As usual you knocked it out of the park. They look amazing. When you bit in the sausage dog the snap of the perfectly made sausage was very loud.
I love how you explain in detail all the steps in your videos. I also love the background music.

Sir Joe...this is probably the best video on sausage making I have ever witnessed...really. I have been making sausage with an Italian buddy of mine for over 10 years. I'm half German, and you Sir have knocked this out of the park. Simple explanation, easy to follow and not complicated. We are doing a batch this coming weekend and are definitely gonna try your recipe and process. We will keep you posted. When we do sausage, we usually make 50-60 lbs. at each event...and we always give it away for free. All we ask for is your opinion. Again Sir...thankyou. Frank, the old dude from NC.

Great tip on loading up water into the casings just before throwing onto the tube! I've been using a little vegetable oil to grease up the tube, but I'll just skip that step and try this out next time. Looks like a great recipe!

I cook it for friends & give some away. It's hard to sell these because it's a little pricey to make so I just give most away to friends, family & my customers.👍

Hi Joe. Thanks for all your sausage videos. And you use the best of ingredients. Can you please start sharing with us the costs related to the ingredients that you choose for your recipes? The brisket (Choice grade?), seasoning ($12/#), high temp cheddar ($30/2#), etc is not cheap. Do you know what your final cost per pound (pre-cooked) was? Thanks.

Yes you can. Just smoke it above 140° and you'll be fine
Oh my goodness, that sausage is savage. Do you feel like the cure give it a "hammy" taste at all? I've avoided using pink salt because of that. I started making my sausage because I don't like that taste from store bought sausage.
Not at all buddy. The curing salt is just to keep the sausages safe at those lower temps while they smoke. I can't even taste it. 👍

I ordered the MEAT stuffer based off of your endorsement. Had to wait a few weeks for it to come back in to stock. Now I'm a week into waiting for it to ship. Fingers crossed it shows up soon.

Joe, I've been sticking my meat in the mixer for the last hour but i can't get my knob to lock. Do you have any advice?
Not exactly sure. Did you pull the knob out then twist?
So I’m thinking why not dissolve the spices in the water and then mix it into the meat to get it nicely mixed, is there any reason not to do that?
Physic, as adhesion will cost a lost of spices to it adhering to the container.
Do you ever add chopped onion to your sausages! I’d think adding them to these cheeseburger sausages!

Why don’t you reduce the amount for small families
You can simply cut the ingredients in half if you want. I save them in my deep freezer so I like making extra for parties etc. 👍
