
      7g / 2tsp Yeast
      8g / 1tsp Salt
      6g / 1tsp Sugar

    John, I've been meaning to tell you I made your cold dutch oven recipe a few weeks ago. It baked well, but it took me a lot longer to get it to rise (which is probably my cooler kitchen to blame). Tasted great and am looking forward to this one!

    Love this recipe but I add ground flax and wheat germ. Also add rye or whole wheat flour. Sometimes even cracked wheat. But I am around 55-60 grams of oil?Still a great product. Cheers Eh 🍁. 😊

    Thank you for this recipe.... I shall try again, even though my bread always seems to fail. I've never known what I did wrong, but though it tastes lovely, my bread always spreads out and goes flat!

      Too much water, follow the recipes exactly, and you simply cannot go wrong read the following carefully.
      Go through my 4 main bread making rules below, especially 2 and 3.
      1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
      2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast.
      3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
      4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here ruclips.net/video/HWpSbYV96_c/видео.html

      Just different ways of making bread Joseph, nothing stopping you adding an egg wash, but the best time to egg wash for this recipe is when you take it out of the oven after the 30, now add the egg wash, then bake commando style for 5 to 8 minutes, depending on what colour you want.

      ​​Hi Johñ, thanks for that. I use allisons easy bake dried yeast. Should i be using a different one
      ? I just add it in and dont mix it with the water like you. Could that make a difference.? I did make a liaf the other day with mixer like you but looked a bit dense in middle but tasted ok when used for a sandwich.     john did every thing as you said only i didn't have sunflower oil used veg oil, the bread rose as yours did put it in oven but after 30 mins bread had collapsed, i used new active yeast which was good am at a loss

    I would like to make this loaf of bread. I am trying to figure out your measurements to lbs and cups.
    Flour, 6 cups? Water, 1 3/4 cups? Thank you

      Sorry I have no idea what cup measurements are, please go through my 4 main bread making rules below, especially 2 and 3.
      1. Stick to the recipe rigidly, the quantities and ingredients are very important and carefully worked out for successful results.
      2. Use digital SCALES for all of the measurements including weighing the WATER, IN GRAMS, NOT FLUID OUNCES, don't convert to cups or measuring jugs, they are too inaccurate. try to use bottled water if possible. Tap water contains chlorine, and in certain areas it is higher than others, which will weaken or even kill the yeast.
      3. Use proper bread flour with at least 12% protein, check the ingredients list on the side of the flour bag for the protein level, protein may show in grams per serving but just work it out, it needs to be 12g of protein per 100g of flour. Plain or all purpose flour has a lower protein count and is great for pastries, cakes, and biscuits, but is NOT strong enough for making bread.
      4. Very important...Check your yeast is working, BEFORE you start, you can do a yeast test as shown in my sandwich bread video here ruclips.net/video/HWpSbYV96_c/видео.html

      We slice first and freeze it then, take the slices out of the freezer we need - they go directly into the toaster ;)

    What’s the best way to store the bread so it does not go stale?

      You could store it in a plastic bag, or a bread box. But avoid storing in damp, airy conditions, which can speed up moulding. If you're not going to eat the loaf in three days, the best option is to freeze it for later.
