    Mandy, if you put all the garlic cloves in a container and shake it like it owes you money, the garlic will peel itself. Shortcut I learned working in a kitchen it saves so much time. Love your content x

      I've used this trick for years. It definitely works best with many cloves though.

      I use this technique with scissors to snip the clove ends (and make a half cut lengthwise in the skin) as I put them in the jar.

      I don’t know what I did wrong, but I tried that, I had a mason jar, sturdy jar right? And shook I shook it like it owed me money, I probably will try it again someday but for now I just take the time and take the little paper off the labor of love I call it to make up for what didn’t happen😂😂

    40 clove chicken.
    Roast the garlic cloves with the chicken,salt,pepper and olive oil don't peel the garlic! Serve with crusty bread. Squeeze the garlic on crusty bread. The garlic spreads like butter. Delicious flavor!

    I just made this and it came out IN-CRE-DI-BLE! wow!
    I messed up the marinade and added the wine to the sauce instead but it still came out great.
    Used leftover brisket trimmings, did velvet it for a bit longer for tenderness, highly recommend this recipe!

    Mandy, after having no choice but to make my own Chinese cuisine at home due to the fact that only places being open at the time were Panda Express takeout, but the nearest one being miles away and most to-go places not catering to pedestrians and cyclists, I began making some of your recipes. I was entranced! Recently I went back to my favorite Chinese buffet restaurant, and...well....it wasn't bad, but it wasn't as good as I remembered.
    Same thing happened after I ate Oscar Mayer Angus Frankfurter chili dogs. After having the angus franks, I lost all taste for the pork and regular beef franks.
    My grandma told me that's because once you have the good stuff, you don't want anything else.

    I’m half Chinese (and half Cajun 😂) and so butter goes to several of my recipes with soy sauce and chili sauce. I love the rich, round flavor of the butter with Asian seasonings. Then on top of rice? Yesssss!

    This looks delicious! I love garlic and steak. I keep roasted garlic in my refrigerator at all times. I think I could make this dish using the roasted garlic along with the oil I add to it when I store it.

    As RD says this is how I remove the garlic paper. I place the head point up and smack down with the palm. Take the cloves and put in a metal bowl. Then place another on top and shake it good. Works great!! Love your help with the cooking.

    No doubt already mentioned but there is a French recipe, poulet aux quarante gousses d’ail (chicken with 40 cloves of garlic) which is delicious. I made it for my grandkids when I was looking after them once (6, 10, 12 and 14 years old at the time). They loved it.

    40 clove chicken.
    Cut whole chicken in 1/2 and lay it out flattened, salt and pepper it. Lightly fry (in oven safe pan) both sides of chicken in about a 1/4 cup oil. Add 40 cloves of garlic, sprinkle everything with 2 tbsp of thyme, 2 tbsp rosemary and then bake on 350 degree for 1 1/2 hours or until chicken is done. I like it with steamed broccoli and fried rice.

    I have made a lot of dishes with this much garlic (and sometimes more). Chicken and 40 (50, 60, or more) cloves of garlic, but also large batches of garlic mashed potatoes. I used to keep whole cloves of roasted garlic in the freezer and I would use 30-60 cloves when I was making bread (usually 2 loaves at a time). The roasted garlic would just get kneaded into the dough at the very last minute and the bread would end up full of soft, sweet, melty garlic. So delicious.

    Thank you Mandy for another beautiful presentation! For anyone interested what Mandy refers to as 'freshly ground pepper', it looks more like crushed black pepper to me and yes there is a difference because you don't have to grind the pepper but you can buy CRUSHED black pepper in Indian stores. It makes life much easier and the pepper will keep its aroma if you keep it in an airtight jar.

      It looked like ground black pepper to me. That’s what mine looks like after putting it in the spice grinder. But she uses a mortar and pestle often, so maybe that’s what she did

    Thanks for an easy one. My favorites from Downtown Los Angeles Chinatown were green curry crab and black pepper scallops. The black tea from the good restaurants is exquisite. They serve it in a metal pitcher with your meal. I don't know how to prepare it right. Mine is always bitter.

    I love Garlic and have grown it for years but 3 years ago I moved to Arkansas and the house I bought had Elephant Garlic all over the yard. I started cultivating it in better conditions and last year I got several the size of softballs. If I quit eating it I could really make money selling it... Bobby

    This was so simple & delicious. The peppery flavor is definitely addictive. I lessened the garlic to only 20 cloves cut in half, and I definitely regret it.

    Made this tonight and it's one of the best recipes I've had in weeks. I had a relatively cheap ribeye and it just made it shine so well! It was super tender, super juicy and beefy, and the black pepper was the perfect amount. Just enough heat and so much flavour. My only regret was that I should've put more garlic.

    Ni Hao :) I cooked it and was great, i added extra szechuan pepper which i dry fried whole, then pressed with pestle and mortar, a really great dish. Garlics were lovely addition, perfect with Japanese short-grain, I hardly ever cook from You Tube so a big credit goes to you. Xie xie ni ;)

    In Indonesia, we use a lot of garlic to make garlic fried chicken (ayam goreng bawang/ayam bawang). It is the most famous of Riau archipelago cuisine and so delicious. I love the savoury and garlicky flavour 😍

    There is an old recipe call "poulet aux quarante gousses d'ail" that use as much garlic and it's delicious too. The chicken roast over garlic and it's soooo good!
