I must be biased because here in Ireland we would never use bread flour. Bread flour is for bread only as my mammy was yelling, as we were watching this video together lol. Chocolate chunks are what belongs in a cookie. The chips are mostly an American thing. Not that it isn’t bad but doesn’t give the gooeyness as what chunks bring. Good ole mammy even said “What does a computer know about Irish kitchens and cooking?” Lol. Gemma, let’s be honest. Your cookies are the best and it has become a staple. There is a good deal to be said for the simplicity of your cookies. But as I said elsewhere, I’ve got to go with the AI on the chocolate issue. “Bitter” is NOT a flavor I enjoy. And there is nothing on earth that can make dark chocolate taste less bitter - except milk. Milk chocolate is absolutely the way to go.
I don't think I'd use any AI generated recipes. There are sooo many wonderful, accomplished, professional and home cooks that are tried and true and willing to share some of their knowledge and experience. Thank you all that. 🙂

The reason I watch Gemma Stafford for years is that her expertise and recipes are already proven and tested over time. Chat GPT cannot compete with that honestly. I would rather trust an expert and professional like Gemma Stafford than rely on Artificial Intelligence. I already tried some of Gemma’s recipes like the microwave cheesecake in a mug and her cakes in a mug and I can say that my family loved it. It is absolutely a showstopper. I don’t have an oven yet but if ever I have one, I’ll try Gemma’s recipes. By the look of the two cookies, you can already tell who did a better cookie and that is Gemma. We are kind of similar when it comes to chocolate. I love dark chocolate so much because it tastes expensive and luxurious. Milk chocolate is for kids in my opinion. More power to you Gemma! I think that was a pretty fair evaluation. We learned about the differences in each element. I too prefer dark chocolate. I’m not sure I would add an extra egg yolk because then I would have to figure out a use for the unused egg white. I wonder if we could combine the best of both recipes by using browned butter in Gemma’s recipe?
yeah but when you use browned butter, all the water in the butter gets evaporated, which is needed to brown the butter, as butter is 20% water, add, for example if you're using 200g of butter, add 40g (which is 20% of 200g) of milk or water to the recipe and it'll at the end have the same texture as gemma's recipe with the addition of amazing browned butter flavour.
Gemma's recipes are amazing and I love them. I agree with you on the baking powder. We all must understand that Robots might be efficient at some tasks but in terms of cooking human hands and mind works best. I vote you Gemma. ❤😊👍
I've never used browned butter in my baking, maybe I should give it a go! I agree with Gemma on the baking soda (I add baking powder to cookies only when it's for crinkle cookies or Levain cookies) and the dark chocolate, though. Milk or white chocolate I mostly reserve for green tea/matcha cookies. Also, ChatGPT leaving out one egg white and using bread flour (which absorbs more liquid) are probably what led to the dryer dough. I also recommend replacing about two tablespoons' worth of flour with almond flour if you're not allergic - the cookies turn out even nuttier!

Interesting comparison. Your cookie looks really good so I think I will try it. Personally I don't mind milk chocolate (bar, soft spread with peanut butter) but for cookies I prefer dark chocolate. I think the AI cookie taste would have to make me weak in the knees to go to the trouble of browning the butter; too time consuming. If AI is going to create the recipe than AI needs to mix & bake it for me too. My grandmother had a chocolate chip recipe called Good Luck Fruit Drop (in addition to chocolate she would sometimes add coconut) but it also has baking powder & soda (the soda is dissolved in hot water before adding). It was kind of a cross between cakey and chewy & really good too.
The best ever recipe reminds me of Claire Saffitz's. Only instead of just melting the butter, she browns half of the butter and adds cream to compensate for the water loss.

Chat gpt's recipe is the exact same recipe as Tasty's best ever chocolate chip cookies. And in Tasty's version, they bake the cookies for 12-14 minutes at 350° F (180° C). So I guess Chat gpt's cookies were overbaked. Hence the dryness.
When it comes to chocolate I prefer milk chocolate. Not a big chocolate fan, the lighter the better. The thought of browned butter is intriguing. I also prefer thicker over thinner and I love a good cakey cookie. I'll have to try using bread flour. I actually love making cookies (chocolate chip or whatever) out of cake mixes so it's no surprise I prefer a cakey cookie. My favorite cookie is a snickerdoodle, my husbands is chocolate chip, and I've never seen a cookie that our son hasn't liked although if I had to guess I would have to say that it is Oreos. Chocolate chip doesn't even make my top 5.

I always loved Gemma's recipes, but I have to say, I prefer milk chocolate (I have chocolate intolerance, so dark chocolate is not good for me) and I really like my cookie to have crunch, I don't like chewy cookies. I'll still trust Gemma's recipes better (I just have to adjust some ingredients sometimes).

That might be personal preference though bc I love milk chocolate and am not a fan of the darker chocolates. Semi and bitter is about as far as I’ll go. Love brown butter in most things, even tried it in Rice Krispies, but not sure about the bread flour.

@GemmaStafford something that would be great is to freeze cookie dough balls and then be able to bake just 1 or 2 at a time. We recently got the philips xxl and so far it's been very convenient. I did get a cake tin that fits into it but haven't yet dare bake a cake.

You can certainly use browned butter in my recipe. Many bakers do, mainly as a matter of preference.

When it comes to chocolate I prefer milk chocolate. Not a big chocolate fan, the lighter the better. The thought of browned butter is intriguing. I also prefer thicker over thinner and I love a good cakey cookie. I'll have to try using bread flour. I actually love making cookies (chocolate chip or whatever) out of cake mixes so it's no surprise I prefer a cakey cookie. My favorite cookie is a snickerdoodle, my husbands is chocolate chip, and I've never seen a cookie that our son hasn't liked although if I had to guess I would have to say that it is Oreos. Chocolate chip doesn't even make my top 5.

i could never have the same shape as yours, mine looks like the chatGPT cookies lol. i don't have brown sugar here so I replace it with palm sugar. everything else is the same as your recipe. maybe that change the shape? i don't know, but what I know is the cookies is yummy and everyone favorites everytime I make it. thank again for the recipe

I always loved Gemma's recipes, but I have to say, I prefer milk chocolate (I have chocolate intolerance, so dark chocolate is not good for me) and I really like my cookie to have crunch, I don't like chewy cookies. I'll still trust Gemma's recipes better (I just have to adjust some ingredients sometimes).

That might be personal preference though bc I love milk chocolate and am not a fan of the darker chocolates. Semi and bitter is about as far as I’ll go. Love brown butter in most things, even tried it in Rice Krispies, but not sure about the bread flour.

I’ll look into it, Michelle. You can bake these in an airfryer, I’m sure of it. I just have not tried it yet for this recipe so I can’t make recommendations as to measurements and adjustments, if necessary.
@GemmaStafford something that would be great is to freeze cookie dough balls and then be able to bake just 1 or 2 at a time. We recently got the philips xxl and so far it's been very convenient. I did get a cake tin that fits into it but haven't yet dare bake a cake.
