I know its cajun heresy but I love making a dry roux in the oven. Its so much less fussy and I've stored mine dry after it's cooled off for months in the pantry. I can just take out what I need, mix it with some oil and begin cooking my veggies immediately. It's a huge time saver for me and I don't notice any difference in the final flavor. As for what I put in it: whatever I have and feel like eating that night. I've done everything from just veggies to mixing chicken, shrimp and sausage. With or without okra. With or without tomatoes. I just love gumbo. It's the roux that give it its character so mix in whatever you're in the mood for. Love your channel. Be well.

I make mine in the microwave. Mix oil or melted butter and flour. Nuke it in a glass Pyrex for about 2 minutes. Stir. Repeat with shorter times until you're down to 30 second bursts. Usually takes about 15-20 minutes including stirring. BE CAREFUL! The glass gets molten hot!
I was raised between Mississippi and Lousiana and it takes me half a day to make gumbo. Its all about the roux and the trio. The cajun in me is screaming, WHERE IS THE CAYENNE???. Lol. My soul food side is saying, this is ok but needs heat. When you cook what you like thats what matters.

My son made this the other night from scratch. None of us had ever had it and it was so delicious. I would have loved okra but nobody else in my house likes it. Making that roux is a labor of love. We used Tony’s too! Loved it 😊 My mom in law has that pot except it’s a huge rounded rectangle. I love that pot.

Generally you want to add your seafood right at the end of the cooking process since it only takes a few minutes to cook through but you don't want to add it to the bowl itself and count on residual heat to cook it. It does need high heat and a few minutes to cook. Just don't slow cook it. Now, there are a few things that break this rule. There's a thing called gumbo crabs (shocker a know lol) that are meant to be added early to flavor the broth. Some people like to slow cook oysters in their broth. Not me, but you do you. You can also use shrimp stock instead of chicken broth if you want a more shrimpy flavor. But in my, non-cajun, opinion you add whatever you like to gumbo. You're the one who is going to eat it after all. Try it. It really is amazing. And if the roux scares you you might try a dry roux. You actually just bake the flour in the oven to darken it and it's MUCH easier and safer than making a pot roux. You can find instructions on RUclips that work really well.

Lol I can’t do the heat, so I leave the cayenne out, but you could absolutely add it😁😁
The cayenne is in the Tony's.
