My advice to you is that you might want to do some testing of your music with the Retroarch core and try to provide feedback on which of your songs don't work. 8-bit and 16-bit refer to the CPU, it's just that "8-bit sound" is a common misnomer for the programmable sound generator (PSG) typically used by an 8-bit system, while "16-bit sound" is a common misnomer for the FM (frequency modulation) synthesizer-based chip used in the Mega Drive / Genesis, or the PCM (pulse-code modulation) sample-based chip used in the SNES.
8-bit and 16-bit *audio* on the other hand is recorded sound - such as an 8-bit WAV with "fuzzy" artifacts, or a 16-bit CD or high-bitrate (but 16-bit- *depth* ) MP3 with perceived "full" quality.
The Mega Drive/Genesis does also have a PSG as a secondary sound generator (which is on the bottom row of the oscilloscope view in this) which if used heavily can make it somewhat sound so-called "8-bit", and the FM chip can even make PSG-mimicking sounds such as here with the melody.
There are even 16-bit systems with that so-called "8-bit" PSG-based sound such as the Neo Geo Pocket (Color) and the Pico (even if the latter does have a PCM speech chip), as well as 8-bit systems capable of so-called "16-bit" FM synthesis such as (in some games) the Japanese Master System and its predecessor the FM Sound Unit for the Mark III.
