Irish Shortbread Christmas Tree Cookies
INGREDIENTS
FOR THE COOKIES:
3/4 pound butter, at room temperature
1 cup sugar, plus extra for sprinkling
1 teaspoon pure vanilla extract
3 1/2 cups all-purpose flour
1/4 teaspoon salt
FOR THE ICING:
1 cup confectioners sugar (icing sugar)
water
green and yellow food dye
Red edible pearl decorations
METHOD
1. Preheat the oven to 350oF (180oC).
2. In an electric mixer fitted with a paddle attachment, mix together the room temperature butter and sugar until they are light and pale in color.
3. Add the vanilla.
4. In a medium bowl, sift together the flour and salt, then add them to the butter-and-sugar mixture. Mix on low speed until the dough starts to come together. Dump onto a surface dusted with flour and shape into a flat disk. Wrap in plastic and chill for 60 minutes.
5. Roll the dough 1/2-inch thick and cut using star cutters. Here is where I bought them: bit.ly/starcutters
6. Place the cookies on an ungreased baking sheet and sprinkle with sugar. Bake for 18 to 20 minutes, until the edges begin to brown lightly. Allow to cool to room temperature.
7. To make your frosting: Mix your confectioners sugar with a few drops of water and stir. Take care to not add too much for it will be really hard to get it thick again.
8. In seperate bowls, add the food dye to reach desired color of green and yellow.
9. Frost each cookie for the trees. Make sure to save some small stars to be dyed yellow to go on top. Leave to dry.
10. Stack the cookies on top of each other binding each layer with a drop of frosting.
11. Once dry, place your pearl decorations on the points of the stars.
12. Finish the tree by placing the star on top!!! Enjoy this cookie :)

Great idea! I would use colored chocolate instead though because I think chocolate and shortbread tastes awesome!
Sarah Trivedi our are right, they do taste great. If you use white chocolate you can pretend it is snow on the tree and get some nice decorations to compliment it :)

Believe it or not we have to create a winter wonderland project by making little houses, mountaing, small little people, pine trees and etc. Our grp got 3rd prize in winter wonderland.

Gemma Stafford Well, I'm almost done - got everything frosted and now I'm just waiting to assemble them! I had some hiccups along the way (accidentally left a bit of the dough uncovered so all of it dried out a bit - added more vanilla for moisture and it seemed to be okay; I can't frost nearly as well as you either!) but I think they're going to be great! I know they'll taste good! :D

Hi Gemma. I LOVE this recipe. I have made this three times now and my kids eat the lot within days. I made it again today but for some reason the mixture was too crumbling and wouldn't roll into a ball even after being in a fridge for and half and a half. I must have added to much flour or something. What I did was added some olive oil to the mixture to get it a bit 'wet' and worked it into the dough. I worked but I was worried how they would cook and taste. Fantastic just like my other batches. So if this happens to anyone else add some oil is the trick 😉

Century Traveler You can find the star cutters here: bit.ly/starcutters. I hope you can make these for Christmas. If you find you're not able to get one in time, you can always draw a stencil of 5 different star shapes that "fit" within each other and then you can cut them out with a knife. Hanan are those the wilton cutters? I have seen them in the box but i'm not sure how it looks. I try not to do recipes where the viewers have to buy equipment, especially if they only use it once a year :).

It makes loads Claudia Roitman , probably 50 cookies. The best thing is the dough freezes really well so after you make what you want freeze it for the future. The countdown is on to the big day!! Happy Christmas Claudia :)

This is a lovely idea!! I want to make shortbread this year and I think I'm going to use your recipe, and make something similar - I don't have so many different star cutters so I think it's going to be 2D Christmas tree cookies :-)

Can you make a cinnamon swirl ice cream with some type of topping like crushed gingerbread or something?
amber anderson That's a really good idea. I'll add it to my list. If you want you can add any additions of cookie etc to the ice cream base. Use the recipe 2cups of ice cream and 1 cup of gingerbread, cookies etc :)
