I’m sorry, but Alain Sanderens strikes me as such a stuffy, pretentious chef. 3 Michelin stars or not, l can’t stand someone who would have there cooks or chefs be there to hand them the tools, rather than handle it themselves. I get that restaurant kitchens like this are like dictatorial hierarchies, but lighten up.
I agree with your point in broad generalities. But if you watch closely he gets several tools for himself from nearby, but the only tool which someone hands to him is a what appears to be a thin spatula which they bring to him from somewhere else in the kitchen. Almost like he realized 'crap, I forgot the spatula', "hey can you get me a spatula please" while he was filming a cooking segment instead of going to look for it himself.

That was a ton of sesame oil ... i use like maybe a teaspoon too flavour a whole stir fry its so strong that it easily overwhelms other ingredients

I wish the chefs would get a manicure for making these videos. So unappetizing to see dirty fingernails or tobacco stains.
