    Here’s the recipe:
    Master Butter Dough recipe by Ellen Walker Hoffman
    Use for dinner rolls, cinnamon rolls, hamburger buns, crescent rolls, etc.
    210g milk
    1 egg, beaten
    435g Bread flour
    42g sugar
    5g salt
    76g unsalted butter
    3g SAF instant yeast
    Extra egg for egg wash
    For cinnamon rolls:
    Spray a 9 x 13 oven safe casserole with nonstick spray.
    Divide dough into thirds on floured surface. Put two of the dough balls aside.
    Roll dough into a rectangle or oval.
    Spread liberally with softened (but not melted) butter.
    Sprinkle liberally with cinnamon sugar mixture.
    Roll dough tightly, and cut into rolls. I make mini cinnamon rolls so I cut the rolls about ½-3/4 inch thick. Lay in pan, leaving a little space between.
    Go on to second dough ball and third dough ball. When all rolls are cut, redistribute so they are even in the pan.
    Turn your oven on to 170 for ONE MINUTE and turn it off.
    Put tray in warmed oven and let rise for 45 minutes. (Since the oven is draft free, I don’t bother to cover my dough.)
    Remove from oven, preheat oven to 350.
    Brush cinnamon rolls with egg wash (Egg wash is one egg beaten with about a tablespoon of tap water. I never measure the water.)
    Bake for approximately 25 minutes. Watch after 15 so they don’t get too brown.
    For glaze, pour about 2 cups of powdered sugar into a bowl or large measuring cup. Add a splash of vanilla and a couple tablespoons of milk. Mix and add more milk to get desired consistency. Drizzle over cinnamon rolls. I never make a thick frosting. These cinnamon rolls are gooey and decadent enough without covering them with a blanket of frosting.
    For Dinner rolls, use dough, shape as you wish. I use muffin tins and put three little 1” doughballs in each well. Let rise and bake same as above. Egg wash and add sesame seeds or other seeds if desired.
    Cool 2-3 hours and put in heavy duty plastic freezer bag and freeze same day as baked to preserve freshness. Take out rolls as needed to defrost or toast.

    Just found your channel. Thank you for your videos, I am learning so much from you. I have a new can opener that opens the cans without the sharp edge. Can bread be baked in tuna, soup or larger cans?

      Hello Janet! Welcome! I can honestly say that no one has ever asked me this question before!!!
      I know that people used to bake a certain black bread in coffee cans in the 50s maybe but otherwise I don’t know. Tuna and soup cans are way too small. A big coffee can would work but do they even exist? I think everything is plastic now,

    Hi Ellen, I'm a new bread machine owner and is learning a lot from you. Thank you so much! By the way, is it ok to substitute the egg in the recipe with applesauce? We have egg allergy at home, this is the main reason why we wanted to make our own bread. Hoping for some insights from you. Thank you!

      I don’t think applesauce would do it. Some people do something with flax seeds in place of eggs, but I’m not sure how that would work in bread. I have plenty of recipes that do not call for eggs. Some of them just use egg wash on top and that’s easy to leave out. Please go to my website and look through the recipes. It will be easier there.

    My oven has a ‘proof’ option. Is that the same as your setting your oven to 175 for one minute? Love your videos!

      It’s not the same. It’s better! Set the proof for 85 degrees (use an oven thermometer to make sure it’s accurate) and set a timer for 45 minutes.

      Why my recipes are in grams
      I grew up using measuring cups, and spoons like most other people in the United States. I didn’t know anything different for many many years.
      After I had baked bread for a year or so, and was still using measuring cups and spoons, I noticed in my Facebook Bread Machine groups that most people were making bread using gram weights instead of measuring cups. I didn’t really understand what the benefits were at first, then I bought a scale and started using it and soon I came to understand why people weigh ingredients instead of measuring them.
      Here are the benefits of weighing your ingredients:
      1. Weighing is the most accurate form of measurement.
      2. Weighing gives you more consistent successful results.
      3. Weighing takes much less time and makes fewer dirty dishes.
      4. Most of the rest of the world uses grams. I write my recipes in grams because I have “bread friends “ from all over the world who want to make my recipes.
      5. I’m lazy! Weighing is so much easier!
      I’m sorry but I cannot convert my recipes to cups. You are welcome to try using Google.
      If you try weighing, I know that you will like it better than measuring with cups. Absolutely everyone I have taught how to do it has told me within a couple weeks, they are so glad I convinced them to try it! They tell me they would never go back to measuring with measuring cups! I feel the same way! Now having to use measuring cups occasionally for a cookie or cake makes me groan! I’ve become so lazy because weighing is so much easier! I’m methodically converting all my old family recipes to grams. Please give it a try. For under $20, you can get the scale I have! If you want consistently wonderful breads, this is what you should do. Weighing is easier AND provides better results! Win win!

    Really only 3g of yeast? I've tried two hamburger bun recipes with disastrous results, so I'm about to try this but it seems such a little quantity of yeast.

      No, just in my pantry. I do store whole grain flour in freezer for one week as my exterminator recommends.

    You are pronouncing the word “lame” ❤wrong. It’s a French accessory used in bread baking. Say it like lamb. The end is not pronounced.
