Dear Americans. Shepherd’s pie is made with lamb (with beef it’s cottage pie). And both involve GRAVY, not just loose ground meat. Gelatin and/or sodium alginate-thickened beef stock, including fond from the skillet your meat was browned in, incorporated into the minced (ground) meat. Make it thick so that when slightly cooled in the dish it can support the layer of ‘mashed potato’ substitute, building around from the edges using a spoon towards the middle helps create the top layer on a less solid meat base. I use beef gelatin if needed and make a great meat stock from baked brisket, so much flavor, it also makes great dehydrated meat flour. We are learning so much along the way restoring our health, our ancestors have some great recipes this is one of my favorites veggie free.
Sahil from Headbanger’s Kitchen uses the food processor and adds an egg yolk to the cauliflower mash and it’s so rich and silky. I would definitely recommend trying it. I haven’t been on keto for 2 years but still enjoy your videos Wes!
I've been using my mini chopper to cream the cauliflower for a long time as well. I add a little bit of heavy whipping cream, Philly cream cheese, salt, pepper and mashed potato flavor extract. They're soooo amazing in flavor and texture. I've tried this for 20 seconds with a hand mixer and it's a no go. Mini chopper was only $10 2 yrs ago at Dollar General. They have them at most stores or even cheaper on FB selling wall.
I found a keto shepherd's pie recipe on Heavenly Fan's YT channel and the cauliflower mash is to die for. She recommends making sure the cooked cauliflower isn't too soft - cooked but firm - and adds a great dollop of coconut oil and some olive oil to it and then uses the stick blender to mash it up. I swear, it's sooooo creamy, smooth n delicious but not sloppy (is why to keep the cooked cauliflower firm) and is EVEN BETTER than mashed potato! I just wanted to share that tidbit of info bc I'm so impressed with it. Lovin' yer channel Wes!

I use my immersion blender on cauliflower and it works wonderful. Perfect mashed potatoes and I add in all my different flavors that I like, like garlic, Parmesan, butter and sour cream.

The pepper Jack cheese is sprinkled on top of the cauliflower mash in the second, which has a base of chili Colorado. The season is ideal for a plate of comfort food. I'm happy you're back. 💜
Great addition to your collection of videos, Wes! For the cauliflower, if you want more of a "mashed potato" consistency, you can add some cream cheese and use an immersion blender. Might mess with the macros just a little but would be worth it to me. :)

Yeah, I think in America we conflate the two (I know I used to), but yeah, Cottage Pie is with beef and Shepherd's Pie is with lamb/mutton. Both are awesome! 😀
Meanings can change, and in this particular dish in the United States, it’s so ubiquitous when made with beef under the name Shepherd’s Pie. I can’t remember the last time I saw it called Cottage Pie on a menu.
Shepherd's pie only refers to a Lamb based pie only (Shepherd as in Sheep - Herder). The Beef version is a Cottage pie. Sorry if this is pedantic, but I'm English 🙄😉 xx
Omg Wes! You have lost so much weight since I last watched your videos! Congratulations 👏 on your weightloss. I don't make keto recipes anymore because the high fat in the recipes caused my bad cholesterol to get bad, but I still occasionally like watching your videos from time to time and just sub the recipes sometimes with lower fat ingredients. My dietician had me lower my sat fat and number of total fat per day and I've learned to work around or create new recipes from the old keto ones I used to do.

