🛒 Ingredients (18 units):
🔸 200 g bread from a couple of days ago (7.1 oz)
🔹 200 ml milk (¾ cup + 1 tbsp)
🔸 2 L eggs
🔹 2 cloves garlic
🔸 1 leek
🔹 100 g hake fillets (3.5 oz) (1 pc)
🔸 75 g peeled shrimp (¼ cup)
🔹 2 tbsp chopped fresh parsley
🔸 Salt
🔹 Pepper
🔸 Oil for frying
🍳 Directions:
1️⃣ Dry the hake and prawns well. Cut the hake into pieces and chop it and the shrimp in your food processor. Chop the leek and garlic cloves.
2️⃣ In a frying pan put two or three tablespoons of olive oil and the chopped garlic cloves. Cook over low heat until you see them start to brown. Add the leek with a little salt and sauté over medium heat until poached. Add the minced fish, a pinch of salt and pepper, and cook for about 3 minutes. Leave to cool.
3️⃣ Crumble the bread with your fingers in a large bowl (if it is too hard, cut it with a knife). Pour the milk at room temperature (if it is cold from the fridge, put it in the microwave for 30 seconds) and the beaten eggs. Mix so that everything is well soaked. Mash with your blender just enough to break up the bread, it should have a little texture (if you see that it is too dry, add a little more milk little by little. The final density has to be like the dough of a croquette).
4️⃣ Add the cold fish, the chopped parsley and a little more salt (do not add too much, as the bread already contains salt). Mix well. Cover the bowl and let it rest in the refrigerator for 30 minutes (the bread will finish absorbing all the liquid and the dough will be more compact).
5️⃣ Put plenty of oil in a frying pan and heat it over medium heat. With a soup spoon take a portion of dough. And, with the help of another spoon, shape it like a croquette.
6️⃣ Fry them in batches. Turn them so that they brown on all sides. Remove them on absorbent paper. Enjoy the huevos tontos with hake and shrimp freshly made.
👌 Notes:
-They are very rich accompanied with mayonnaise. You can also add them to a chickpea stew.
-The original recipe of the huevos tontos only contains garlic and parsley.
-The amount of milk will depend on the type of bread and how dry it is. If you use only the bread crumbs, you will probably need less milk than I have used.
