Nice Chef me I'm using pork lomo marinated to calamari at toyo for 4 hrs or overnight then fried golden brown pagluto na ang asado palamigin yun fork then slice para di madurog yun lomo at maganda ang presentation.
my lola and mama always use tomatoes instead of tomato sauce and indeed super classic and panalo yung lasa. Now my wife also use the same recipe for menudo, mechado using real tomatoes ❤❤❤
Maraming ways ang pagluluto na ngayun hindi kailangan sundin ang old ways or ang rules. Kahit sa adobo maraming version ang pagluluto kanya kanyang paraan. Iba na ang panahon nagyun may twist na ang pagluluto. Basta ang IMPORTANTE masarap ang kinalabasan di ba? 😊

Bulacan asado don't have chicken liver and atsuete and tomatoes. We uses tomato sauce or tomato paste and add laurel., in Pampanga they uses fresh tomatoes and oregano. It's good.
I'm not saying it's a Bulacan asado, I was just merely stating how asado is cooked in Bulacan. As you know each province in the Philippines has it's own way of cooking classic dishes.
