I made these tonight, they were delicious! My dough was sticky and didn't want to come out of the bread machine, but I lightly floured both sides of my dough ball once it came out. I flattened it, divided it into half, then into half again to make eight rolls. I threw a towel over them while I got my egg wash ready. Thank you for such a great recipe! This will be a regular for us!

I usually do 1 bulk fermentation when I take it out of the mixer. After it doubles in size, I punch it down, divide, shape, and pan. Then I do a final proofing (second rise) and bake.

I have a question: can you use the exact same recipe and knead the dough in a stand mixer instead? (I don't have a bread machine.) Your videos always lift my spirits and now in especially tough times I appreciate them even more than usual.
I think you can use these ingredients and follow one of Amy's bread recipes that use the mixer, such as any of her mixer tests where we make bread dough. The thing is in which order you add liquids, keep the salt away from the yeast (or risk killing it) and all that....The bread machine does such a wonderful job of kneading the dough, but a decent mixer should be able to knead it. I hope that helps.

She likes the Breville food processor the most. It's expensive, but very well designed and has a ton of blades to use that come with it. The Smart Fryer is OK. The first one died, and we returned it under warranty. I haven't used the replacement. I'm not a fan of its cord. I can only guess the electronics broke in it. Not used to such a fancy fryer, but it produced Amy's favorite french fries of all time. So you earned that award! The mixers are good. I don't think they stand out, but I think they run better than the KA Artesan, so you have that going for you. I"m not sure what else she has for Breville. I'm glad we have been able to help you with your bread making. I think it's a skill and an art to make wonderful bread. Do try the hamburger buns. They didn't last long. Yum!
So I made this recipe came out absolutely perfect and only did four hamburger buns in the rest dinner rolls and they were amazing. Would this recipe for dinner rolls work a day or two ahead of time and let them rise in the refrigerator for Thanksgiving?
I'm thinking you can leave egg out and just add a bit more oil to help keep the buns soft (basically replacing the fat from the egg). But eggs may do other stuff to the buns. But give it a try and see how it turns out.
Yes. I do a slow rise in the fridge overnight all the time. Just put the dough ball in a gallon ziplock bag. Let it cold ferment overnight in the fridge. You will actually get more flavor in the dough. Then...take it out and let it warm up to room temp. Then you can roll it out and make your pizza. It should turn out great!
LOL...hubby in the background! Anyway yes these were perfecto but I did not use a scale. Just divided by 6. Plus I just used Canola butter spray for the final glaze. Thank you (still laughing ... hubby is a star)

HI, i had a thought, if you make them again you might want to try adding a little extra flour as she suggested and see if it helps. Also, i'm not sure if she mentioned it, but it's always a good idea to oil your hands. :)

You have a scale so why do you not use the most accurate method of weighing everything including the water (Not the sugar, salt yeast you can still use the spoon method)?
Use the recipe anyways with a stand mixer (or knead by hand). But the order might be different than in a bread machine. You can watch one of Amy's other bread videos and use the ingredients from this video but mix them in a different order as necessary.

Hi Kim! You can make them in the bread machine as a loaf. If you want rolls, you have to take it out and shape then bake in the oven.

It is a brand of instant yeast called Saf.
