      @@Frank-jo2rb he means that the meat hangs around longer after it's dead than it did when it was alive. For example it may have lived 3 years but the meat cured for 4. That sort of thing

      @@HarryKaneIsGoated In Spain a black seal ham can go from 200$ to 400$ in other countries the price can go above 1500$. People usually don't buy the whole leg because it's so much food and really expensive

      @@HarryKaneIsGoated I´m currently spending 6 months in Almeria / Spain and you can buy 100% legs starting at 150€, even in the normal supermarkets. Normally I agree, 200€ is a normal price. The normal price for 100 grams of the highest quality ham is 10€ / 100 grams. We bought some at the factory that won several "ham of the year" awards and they sell them for 10€ / 100€ as well. Not sure about the price of a whole leg, though... If you ever have the chance, buy a piece of "secreto". It´s quite an unknown piece of the pig and probably the best cut in it.

    I'm Italian and I love my prosciutto but I have to admit the first time I had Iberian ham I was just blown away. The acorn essence was definitely there and with the best prosciutto I'd had to that point had would have a more "buttery" fat, the Spanish ham was even more buttery and flavourful. Amazing stuff!

      Yes, both jamon iberico and prosciutto di Parma have their special places. Prosciutto is so tender, sweet, and mellow. Jamon is a flavour bomb ^_^

      @MrMyopinionsmatter I'm not from either country, but lived for a reasonable amount of time in both Italy and Spain. Let me tell you, Iberian ham ("pata negra" or "ibérico de bellota") is in a league of its own. Comparing any other ham to it wouldn't be fair.

    Its expensive because of the way the pigs are raised, the less stress the animal is, the better the meat taste. People who produce expensive caviar does the same thing too

    My friend had her wedding in Spain and at one of the socials there was an Iberico ham at the side and I swear to god I couldnt leave the thing alone. It was lucky i was surrounded by such close friends cos if this was someone else's wedding I would've been mortified at myself. It was legitimately like crack. Damn, thinking about it now I need another fix 😭

    We didn't educate them on the day and enjoyed the fruits of their ignorance the following weeks. Delicious!!

    The Spanish are the kings of cured ham, this stuff really is divine. You can see it just by looking at the glistening strips reflecting the light, the taste is deep and intense, it's incredible.

      ​@@brunocesar302 No. That is just false. If you go to the supermarket you can find many, many hams from different provenances. That doesn't mean all of them come from Portugal. That is stupid, plain and simple. Maybe 1% come from Portugal, as there are also some lower quality hams that come from Hungary and other european countries. Anyway at least 90% come from some spanish region. As the video taught you, there are seals on every piece that say, without a doubt, that those pigs are breed in very strict conditions in Spain. You can't fake those, unless you want to get a fine so big your company will end dead and buried.

    As a spanish person I confirm this, it's extremely delicious, feels like being in heaven when you eat it. Since it's quite expensive, in my family we only have that kind of legs in our house each 5 years more or less, and when we have it, it's so delicious that in a week is already finished!

    0:28 Ok, I am Italian, I’ve eat a lot of ham in my life, good, bad, excellent... a lot. But I’ve never, ever seen ham looking this good. That red “slippery” color that you see in that ham, is the measure of how ridiculously good this ham has to be. I didn’t even know that Spain had this level of excellence in treating hams 👌

      Lo común es 1 cerdo por hectárea de bosque de encinas, para que los cerdos tengan suficientes bellotas. Conozco una finca de 250 hectáreas y tiene unos 180 cerdos ibéricos. Sólo por la cantidad enorme de bosque que necesita cada cerdo, es imposible que el jamón ibérico sea barato. Este estilo de cría del cerdo es lo más alejado que hay a una granja industrial.

    I went to a wedding, which I didn't know was two wealthy, very wealthy families. They had a dozen stations setup with a variety of stuff and four of them were these hams.
    They served (8) of these hams, which did not last long with a guest list of over 800 people.
    The ham was like eating milk and butter, but with the acorn flavor. It melted in your mouth with out any chewing.
    It was so good that I decided that waiting in line for ten minutes each time for a few slivers of meat was well worth the wait
    I didn't know when I would get an opportunity to eat it again.

      CHKhouri because it’s based on the quality. The one she is eating here is extremely expensive like a really old bottle of fine wine. But you can get a younger bottle that is still good for a more affordable price. I used to live in Cadiz and loved Jamon.

      CHKhouri meh for 200-500 you got a good one , the pig can be feed “pienso “ then acorns although is the acorn who rly gives the “iberico” taste .
      I think there are a couples of companies that sells this pieces online but due to demand here and USA taxes I think the prices are way bigger .
      Also China and I think California can “make” this jam or at least China loves our jam and they eat a lot of pigs .

    Here in Spain we have 3 types of quality ham called cebo, recebo and acorn. Within those types, there are 4 labels, black, red, green and white (which explains both the diet and the breed of the pig). Maybe that's how it's better understood

    Spanish here! In Spain you can buy it easily, it's almost everywhere. And let me tell you: every Christmas we get one of those hams, they're completely different from other ones. It has more flavour, and it's more "smooth" It's really good and you can see the work that it haves!

