- Clark's Oyster Bar in Austin, Texas serves mountains of french fries with their meals. They go through more than 1,200 Kennebec potatoes a week. Because of the way the potatoes are fried, the side dish tastes more like potato chips than fries. Whether you love them or hate them, the fries are sure to spark a conversation.

I live in Austin and I say that these fries are thin, and give the illusion there are a lot. Their burgers are small. So you fill up on fries. The fries are crispy and like shoestring potatoes, but so much more fresh.

Shoestring fries are the worst. It's messy, too small to enjoy n of course it'll look like a lot bcuz u need a whole heap to make it equivalent to a normal serving size. N the portions of the main dishes are actually small in comparison to regular restaurants/diners etc.

@@tadokoropilled Not even close, you couldn't be farther from the truth. The smaller something is the quicker it cooks and gets crispy. Those fries probably go in the fryer for nearly half the time for regular-sized fries and thus they do not absorb as much of the oil.

@@tadokoropilled They probably haven't had them, but it's hard to make small fries soggy. The only way you could do that is if the oil was too cold when you put the fries in, and considering they have an industrial fryer that can hold gallons of hot oil I doubt they would be soggy at all.

madg00mba If your a cooking expert and/or also have common logic, most of the time regular fries are thicker in size so the inside usually comes out raw or mushy, due to it being bigger which takes longer to cook. But if your in a rush (aka restaurants) you don’t get that extra time to cook it or if you aren’t in a rush you may risk over cooking the fry on the outside (no flavor). So smaller & thinner fries cook faster & come out crispy inside out! :)
