Lockdown due to Covid-19 brought me to your vlogs...and I must say, I love you both! I've seen many vlogs from other foreigners in the Philippines but you guys are the most down to earth, simple couple & I love that you're giving a lot of effort to live like the locals without bashing anything or anyone. I watched all your vlogs & you're making me want to visit the Philippines. I was born & raised in Manila but been living in the US a lot longer than being in the Philippines. You just gained a new subscriber from Florida, USA. Good luck with your travels, stay safe & I wish you both the best!

The best of cooking pansit is
Sauted all the garlic onion the pork or chicken to add flavor.when the meat is cook add soysauce and oyster sauce add the vegstable.when you done in sauted add 1liter of water and make it to boiled..when done in boiling the water add the noodles 1and all the water in your pan will absorved the noodles and when its no water is done..most of pilipino pansit its delicious when it has sauce..i love you guys..keep safe godbless

Let's get famous my favorite Pinoy breakfast or snack: CHAMPORADO or Chocolate Rice Porridge/Pudding
    1. ordinary rice or sticky rice (better)
    2. cocoa or tablea (cacao bars)
    3. sugar to taste (if use condensed milk, no need for sugar) OR stevia
    4. full cream milk (evaporated, condensed or powder) OR coconut milk, whichever is available
    5. pinch of salt
    6. cinnamon
    PROCEDURE:
    A- make rice porridge
B-place cocoa, sugar, salt, cinnamon & cow's milk OR coconut milk
    C. simmer 3- 5 minutes more. If wet, it could be a porridge. If drier, it could be a pudding. I love more the porridge variation for breakfast but the pudding version for snack.
-voila, very delicious! I think this is the Pinoy dish that could become famous all over the world because it is fast, convenient & delicious. Very trendy too because it is full of antioxidants. Who doesnt love chocolate anyway? Vegans could use coconut milk or even almond milk instead of the ordinary milk. Stevia or monkfruit instead of sugar. It is a fusion of the history of the Philippines: Southeast Asian for the rice & coconut milk, Spanish-Mexican for the chocolate & evaporated or condensed milk for the Americans
    D. side dish could be a dried fish called tuyo (Pinoy food tradition is pairing: one should know the. common pair of a particular dish). Tropical fruits like mango. But champorado could be enjoyed as is

Ya the PANCIT BIHON LOOKS TASTY and a LOT HEALTHIER because you put a lot of vegetables. I think you could have put more oyster sauce after you mixed the noodles with the veggies. Put the Ginisa Mix (or Magic Sarap) in the vegetables and NOT with the blanching of the noodles. For the Calamansi Juice, if it is TOO sour, add more water and sugar. It's also good to put some small blocks of ice in the glass. You did a good job. CONTINUE LEARNING. Love from the Philippines.

Different dialect tend to have different names for calamansi. For the southern tagalog region where my parents are from, they call it Calamunding. In central and southern Philippines where i grew up, they call it lemonsito. But calamansi is standard as we know it.
