    📝 Ingredients:
    • 6 bone-in, skin-on chicken thighs (approximately 2.2 lbs or 1 kg)
    • Salt and freshly ground black pepper, to taste
    • Olive oil, for cooking
    • 1 red onion, diced
    • 4 garlic cloves, minced
    • 1/2 lb (225 g) fresh green beans, trimmed and chopped in half
    • 1 1/2 cups (about 225 g) matchstick carrots
    • 1 pint (about 300 g) cherry tomatoes, halved
    For the Sauce:
    • 3 Tbsp olive oil
    • 3 Tbsp balsamic vinegar
    • 3 Tbsp honey
    • 1 Tbsp Dijon mustard
    • 1 Tbsp Italian seasoning
    • 1 tsp salt
    • 1 tsp black pepper
    Garnish:
    • Fresh basil leaves
    • Serve with rice
    🍽️ Instructions:
    1. Sauté the Aromatics:
    Heat a splash of olive oil in a large skillet over medium heat. Add the diced red onion and minced garlic to the skillet. Sauté for 3-4 minutes, until the onion is softened and fragrant.
    2. Sear the Chicken:
    Season the chicken thighs with salt and freshly ground black pepper on both sides.
    Push the sautéed aromatics to the side of the skillet and add the chicken thighs, skin-side down.
    Sear the chicken for about 5-7 minutes on each side, until both sides are golden brown and crispy.
    3. Prepare the Sauce:
    In a small bowl, whisk together the olive oil, balsamic vinegar, honey, Dijon mustard, Italian seasoning, salt, and black pepper.
    4. Add Sauce and Vegetables:
    Pour the balsamic sauce over the chicken in the skillet, ensuring each piece is well-coated.
    Add the trimmed green beans, matchstick carrots, and halved cherry tomatoes around the chicken.
    5. Bake:
    Preheat your oven to 375°F (190°C).
    Transfer the skillet to the oven and bake for 20 minutes, or until the chicken is cooked through and the vegetables are tender.
    6. Garnish and Serve:
    Once out of the oven, garnish the dish with fresh basil leaves.
    Serve the balsamic chicken and vegetables with a side of rice for a complete meal.
    Tips:
    • For extra flavor, marinate the chicken in the balsamic sauce for a few hours before cooking.
