I made lemon cream cheese buttercream instead of just buttercream, very delicious and really elevated the frosting. (If anyone is interested: 200 g butter 200 g cream cheese, beat them in a mixer, then add 2 Tbs lemon juice and 3/4 to 1 cup confectioners sugar depending on how sweet you’d like it, and mix)

Hi John~My family and friends loved this cake!! I made it for my vegetarian son's birthday. They raved about this cake feeling it was a "healthy" cake to enjoy. I used the purple buttercream on the top and sides of this yummy light cake. I added a layer of lemon preserves to the middle and filled my two-layer cake with the white lemon buttercream. I used the white lemon buttercream to make the dollops on top, filled the circle with frozen blueberries and put re-lighting birthday candles into each peak of the dollops. I 'm not one to really prank anyone. However, it was soooo worth it to see the joy on my son's face and hear all the laughter. This is now my son's favorite cake! Thank you for this beautiful creation and for sharing it with us.

I made this for the first time today. It's absolutely wonderful! I added some extra lemon and blueberry, and used a lemon, blueberry, and honey Italian meringue buttercream. The only complaint was that I should have strained the reduction. The layers rose evenly with no caramelization, even without cake strips.
I made this cake twice and it was my first time making a “naked” cake and using his baking strips idea on the second cake made the color so much lighter and the cakes were flat. At the time, I had to DYI the strips but have since purchased some and use them all the time. I even used them to make my 2nd cheese cake. I made your lemon blueberry cake with your lemon curd and Italian merengue buttercream recipe. It's very delicious. It's way better than this very expensive lemon and piña colada two tier fondant cake that I had for my babyshower. Also, better than most bakeries. When mine came out of the oven, my sponge cakes got a little dry when resting, so I made lemon simple syrup to moisten the sponge cakes and it was more flavorful. I made this cake and it was great! Was nervous bc of how lumpy the butter was but it turned out with a great texture. I hate american buttercream so i used the frosting from preppy kitchen’s lemon cake, which was a lemon swiss buttercream. Also filled with the lemon curd recipe from dessert person cookbook. I used 9 inch pans and 2.5xed the recipe. This was enough for three decent layers and 9 mini cupcakes.

Instead of joining the two colours of buttercream in one bag you could pipe rings between the layers, alternating purple and white. This way, when you cut it, you will see a striped pattern.

Hi!! So i made this cake again! But this time i used cupcakes instead of a cake. I used the lemon buttercream as a base and used the reduction to make flowers! I used a blueberry to put in the center of the flower 😁 its soooo pretty!
I love this cake and I have to say that when I went to make it, I tried to fill the layers with JUST the blueberry buttercream and it was too thin....this created a landslide and I had to scrape it all off and start again. I've ended up covering the outside of the cake with a mixture of the lemon buttercream and the blueberry buttercream. I threw both buttercreams together and will wait for morning to see how they turn out once I get to piping them. Overall, this is the best buttercream I've made so far, my fourth attempt. Had some kids from the neighborhood come over and critique it for me...Nothing but rave reviews!
I know you can substitute yogurt for your sour cream, so I would think a non-dairy based yogurt (almond milk based, for example) would work just fine. Maybe you could give that a try.

OMG this cake is so delicious and beautiful! I'm making it for my mom's birthday and will let you know how it goes. I'm a little intimidated as I'm not a baker but I found your tips to be really helpful such as weighing the flour, weighing the cake pans to evenly distribute the batter, using cake strips (who knew?) and using two bags of frosting in one bag to get the two-tone. Sorry...these things might be no-brainers to a lot of you but for me, they were revolutionary ideas! LOL
Soooooo I attempted this yesterday & al through it was soo ugly & lip sided IT WAS DELICIOUS & I’m soo proud I actually made a cake from scratch !

Just made cupcakes with this recipe. Absolutely delicious and so moist! I went for a cream cheese icing and I needed a little more zest, but overall yummy. I love these recipes!

Instead of joining the two colours of buttercream in one bag you could pipe rings between the layers, alternating purple and white. This way, when you cut it, you will see a striped pattern.

I just made this, sorry don’t know how to upload a picture. It turned out AMAZING. I crumb coated it and left it out a bit too long without refrigerating it. When I got back it was a bit lopsided lol.

My daughter loves Whole Foods lemon raspberry cake. This cake is very hard to find not all Whole Foods bakeries make them and now during covid-19 they are not making it at all. So I'm going to try this cake but with raspberries.

Hi!! So i made this cake again! But this time i used cupcakes instead of a cake. I used the lemon buttercream as a base and used the reduction to make flowers! I used a blueberry to put in the center of the flower 😁 its soooo pretty!
I love this cake and I have to say that when I went to make it, I tried to fill the layers with JUST the blueberry buttercream and it was too thin....this created a landslide and I had to scrape it all off and start again. I've ended up covering the outside of the cake with a mixture of the lemon buttercream and the blueberry buttercream. I threw both buttercreams together and will wait for morning to see how they turn out once I get to piping them. Overall, this is the best buttercream I've made so far, my fourth attempt. Had some kids from the neighborhood come over and critique it for me...Nothing but rave reviews!

If i omit the sour cream (im using vegan butter and almond milk since my lil one is allergic to dairy), would the flavor and quality be altered?
I know you can substitute yogurt for your sour cream, so I would think a non-dairy based yogurt (almond milk based, for example) would work just fine. Maybe you could give that a try.
That didn't really answer your question, but I thought it may help.
The sour cream is to make the cake moist so it doesn’t add or subtract flavor. The cake would just be a little on the drier side