    In Croatia, we have something called prsut. It is smoked and also put out to dry during harsh winter wind called bura. It is delicious.

      Carlos Echevarrieta I tried it, I’m Dominican, and I honestly could not stand the smell sorry 😔😔 tried it at a Spanish festival. The meat didn’t look fake, because it looked exactly like it did in the video. Sorry if you really like it I personally didn’t. I loved the Spain culture.

      Dam, wish I knew more about this ham and other dishes of Spain. I went to Spain in the early 90's enjoyed the food I ate but was not educated on any specialty's of Spain I would have enjoyed trying. There was no youtube back then.

    I have been to Elio’s shop when i visited Seville in 2019. Pleasantly surprised to see him. Absolute legend and very passionate. Needless to say i was several euros lighter and very happy when i walked out of the shop!

    Before i first got a chance to try it, i was like "how good can it be?"
    Answer is: Tears-of-joy level amazing. The flavor is so deep and rich, yet mellow at the same time. This stuff is incredibly delicious.

    I tried it at a tasting the EU did promoting it and it was amazing, I'm a big fan of Serrano and Prosciutto but Iberico is the way, it's just melts in your mouth, amazing, thank goodness it was free cause I kept asking for more and more

    The fat is So shiny. That’s where the flavor is. My grandfather was a butcher. He would cure his own hams and give them to each one of his kids for Christmas. I remember the fragrance of them curing in his basement. They were not like these, but so delicious!

We don’t take anything from you, you take from us, we have the best lands to raise Pata Negra, and the best, purest breed, that’s why Spanish businesses pay us millions every year in land rentals and pig to export to Spain. The best Spanish ham is Portuguese ;)

      Salting pork was a way to store food for long periods of time, so that if you ever do run out of food, you can have a safety net.
      It's also delicious. If you were hungry now, you'd just eat it now, and salt whatever you know you woul not eat right away.

    It feels like a blessing that I grew up with this stuff. My step family is Spanish and pretty rich but they treated my like their own even though I'm from another country. We would always eat the highest quality Iberian Ham and the taste feels close to home.

      @@nishhnishh1088 not at all, you dont eat pork and probably you havent ever seen or smelled, and less even tasted a bellota iberian ham, they can cost more than 500€, even the fat is full of omega 3 oils good for your body (due to the acorns they eat (acorn = bellota)).

    I was on a vacation with my wife in Morocco in 2017. We did a tour that took us from Marrakech to Fez with stops along the way. We stayed at this hotel that didn't have many guests staying that night. For dinner, the host took us to the dining area and showed us a giant Jamon they got from Spain. He said "Help yourself". This is my first time eating Jamón so I didn't know how to cut it. I made about 10 cuts for my wife and I to share and of course they weren't thinly sliced. It was one of the best things I have ever eaten. My wife is good at not overeating but I was in love. I ate so much Jamón that that night, I woke up sweating thinking and I thought it was all the oil trying to escape my body.

    Traditionally, here in the Carolina appalachians, hogs were run in the woods and grew on acorns and hickory nuts. Mostly they were killed in fall and cured as ham and salt pork in barrels, but the cold mountain air let them make amazing slow cured hams, smoked and unsmoked, in a similar process to this. If you are lucky enough to find a local butcher shop or someone from a family that has always raised hogs, they will often have a special "old country style" ham which is cured for a year and develops a "rind" like these. They are amazing and delicious but often not appreciated by outsiders... yet they are so similar to what is shown here. Who knew a tradition that seems humble and quaint shared so much in common with something so fancy? Makes me proud of our food culture.

    Saw this at my local Wegmans for $100/lb. I didn’t know about the grading tags. It said “de bellota” though, so it probably was the real deal. I got a pound of it and immediately started eating most of it out in the car. Shared maybe $20-$30 worth with my dog too

    Several years ago I worked in Valencia for a few weeks and stayed in a small hotel on the edge of town. The breakfast buffet had Iberian ham on the spread at a cost of 10euro for the meal. It was the best ham I have ever had.

      for that price I'm pretty sure that was not iberian ham but cured ham which can be good depending on the quality but most of cured ham is crap compared to real iberian ham.

      Jajaja jajaja ohh my goodnes. The BEST ibérico bellota is spanish, the 5 jotas and Joselito brand, the best, the dehesa is typical spanish.

    Ate some on trip to Barcelona. Fantastic taste. Real work of art seeing a large display at the market.

    Went 1 week ago there, huelva (place of columbus) and the iberico jamon was amazing

    I've had the privilege of eating this ham several times (coincidentally, I have a small pack in the fridge now). I just try to get it when I see it for sale, especially since it's almost impossible to find in Canada, where I live. Absolutely the best ham in the world. It's pricey, but I do think you have to try it at least once in your life, if you're a fan of ham. Nothing really compares.

      Before eating take it out of the fridge to get room temperature.

      We were in Canada for vacation and saw a leg or two for sale at the St. Lawrence market. Didn't get to try the Iberico, but we tried a few other things there. I can only imagine the taste.