Oh, perfect! It’s almost 5:00 by the time I’m watching and I think this will be dinner! I have your cookbook and always think it looks so good, but I always seem to be missing the cauliflower, green beans or mushrooms and I want the full monte! Today I just got my grocery delivery and I have all three and hadn’t thought of your Shepherd’s Pie. The universe knew this was my chance, though! 😂 Can’t wait to put it together. Don’t tell the keto police, but I’m dicing up a small to medium carrot and tossing it in. It adds 3-4 net carbs for the entire casserole, so 1/2 carb max per serving and another texture and flavor in the mix. Plus I have one lonely carrot lurking in my fridge that won’t last forever! Love the cookbook, BTW!
The better term to use when hunting for the Thingamajig is Kitchamajig. That's what Ekco called it and what's stamped on the back. Great video, Wes. Love Shepherd's Pie.
For something different or to change things up…..to the cauliflower instead of 4 tsp of butter do 2 butter 2 cream cheese melted in the microwave…for the aromatics do: add 1/4 cup each of chopped flat leaf parsley, chives, dill, tarragon and salt to your liking.
Yum! As a vintage kitchen ware collector its called a Kitchamajig by Ekco!! I have several of them and love them. They always seem to be included in kitchen lots at estate sales and auctions. They are great for folding liquids together in baking. I may have misheard it but thought you called it a Thingamajig. If I misheard you I'm sorry! I've made a similar cottage pie recipe but added some heavy whipping cream to the cauliflower mash for a less grainy texture. It adds a couple carbs, but worth it in the end for a smoother mashed fauxtatoe texture. I love the mushroom addition in your recipe, brilliant!! Thank you for everything you do!
I also love my Kitchamajig. I purchased one to go in Christmas stockings for my daughter and daughter-in-law several years ago. You can buy a similar product if you search for Kitchamajig.
Before Keto Shepherds Pie was one of my staples so naturally after starting Keto I had to figure it out. For my cauliflower mash I roast my flowerets first for extra flavor. Then I use my food processor - I add butter, cream cheese, and add heavy cream as needed for the perfect whipped, light and fluffy, result. Soooo much better than mashed potatoes, however I have noticed that they cool down much quicker, assuming because of the lack of starch.

We had a thingamajig around our house when I was a kid. Ours had the plain, metal, loop-shaped handle. I think Mom still has it, actually. It was perfect for getting things out of the fryer.
So in case someone wants the "thingamajig" it actually a stainless steel slotted skimmer. You can purchase them on Amazon or at Walmart for cheap. I love mine! We have always used one since I was a kid to scoop fries out of the hot oil. This dish looks very tasty and the recipe looks to be full of flavor!
I have one of those "thingamajigs"!! Mine was in with my first Fry Daddy that I received as a wedding present in 1977. The Fry Daddy is long gone but my thingamajig is just fine! I use it all the time. ☺

Shepherds pie is made with lamb mince. Cottage pie is made with beef mince. So you’re making cottage pie. You also mix the vegetables and meat together.

I love shepherds pie! Thanks for your take on it. I've been using mashed rutabagas for the "mashed potatoes" at 8.6 net carbs per cup, so a little higher carb count . I figure 2 cups over 6 or 8 servings is not going to break the carb bank. 😂 I just got tired of the cauliflower mash, it's a bit cabbagy for my tastes. Rutabagas are a bit sweeter than cauliflower but I found I prefer it.
I was able to find the “thingamajig“ at an Asian store. They usually have them there I believe. The only problem is that they should not be used on nonstick surfaces but for the cast-iron they’re fantastic as well as stainless steel! I’ve been using them for years!
Just found you. Please give us more recipe comparisons more often. Could you feature Farmer’s Bread in one. More cookie recipes too. More bar recipes. Chocolate and vanilla pudding recipes. Impossible savory pies we used to make with Bisquick where crust forms magically. 😊 Thank you for all you do.
We go by total carbs. We don't believe in fiber or net carbs. We usually eat carnivore but this looks likes a great occasional exception. Nothing wrong with a little ketovore especially once you're fat adapted.

For the cauliflower, if you want more of a "mashed potato" consistency, you can add some cream cheese and use an immersion blender. Might mess with the macros just a little but would be worth it to me. :)

Yeah, I think in America we conflate the two (I know I used to), but yeah, Cottage Pie is with beef and Shepherd's Pie is with lamb/mutton. Both are awesome! 😀

Meanings can change, and in this particular dish in the United States, it’s so ubiquitous when made with beef under the name Shepherd’s Pie. I can’t remember the last time I saw it called Cottage Pie on a menu.
Shepherd's pie only refers to a Lamb based pie only (Shepherd as in Sheep - Herder). The Beef version is a Cottage pie. Sorry if this is pedantic, but I'm English 🙄😉 xx

Omg Wes! You have lost so much weight since I last watched your videos! Congratulations 👏 on your weightloss. I don't make keto recipes anymore because the high fat in the recipes caused my bad cholesterol to get bad, but I still occasionally like watching your videos from time to time and just sub the recipes sometimes with lower fat ingredients. My dietician had me lower my sat fat and number of total fat per day and I've learned to work around or create new recipes from the old keto ones I used to do.

Can’t wait to put it together. Don’t tell the keto police, but I’m dicing up a small to medium carrot and tossing it in. It adds 3-4 net carbs for the entire casserole, so 1/2 carb max per serving and another texture and flavor in the mix. Plus I have one lonely carrot lurking in my fridge that won’t last forever!

For something different or to change things up…..to the cauliflower instead of 4 tsp of butter do 2 butter 2 cream cheese melted in the microwave…for the aromatics do: add 1/4 cup each of chopped flat leaf parsley, chives, dill, tarragon and salt to your liking.

Yum! As a vintage kitchen ware collector its called a Kitchamajig by Ekco!! I have several of them and love them. They always seem to be included in kitchen lots at estate sales and auctions. They are great for folding liquids together in baking. I may have misheard it but thought you called it a Thingamajig. If I misheard you I'm sorry!
I've made a similar cottage pie recipe but added some heavy whipping cream to the cauliflower mash for a less grainy texture. It adds a couple carbs, but worth it in the end for a smoother mashed fauxtatoe texture. I love the mushroom addition in your recipe, brilliant!! Thank you for everything you do!
I also love my Kitchamajig. I purchased one to go in Christmas stockings for my daughter and daughter-in-law several years ago. You can buy a similar product if you search for Kitchamajig.

Before Keto Shepherds Pie was one of my staples so naturally after starting Keto I had to figure it out. For my cauliflower mash I roast my flowerets first for extra flavor. Then I use my food processor - I add butter, cream cheese, and add heavy cream as needed for the perfect whipped, light and fluffy, result. Soooo much better than mashed potatoes, however I have noticed that they cool down much quicker, assuming because of the lack of starch.

I use a stick mixer (immersion blender) and add cream for the cauliflower mash and cook from fresh in the microwave for 10 minutes
We had a thingamajig around our house when I was a kid. Ours had the plain, metal, loop-shaped handle. I think Mom still has it, actually. It was perfect for getting things out of the fryer.

So in case someone wants the "thingamajig" it actually a stainless steel slotted skimmer. You can purchase them on Amazon or at Walmart for cheap. I love mine! We have always used one since I was a kid to scoop fries out of the hot oil. This dish looks very tasty and the recipe looks to be full of flavor!

Shepherds pie is made with lamb mince. Cottage pie is made with beef mince. So you’re making cottage pie. You also mix the vegetables and meat together.
It’s sort of self-mixing when you dish it up and start eating. 😊

I had a “thing a ma jig” that I got with a Presto Fry Daddy in the 80s. Looked just like that but a different handle!
Had a good laugh. Watched this video and you talked about the metal thing your using. Went to my local pet store and they had many of those hanging on a rack. Used as kitty liter scoops. Same exact item.... but good news, thought about ya. Love your shows.

I love shepherds pie! Thanks for your take on it. I've been using mashed rutabagas for the "mashed potatoes" at 8.6 net carbs per cup, so a little higher carb count . I figure 2 cups over 6 or 8 servings is not going to break the carb bank. 😂 I just got tired of the cauliflower mash, it's a bit cabbagy for my tastes. Rutabagas are a bit sweeter than cauliflower but I found I prefer it.

I was able to find the “thingamajig“ at an Asian store. They usually have them there I believe. The only problem is that they should not be used on nonstick surfaces but for the cast-iron they’re fantastic as well as stainless steel! I’ve been using them for years!

We go by total carbs. We don't believe in fiber or net carbs. We usually eat carnivore but this looks likes a great occasional exception. Nothing wrong with a little ketovore especially once you're fat adapted.
